HOMESTEAD COWBOY BEANS

Homestead Cowboy Beans image

I have an enormous family and all of the men go trail riding several times a year and these beans are one of the things they look forward to. My aunts and I put together their favorite combination several years ago, and have it ready at their camp, and they are some happy cowboys! You can mix different beans to your liking (lima, kidney, etc.), but the boys in our family like this mixture the best.

I've made these zesty beans many times for picnics and potlucks-they're hearty and zippy with chili pepper and the extra flavor of lentils in the ban mix. The recipe can be made ahead and heated before serving. -Arthur Morris, Washington, Pennsylvania

WESTERN-STYLE BAKED BEANS

Western-Style Baked Beans image

My husband does not like baked beans but can't get enough of these. They are loaded with a variety of meats and get a little bit of sweetness from molasses and brown sugar. If you don't have a slow cooker, you can bake them in the oven until heated through.

Great doctored baked bean recipe. Found this in an old hand-made school recipe booklet. Always requested at cookouts. Great the first day, better the second. Use only the molasses based beans not the ketchup style.

OLD WEST BAKED BEANS

Old West Baked Beans image

This slow-baked molasses-and-mustard-flavored western favorite is a perfect party food because it can be made days ahead and just gets better with time. Enjoy it while watching Blazing Saddles,, which, according to creator Mel Brooks, is best seen on video. Claims Brooks, "I can't watch Blazing Saddles on television ... A lot of prudes got together and silly people got together and they cut out everything they thought would be offensive to a 4-year-old."

BEST IN THE WEST BAKED BEANS

I think I clipped this recipe out of the newspaper years ago. It is always a huge hit at picnics, barbecues and get togethers. It's a nice change from the more traditional baked beans. I can't even begin to guess how many times I have handed out the recipe.

Number Of Ingredients 13

1 lb bacon, chopped
1 onion, chopped
1/2 cup ketchup
1/2 cup barbecue sauce
1 teaspoon salt
4 tablespoons yellow mustard
4 tablespoons molasses
1 teaspoon chili powder
3/4 teaspoon pepper
2 (16 ounce) cans kidney beans, drained
2 (16 ounce) cans pork and beans
2 (16 ounce) cans lima beans, drained

Steps:

  • Brown beef, bacon and onion in large skillet. Drain.
  • Combine all ingredients except beans, mix well.
  • Add beans and stir gently.
  • Bake one hour in a 325 to 350 oven (or until hot a bubbly).
  • This recipe can easily be cut in half since it makes a rather large batch. I only use half the bacon. If you would like, you could add some more beef if cutting back on the bacon.

BEST OF THE WEST BEAN BAKE

Best of the West Bean Bake image

Hearty & satisfying side dish for summer cookouts or Super Bowl parties. A one-pot wonder that makes a huge kettle-full. Fantastic when reheated the next day too!

Categories     Beans

Time 1h20m

Yield 20 serving(s)

Number Of Ingredients 12

1 lb ground beef
1 lb bacon, chopped
1 onion, chopped
1/2 cup ketchup
1/2 cup bottled barbecue sauce
1/4 cup mustard
1/4 cup molasses
1 teaspoon chili powder
1 teaspoon ground pepper
2 (16 ounce) cans small pink beans, rinsed & drained (Goya)
2 (16 ounce) cans white beans, rinsed & drained
2 (16 ounce) cans pork & beans

Steps:

  • Preheat oven to 350.
  • In ovenproof kettle, cook beef, bacon, and onion over moderate heat, stirring to break up lumps for about 20 minutes or until beef is no longer pink & bacon is slightly crisp. Transfer to a large strainer to drain the grease & then return to the kettle. Add ketchup, barbecue sauce, mustard, molasses, chili powder, & six cans of beans. Stir until well combined.
  • Note: you can modify the types beans to your liking. I don't use kidney beans myself; however you can add them in place of the pink ones. Can't really go wrong with whatever kind you chose!
  • Bake mixture, covered, in middle of oven for at least an hour. Serves about 20 as a side dish.
