8 tablespoons (1 stick) unsalted butter, at room temperature
Salt and freshly milled black pepper
2 1/2 quarts homemade turkey stock or canned reduced-sodium chicken broth
Melted unsalted butter, if needed
3/4 cup all-purpose flour
1/3 cup bourbon, port, or dry sherry, optional
1 (18-pound) fresh turkey
About 12 cups of your favorite stuffing

Steps:

  • Position a rack in the lowest position of the oven and preheat to 325 degrees F.
  • Reserve the turkey neck and giblets to use in gravy or stock. Rinse the turkey inside and out with cold water. Pat the turkey skin dry. Turn the turkey on its breast. Loosely fill the neck cavity with stuffing. Using a thin wooden or metal skewer, pin the neck skin to the back. Fold the turkey's wings akimbo behind the back or tie to the body with kitchen string. Loosely fill the large body cavity with stuffing. Place any remaining stuffing in a lightly buttered casserole, cover and refrigerate to bake as a side dish. Place the drumsticks in the hock lock or tie together with kitchen string.
  • Place the turkey, breast side up, on a rack in the roasting pan. Rub all over with the softened butter. Season with salt and pepper. Tightly cover the breast area with aluminum foil. Pour 2 cups of the turkey stock into the bottom of the pan.
  • Roast the turkey, basting all over every 30 minutes with the juices on the bottom of the pan (lift up the foil to reach the breast area), until a meat thermometer inserted in the meaty part of the thigh (but not touching the bone) reads 180 degrees and the stuffing is at least 160 degrees, about 4 1/2 hours. Whenever the drippings evaporate, add stock to moisten them, about 1 1/2 cups at a time. Remove the foil during the last hour to allow the skin to brown.
  • Transfer the turkey to a large serving platter and let it stand for at least 20 minutes before carving. Increase the oven temperature to 350 degrees F. Drizzle 1/2 cup turkey stock over the stuffing in the casserole, cover, and bake until heated through, about 30 minutes.
  • Meanwhile, pour the drippings from the roasting pan into a heatproof glass bowl or large measuring cup. Let stand for 5 minutes, then skim off and reserve the clear yellow fat that has risen to the top. Measure 3/4 cup fat, adding melted butter if needed. Add enough turkey stock to the skimmed drippings to make 8 cups total.
  • Place the roasting pan on two stove burners over low heat and add the turkey fat. Whisk in the flour, scraping up browned bits on the bottom of the pan, and cook until lightly browned, about 2 minutes. Whisk in the turkey stock and the optional bourbon. Cook, whisking often, until the gravy has thickened and no trace of raw flour remains, about 5 minutes. Transfer the gravy to a warmed gravy boat. Carve the turkey and serve the gravy and the stuffing alongside

1 large sweet onion, chopped

1 whole turkey, size depending on how many people you want it to serve
1/4 lb butter, softened
salt and pepper

Steps:

  • Rinse the turkey and dry it well. Sprinkle the cavity well with salt. Stuff as desired.
  • Rub the softened butter all over the outside of the bird, and sprinkled it lightly with salt.
  • Place the turkey on the rack of a large roaster, which has a heavy bottom, pouring about 2 inches of water in the bottom of the pan.
  • Lay the neck and giblets alongside, cover the pan tightly and put it on the large burner on top of the stove. Allow it to boil and then steam gently for 4 1/2 to 5 hours, approximately the same length of time that it would take to roast the same bird. Take care to see the pan does not cook dry.
  • When the drumsticks are loosened and the meat thermometer indicates the bird is about done, dribble a bot of soft butter over the skin, sprinkled it with a bit of white sugar and flour and bang it into a 350*F oven to brown while theaccompanying vegetables are cooking on top of the stove.
  • The drippings in the bottom of the roasting pan will be a rich dark brown. Skim off any fat and then use them to make a rich gravy.

