Our family has experimented for years to pin down the perfect yellow cake recipe. Well by George, I think we've finally done it, and this is the winning recipe!

Number Of Ingredients 12

1 2/3 cups granulated sugar ((360g))
5 tablespoons vegetable oil ((75 ml))
3 tablespoons butter ((45g, at room temperature))
2 large eggs ((at room temperature))
2 egg yolks ((at room temperature))
4 teaspoons vanilla extract
1/4 cup sour cream ((at room temperature))
2 1/2 cups all purpose flour ((370g))
1 tablespoon baking powder
1 teaspoon salt
1/4 teaspoon turmeric ((optional))
1 1/4 cup buttermilk ((at room temperature))

Steps:

  • Preheat the oven to 350°F. Grease and flour a 13x9 inch cake pan.
  • In a large mixing bowl or the bowl of a mixer with the paddle attachment, combine the sugar, vegetable oil, and butter. Cream together at medium speed for 1 minute.
  • Add the eggs and egg yolks one at a time on low speed. Stir in the vanilla extract until the batter is smooth and incorporated, scraping down the sides of the bowl as needed. Next, mix in the sour cream and beat until well-combined.
  • In a separate bowl, whisk the flour, baking powder, salt, and turmeric until thoroughly combined.
  • Add half the flour mixture, and beat on low speed while pouring in half of the buttermilk and mix just until the flour starts to incorporate. Finally add the remaining flour, mixing on low speed while pouring in the remaining buttermilk and beating until all of the ingredients are combined.
  • Use a spatula to scrape down the sides of the bowl and stir the batter from the bottom to the top to ensure it's well-mixed.
  • Pour the batter into the greased pan (or pans) evenly and bake at 350°F for 36-40 minutes (or less time for cupcakes), keeping a careful eye on the baking during the last few minutes. Test the cake for doneness by inserting a toothpick into the center of the cake--if it comes out clean, the cake is done.
  • Cool completely and decorate with your choice of frosting.

The memory is so special that I keep the lamb mold in my kitchen next to my cookbooks as a decoration. 3 large egg whites
1/2 cup butter, softened
1 cup sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup 2% milk
1/4 teaspoon cream of tartar
FROSTING:
1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
3-3/4 to 4 cups confectioners' sugar
1 teaspoon vanilla extract
Assorted decorations: Sweetened shredded coconut, sprinkles and jelly beans

Steps:

  • Place egg whites in a small bowl; let stand at room temperature 30 minutes., Meanwhile, preheat oven to 375°. Thoroughly grease and flour inside of a 3D lamb cake pan. , In a large bowl, cream butter and sugar until light and fluffy. Beat in vanilla. In another bowl, sift flour, baking powder and salt together twice; add to creamed mixture alternately with milk, beating well after each addition., Add cream of tartar to egg whites; with clean beaters, beat on high speed just until stiff but not dry. Fold a fourth of the whites into batter, then fold in remaining whites., Gently transfer to bottom half of mold (the bottom half is the face of the lamb). Place top mold (back of lamb) on top, interlocking seams (make sure half with vent hole is on top to permit steam to escape). Place on a baking sheet., Bake until a toothpick inserted in vent hole comes out clean, 45-50 minutes. Let cool 15 minutes before removing to wire rack to cool completely., For frosting, in a large bowl, beat cream cheese and butter until smooth. Gradually beat in confectioners' sugar and vanilla. Frost cake. Attach sprinkles for eyes and nose; sprinkle body with coconut. If desired, decorate with additional coconut and jelly beans.

Yield Makes two 9-inch cakes

8 ounces (2 sticks) unsalted butter, softened, plus more for pans
3 cups cake flour, plus more for dusting
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
2 cups sugar
4 large eggs, separated (egg whites whipped to stiff peaks)
1 teaspoon pure vanilla extract
1 cup buttermilk, room temperature

Steps:

  • Preheat oven to 350 degrees. Butter and line two 9-inch round cake pans with parchment. Butter parchment, then flour pans, tapping out excess. Set aside.
  • Whisk together flour, baking powder, baking soda, and salt in a medium bowl; set aside. Put butter and sugar in the bowl of an electric mixer fitted with the paddle attachment; cream on medium-high speed until pale, 2 to 3 minutes. On medium speed, add eggs yolks one at a time, mixing well after each addition. Add vanilla and mix, scraping down sides of bowl. On low speed, add the flour mixture in three batches, alternating with two batches of buttermilk. Fold in egg whites. Stir with a rubber spatula until the batter is evenly blended.

  • Bake until a cake tester inserted into centers comes out clean, 30 to 35 minutes.
  • Remove from oven and let cool in pans on wire racks, 20 minutes. Run a knife around edges of cakes to loosen. Invert cakes from pans. Peel off parchment from cakes. Reinvert and let cool completely on racks.

Unsalted butter, for pans
4 1/4 cups unbleached all-purpose flour, plus more for dusting
3 1/3 cups sugar
3 1/2 teaspoons baking soda

1 3/4 teaspoons kosher salt
3 large eggs plus 1 large yolk
1 3/4 cups warm water
2 cups buttermilk
3/4 cup vegetable oil

Make-Ahead Chocolate Buttercream Frosting

Steps:

  • Preheat oven to 350 degrees, with racks in upper and lower thirds. Cut two 9-inch rounds of parchment paper to line the bottoms of two 9-inch (2 inches deep) round cake pans. Butter and line pans. Butter linings. Dust pans with flour, tapping out excess. Set aside.
  • Sift together flour, sugar, baking soda, baking powder, and salt into the bowl of an electric mixer. Return bowl to mixer; fit mixer with the paddle attachment. Add eggs, yolk, water, buttermilk, oil, and vanilla. Mix on low speed until mixture is smooth, about 3 minutes.

  • Trim tops of cake layers with a long serrated knife to make them level. Using a small offset spatula, evenly cover top of one cake layer with 1 1/2 cups frosting; spread frosting so that it extends just beyond edges of cake.
  • Place second cake layer, cut side down, on top; press gently to make it level. Frost top and sides of assembled cake with remaining frosting.
