The Best Ever Candied Yams Recipe - (4/5) image

6 medium sized yams, peeled and sliced
1 stick butter
3/4 cup dark brown sugar
3/4 cup granulated sugar
1 tablespoon cinnamon
1/2 teaspoon ground ginger
1 teaspoon nutmeg
1 tablespoon pure vanilla extract

Steps:

  • Place the peeled and cut yams into a large pot and cover with water. Place the pot on the stove top, turn the heat to high, and let the yams boil for about 5 minutes. Then, drain the yams and set the to the side. In a separate pot, add 1 stick of butter and begin to melt it over medium-high heat. Once the butter is melted, reduce the heat to low and add in the granulated sugar and the brown sugar. Stir and cook for 1 minute, then turn the heat off. Sprinkle in the ground cinnamon, ground nutmeg, and ground ginger. Stir and add in the vanilla extract. Place the yams into a buttered baking dish and pour the candied mixture all over the yams. Fold in the ingredients and make sure the yams are well coated with the candied mixture! Place the yams in a preheated 375°F oven, uncovered for 20 minutes. Remove the yams from the oven and add the marshmallows on top. Place the yams back into the oven for 5 to 7 minutes or until the marshmallows are cooked to your liking.

Since my family isn't really very fond of cranberries, I decided to get creative this year and it was a HUGE hit! I hope you like it!

2 large cans of yams drained--i used bruce's
1 small can of mandarin oranges with juice
4 oz dried cranberries
1/2 c brown sugar, light
1/2 c chopped walnuts
1/2 pkg mini marshmallows

Steps:

  • 1. Drain yams and pour into mixing bowl. Add mandarin oranges with juice and brown sugar. Mix on medium until well blended (about 1-2 minutes).
  • 2. Stir in cranberries, walnuts, and marshmallows. Fold into a casserole dish and bake at 325°F for about 45 minutes.
  • 3. Sorry, this was such a big hit, I didn't get a chance to take a picture before it was demolished!

1 yam, between 3/4 # to 2 #
1 teaspoon olive oil
1/2 cup heavy cream
1/4 cup bourban whiskey
3 tablespoons molasses
1/8 teaspoon salt

Steps:

  • Preheat oven to 350°F.
  • Place yam on foiled line sheet. Bake til tender and it begins to ooze syrup. About 45 minutes or so. Cool enough to handle. Skin and put in a mixing bowl. Add all the ingredients. Mix with a hand mixer. Cover and gently heat.

•2 Yams
•½ stick Butter
•½ cup Dark Brown Sugar
•1 tsp. Cinnamon
•8 oz. Domaine de Canton
•1 pinch Salt
•1 cup Mini Marshmallows

Steps:

  • Peel yams, and cut into small 1/2 pieces then place into an 8"x8" pan. Preheat oven to 375°F. In a small sauce pot, bring Domaine de Canton to a boil and reduce the liquid by half. In a separate small sauce pot, melt butter. Once butter is melted, add brown sugar and cinnamon and dissolve in butter. Once Domaine de Canton is reduced, pour into your butter/sugar mixture. Bring mixture to a boil, then pour over the yams. Place into oven, and cook for 35-40 minutes, remembering to stir occasionally. Remove from oven when yams are fully cooked. Strain off remaining liquid and reduce in a small sauce pot until syrupy, then toss with cooked yams and enjoy!