3 lbs pork loin roast, about
1/3 cup honey
1/3 cup Dijon mustard
1/4 teaspoon garlic powder
1/2 teaspoon rosemary
1 cup water, divided
1/2 beef bouillon cube
salt and pepper
2 -3 tablespoons marsala (highly suggested) (optional)
1 tablespoon cornstarch
3 tablespoons water

Steps:

  • Preheat oven to 400 degrees.
  • Place pork roast in a shallow metal pan.
  • Combine honey and Dijon mustard.
  • Coat top and sides of roast with this mixture.
  • Sprinkle garlic powder and rosemary over entire coated surface.
  • Roast meat for 15 minutes at 400 degrees, remove from oven and add 1/3 cup water to the bottom of the pan.
  • Reduce heat to 325 degrees and roast meat for 35 minutes per pound or until meat thermometer reaches 175 degrees.
  • Check roast occasionally and add a little more water to pan to keep honey drippings from scorching.
  • When meat is done, remove from oven and place on carving board.
  • Scrape pan and pour juices into a saucepan.
  • Add 1/2 cup water, 1/2 beef bouillon cube, salt and pepper to taste.
  • Add Marsala, if desired, and simmer long enough to cook away the alcohol smell.
  • Combine cornstarch and 3 Tablespoons water, add to sauce and cook until thickened.
  • Slice pork roast and serve with sauce.

2 -3 tablespoons olive oil
2 tablespoons butter
1 yellow onion, Quartered

red wine

1 ½ pounds baby red potatoes, halved

1 head garlic
1 bunch fresh thyme

Steps:

  • Put the carrots, parsnips and onions in the bottom of a big roasting pan. Season with salt and pepper, and add to that the 1/2 cup of chicken broth.
  • Then, remove the contents from the cavity of the chicken.
  • Slice the top off of the whole head of garlic, and put that, the halved lemon, and the whole bunch of thyme inside the cavity. Truss the legs of the chicken.
  • Season the outside of the chicken with olive oil, salt and pepper.
  • Place the chicken on top of the vegetables in the roasting pan, fold the wings underneath the bird.

900 g rump steak (whole beef joint - 2lbs)
2 tablespoons Dijon mustard
2 tablespoons black pepper
400 g potatoes (new scrubbed - 14 ounces)
400 g butternut pumpkin (14 ounces, peeled, deseeded and cut into 2.5cm/1in cubes I personally prefer Queensland Blue, a firm)
3 tablespoons sunflower oil (or your choice oil)
1 tablespoon cornflour (cornstarch)
600 ml beef stock (1 pint)
4 parsley sprigs (to garnish)

Steps:

  • Preheat oven to 190°C.
  • Mix together the mustard and black pepper in a small bowl and then spread it over the beef joint.
  • Place the joint in a roasting pan/tin (my preference would be on a rack). cover with foil or a lid if your pan has one and bake for 45 minutes.
  • During this 45 minutes cook the potatoes and pumpkin in a pan of boiling water for 5 minutes and then drain (could be done in the microwave).
  • Put oil in a shallow sided baking tray and either heat up on the stove top or in the oven.
  • Once thoroughly heated (this gives you the least amount of fat in the vegetables), add the vegetables and turn/toss them in the oil until coated.
  • Place in the oven and roast for 15 minutes.
  • Uncover the beef and roast with the vegetables for a further 15 minutes.
  • Lift out the beef and vegetables and put the tin/pan on the stove top and stir the cornflour into the pan juices, then blend in the stock.
  • Bring to the boil, stirring until smooth.
  • Carve the beef into slices and serve with the vegetables and gravy and garnish with parsley sprigs.

1 5-8 lb. prime rib roast, high quality (boneless)
1/4 cup kosher salt
1/8 cup dried rosemary, i crush the needles just a little
1/8 cup wasabi (horseradish) powder, comes in a very small can
1/8 cup garlic powder
1/16 cup cracked black pepper (or coarse ground)
2 Tbl. butter
*au jus for dipping, optional
*sour cream horseradish sauce for dipping, optional

Steps:

  • 1. Follow to a TEE: Combine seasonings, and rub into roast. Keep patting on til all is used. Sprinkle any on that is left over top. (Fatty side). Let sit while oven preheats to 375. Place roast in broiling pan or roaster lined with foil and sprayed with butter flavored vegetable spray, fat side up. Bake for 45 minutes. Turn oven off, DO NOT OPEN OVEN. Stick a note on the door as a reminder if you have to, I do! ;) One hour before serving, turn oven back on and set timer for 45 minutes. Take rib out, LET STAND FOR 15 MINUTES. This is VERY important, it allows the juices to redistribute. (*Do not carve "ahead of time", either.) Scrape off the salt "shell" leaving on some of the seasonings. (The salt shell that forms during cooking is what seals in the juices and moisture and is not intended to be eaten.) The meat directly underneath that will be a little salty, but that's usually the fatty part that no one eats, anyways. The rest of it will be fine. PROMISE! While outside is still hot/warm, spread butter all over outside of roast and let melt. Serve with au jus and sour cream horseradish sauce. *When serving, slice into thick, about 1"+, "restaurant-cut" slices (in from the ends.) *The "inbetween time" for me is always 1 1/2-2 hours. *Tip: I like to serve these with twice-baked potatoes and put them in with the roast during the second baking. Also steamed and buttered asparagus, my pineapple dressing, warm rolls or french bread and salad or soup. Small bowls or large cups of french onion goes well with this. (Smother with cheese!) And of course French Silk Chocolate Pie or cheesecake for dessert. Great for company, Christmas, New Year's Eve, Valentine's Day, business dinners, birthdays and anniversaries!
  • 2. The ends and any leftovers make awesome prime rib hoagies the next day, too.

