APPLE, HONEY & CARAMELIZED ONION FLATBREAD PIZZA
For celebrating the flavors of fall, impressing dinner party guests, and/or the best foodie Rosh Hashanah ever! Mushrooms, fall squash, and kale would be great additions that would still keep this vegetarian. Cut into small squares for perfect appetizers...or don't cut at all for a great night in with yourself.

Steps:
- First, the long part requiring patience: make the caramelized onions for your pizza. Heat the olive oil over medium heat and add the onions, rosemary, salt, and pepper. Stir to combine thoroughly. Cook over medium until the onions become translucent. Then turn down the heat and cook slowly, stirring frequently, until golden and irresistibly fragrant. Remove from heat. That was the hard part!
- Preheat your oven to 450 degrees.
- Assemble your pizza: spray your your pan/stone lightly with cooking oil, then sprinkle it scantly with the cornmeal. Spread your prepared pizza dough over this in a circle (or awkward oval like mine). Top this with your caramelized onions. Next arrange the apple slices--I did a mix of finely sliced "honey crisp" and "granny smith" apple, using just a bit less than one apple total. Top the apple layer with the cheeses: first the brie, then just a bit of mozzarella, then the parmesan. Drizzle the pizza lightly with a good honey. Then sprinkle artistically with parsley because you've now committed to this strange pizza.
- Cook this in the preheated oven for 15-25 minutes, or until the crust is slightly crisp and the cheeses begin to turn golden-brown. Enjoy!
- Tip: a sprinkle of crushed red peppers or drizzle of extra honey and sriracha never hurts!

BACON AND ONION PIZZA WITH MAGIC EGGS

- For the pizza: Preheat the oven to 450 degrees F. Line 2 baking sheets with parchment paper.
- Place a large saute pan over medium heat. Add the bacon and onions. Cook, stirring occasionally, until the bacon fat has rendered and the onions soften, 8 to 10 minutes. Continue cooking, stirring frequently, until the bacon is crispy and the onions take on some color, about 6 minutes more. Remove from the pan with a slotted spoon and set aside.
- To assemble the pizzas, lay the bread rounds on the prepared baking sheets. Divide the sour cream over each piece of bread, leaving a small rim exposed to serve as a crust. Divide the cheese and the bacon mixture over each piece. Sprinkle with salt and pepper.
- Bake until crispy around the edges and the cheese melts, 8 to 10 minutes.
- For the magic eggs: Place the shredded cabbage in a microwave-safe bowl with about 1 1/2 cups water. Cover with a damp paper towel and microwave for 2 to 3 minutes so the cabbage steams and releases its juice into the water, turning it purple.
- Place 4 egg whites into 4 small bowls. Pour 1 tablespoon colored water into each egg white. Whisk vigorously (using a whisk, not a fork) to fully incorporate the water into the egg white. Watch the color change before your eyes! Place the saute pan used to cook the bacon over medium heat. Add the egg whites, keeping them separate, and cook until almost firm, about 2 minutes. Use a rubber spatula to release the sides of the egg whites from the pan. Place 1 egg yolk in the center of each egg white. Cook to desired doneness, about 1 minute more. Repeat with remaining egg.
- Place 1 egg on top of each pizza. Sprinkle with the arugula and flakey sea salt. Slice into quarters and serve immediately.
CANADIAN BACON, SWEET ONION, AND APPLE PIZZA
Steps:
- Preheat oven to 450 degrees F. Lightly spray 1 baking sheet with olive oil cooking spray; set aside.
- Press dough into a rectangle on a floured surface. Cut into quarters and place on prepared baking sheet with floured fingers. Top with apple butter, cheese, onion, apple, and Canadian bacon. Bake in oven 12 to 17 minutes or until crust is golden brown.
- Slice and serve.
BETHANY'S APPLE, ONION & BACON PIZZA
This is a recipe from Bethany, my SIL's niece. It sounded really good so I wrote it down for safe keeping. Can make into a yummy appetizer as well! Just be sure to increase the amount of ingredients as needed.

Steps:
- Spread pizza dough out on a pizza pie pan all the way to the edges of the pan
- Spread liberally with the apple butter, up to about 1/2 inch from edges
- Layer apple slices, onion slices, then top with crumbled bacon.
- Bake at 350 for about 40 minutes, or until crust is a golden brown and apples & onions are cooked & softened.
- Using a pizza cutter (or a large knife) cut into 8-10 slices.
- Variation: You can also make this a large rectangle pizza and cut into small bite-sized pieces for an appetizer!
- Optional: Top with a light layer of cheddar cheese
