RESTAURANT STYLE BEEF NACHOS RECIPE

1 Tablespoon extra virgin olive oil
¾ medium red onion (finely chopped)
2-3 large cloves garlic (finely minced)
Sea salt and black pepper (to taste)
1 pound ground beef
1 large bag (11-14 oz. tortilla chips)
1 8- oz. bag 4-cheese Mexican blend (finely shredded)
2 large green onions (green parts only, sliced thin)
1 6- oz. can black olives (chopped)
1 large jalapeño pepper (sliced thin)
1 large ripe avocado (seeded and chopped)
2 T. fresh lemon juice
2 T. fresh cilantro (finely chopped)

Steps:

  • Prepare taco seasoning and pico de gallo and set aside
  • Place the top oven rack in the center position and pre-heat the oven to 350°F. Line a large, rimmed baking sheet with parchment paper or a Silpat™ baking mat and set aside.
  • Heat the olive oil in a large skillet over medium heat. Add the remaining three-quarters chopped red onion and minced garlic. Season with salt and black pepper, to taste, and stir to combine. Sauté, stirring occasionally, until the onion is soft and starts to develop a bit of color, approximately 5 minutes.
  • Add the beef and break up into small pieces with a spatula. Add 2 tablespoons of the taco seasoning mix and stir to combine. Cook, stirring occasionally until the beef is browned. Remove from heat and set aside.
  • Spread the tortilla chips into an even, overlapping layer on the prepared baking sheet. Using a slotted spoon, evenly distribute the seasoned, browned beef on top of the tortilla chips.
  • Add the cheese on top of the beef and nachos in an even layer and place in the preheated oven for 5-7 minutes, or until the cheese is completely melted.
  • Remove baking sheet from oven and cool slightly before topping with sliced green onion, chopped black olives, Pico de Gallo, and sliced jalapeño pepper.
  • Toss the avocado with the fresh lemon juice and spoon on top of the nachos. Sprinkle with the fresh cilantro and serve immediately. Enjoy!

You need to make this epic beef nachos supreme at your next game day. Seasoned ground beef, refried beans, cheese, tomatoes and green onions make such a great flavor combination.

Taco Seasoning ((or you can use one packet/ serving of store-bought taco seasoning))
1 pound ground beef
1/2 yellow onion (diced)
2 bags tortilla chips ((16 ounces each))
1 can refried beans
16 ounces shredded cheese of choice ((I used cheddar and Monterey jack))
3 roma tomatoes (diced)
2 to 3 green onions (sliced)

Steps:

  • Preheat the oven at 400 degrees.
  • Meanwhile on the stovetop, brown the ground beef and diced onions over medium-high heat until fully cooked (about 8 minutes) and drain.
  • Return the beef to the pan, and sprinkle on the taco seasoning.
  • Stir in 3/4 cup water, bring it to a simmer, reduce heat and simmer until the liquid mostly evaporates, about 5 minutes.
  • While the beef is cooking, add a generous layer of chips to two baking sheets lined with parchment paper.
  • Spoon on refried beans, half on each pan. These are thick, but I just add spoon fulls all over the chips. (The spoon fulls will spread with the heat of the oven.)
  • Spoon on half the ground beef to each pan of chips.
  • Sprinkle shredded cheese on top.
  • Bake at 400 degrees for 15 minutes.
  • Remove from the oven, and sprinkle on diced tomatoes and green onions.
  • Serve immediately.

Quick,easy,and delicious! I figured out the recipe that a joint in the mall used. Unfortunately, they closed! Add and subtract ingredients you like on your nachos.

2 1/2 ounces tortilla chips (approx. 25)
3/4 cup Mexican blend cheese or 3/4 cup cheddar cheese
1/3 cup canned black beans, rinsed
6 ounces canned chicken or 6 ounces leftover cooked chicken (taco meat works well, too)
3 tablespoons salsa
2 tablespoons sour cream
2 tablespoons guacamole

Steps:

  • Preheat oven to 400 degrees.
  • Line 8 inch round cake pan with tin foil, if desired.
  • Spread tortilla chips evenly in cake pan; some overlap is fine.
  • Sprinkle cheese over the chips, making sure all the chips have some cheese on them.
  • Sprinkle salsa over the cheese.
  • Pour black beans and chicken over the salsa and cheese.
  • Bake for about 10 minutes, or until the cheese is melted.
  • Serve in the cake pan.
  • Serve with sour cream and guacamole, if desired.