2 c baby carrots
2 large onions, vidalia, peeled and quartered
5 lb chuck roast with good marbling ( fat= flavor)
3 Tbsp fresh thyme
3-4 sprigs fresh rosemary
3 bay leaves, dried
1/2 c olive oil
2-3 c beef stock/broth
1 c red wine (I used cab)
1 pkg pot roast Crock Pot packet - whatever brand
course grained sea salt
fresh crushed black pepper
1 c all-purpose flour
BOURSIN MASHED POTATOES~~~
1 pkg Boursin cheese, 8 oz
1 c milk
1/2 stick butter, salted
3 lb red bliss potatoes
green onion

Steps:

  • 1. Take out your meat; let your meat come up to room temp. LIBERALLY season with sea salt and fresh black pepper.
  • 2. Pour some olive oil into a pan. Heat on med-high until almost smoking. Put your onion quarters in and brown on all sides (you want a nice deep golden color). When browned, remove and put in bottom of Crock Pot.
  • 3. Next add a little more oil if needed and put your carrots into the pan making sure everything gets a nice color as well. Remove when evenly browned and add to Crock Pot.
  • 4. Add the last of your oil and let it heat up. While your oil heats, dredge your beef through your flour making sure it's evenly coated.
  • 5. Sear the meat on all sides, about a minute or two, getting a GBD (Golden Brown and Delicious) color.
  • 6. Pull out your meat and lay it on top of your onions and carrots.
  • 7. Add your rosemary, thyme, and bay leaves to the Crock Pot.
  • 8. Mix your pot roast packet into your 2 cups of stock and stir until well combined then add to your Crock Pot. (The liquid should come up about halfway on the meat.)
  • 9. If there is a lot of oil left in your pan, dump some of it out. Add your red wine to deglaze the pan, scraping the bottom of the pan with a wisk for all those little cooked on yummy bits (that's where a lot of your flavor will come from). Reduce it by about half, then add it to you Crock Pot.
  • 10. Set your Crock Pot on high and cook for 4 hours or on low for 8 hours. You can leave it on low and it will keep going or, after 4 hours on high I usually turn it down and let it go another hour.
  • 11. Boursin Mashed Potatoes! In the last 45 min of cooking get a big pot of SALTY water boiling. Wash all of your potatoes well. Stab all over with a fork. DO NOT PEEL.
  • 12. Add potatoes to boiling water and cook until tender (falling off the fork when stabbed).
  • 13. Strain the potatoes really well.
  • 14. Put the milk and butter in the microwave and heat until milk is hot and butter is melted.
  • 15. Add the potatoes back to the pot and get out your electric mixer. Mix until most of the really big pieces are broken down.
  • 16. Add the milk/butter mixture a little bit at a time until you reach your desired consistency.
  • 17. I like these specific potatoes a little lump because they really stand up to the pot roast.
  • 18. Add 4 OZ of Boursin at the last minute and stir in while potatoes are hot. Season to taste.
  • 19. Try to separate the pot roast into manage pieces, either take it out and cut it or just separate it in the Crock Pot.
  • 20. It should be tender enough that it just falls apart to the touch.
  • 21. I serve it up with a big scoop of potaotes in the center of the plates and put pot roast and veggies and gravy right on top. Garnish with some chopped green onion if you so desire. DEEEEEEEEEEELICIOUS =)

8 large Maris Piper potatoes , peeled and cut into chunks
vegetable oil , for the roasting tin

Steps:

  • The day before, tip the potatoes into a large pan of salted water and simmer for 10 mins or until just tender, saving a little of the cooking water. Drain the potatoes in a colander and leave to cool. Now here's the trick; choose the two chunks that are most cooked and ready for mashing and push these through a potato ricer, then add a little of the cooking water to make a thick potato batter. Roll the cooled potatoes through the batter then put in the fridge on a tray lined with non-stick paper and chill overnight.
  • The next day, heat the oven to 200C/180C fan/gas 6. Take a large roasting tin and add a good splash of vegetable oil. Place in the oven and heat for a few minutes, then carefully add the potatoes to the hot fat and turn to coat. Lightly season with salt and roast for 40 mins without disturbing, then turn the potatoes and turn the oven up to 220C/200C fan/gas 8 and continue to roast the potatoes for another 20-30 mins, turning again once, until beautifully crisp and golden all over.

If you think nut roast is a boring vegetarian cliche, think again! This little beauty is chock full of delicious nuts, seeds and spices that come together in a taste sensation. Don't be put off by the number of ingredients - most of these are lurking in the average spice rack and it comes together really quickly and easily. It works brilliantly as a roast dinner but also anywhere you would normally use mince, such as in a bolognese sauce, "meat"balls, rissoles, chilli or shepherds pie. If making for Christmas, you can add lots of allspice and nutmeg in addition to the named spices for a lovely festive flavour, and wrap the nut mixture in puff pastry to make a delicious Wellington-esque dish, or make sausage rolls with the mixture. The possibilities are endless!

1-2 tablespoons olive oil
200g (1 large bag) walnut pieces
100g (half a large bag) whole almonds
200g other mixed nuts (I tend to use cashews, pinenuts and pecans)
1 cup sunflower seeds
2 teaspoons sweet smoked paprika
2 teaspoons fennel seeds
1 teaspoon mustard seeds
1 teaspoon coriander seeds
2 teaspoons mixed spice
Roughly 1½ cups breadcrumbs (add more if too wet)
1 egg
1 x 400g can chopped tomatoes, drained (reserve the juices for gravy)
2 large handfuls fresh flat leaf parsley
2 teaspoons Marmite
Juice of ½ a lemon
1/4 cup grated strong vegetarian Cheddar cheese
¾ of a medium red onion
1 teaspoon Dijon mustard
Salt and freshly-ground black pepper

Steps:

  • Grease and line a large loaf tin and set aside. If you're cooking the roast straight away (see step 4), preheat the oven to 180C (fan).
  • Heat the olive oil in a large frying pan on medium-high heat. Once the pan is hot, toast the nuts, seeds and spices, tossing everything to coat well. Be very careful and do not let it burn. Toast for a few minutes, or until the mixture is fragrant and starting to turn golden, then turn off the heat and let it cool slightly.
  • Add the cooled nuts and spices to the bowl of a food processor. Add all other ingredients. Blitz until thoroughly combined, or combined to your liking (it can be nice if left a little chunky). You might need to stop and scrape it down a few times. If it's too wet, add more breadcrumbs. If it's too dry, add a little water, reserved tomato juice or even a dash of red wine if you've got some handy!
  • Place in the prepared pan and ideally leave for a few hours (or overnight is even better) in the fridge to let the flavours deepen and the loaf firm up. If you're in a hurry you can cook it straight away, but ideally give it at least an hour's resting time.
  • Preheat oven to 180C (fan). When ready, cook the roast for 45 minutes to an hour until firm and golden. Allow to cool slightly before carving then serve with all your favourite roast vegetables.

I can hear you thinking "everyone knows how to do roast potatoes", but bear with me; following this recipe has given me the best never-fail perfect roast potatoes ever! Golden and crisp on the outside, soft and fluffy inside. There are other recipes posted on Recipezaar, but I've checked them and these directions are different! Obviously it helps if you use a variety of potato that is especially suitable for roasting (such as Maris Piper, King Edward or Desiree), but this recipe really will give you beautifully roasted potatoes that don't stick to the pan - the secret to success is in step 2.

4 lbs potatoes (chose the best variety you can get for roasting)
4 ounces vegetable shortening (such as Trex or Crisco vegetable shortening)
3 -4 bay leaves (optional)
sea salt (optional)

Steps:

  • Preheat the oven to 400 F, 200 C, gas mark 6; peel the potatoes and cut them into evenly sized halves or chunks.
  • Put the potatoes into a large saucepan, cover with cold salted water and bring to the boil; drain the water off as soon as it comes to the boil - this step isn't to cook the potatoes: it heats them through so they start roasting more quickly - return the potatoes to the hot pan and dry them over the heat (it is important that the potatoes are dry for roasting, otherwise they are likely to stick to the baking tray).
  • Slide a large baking tray into the oven to heat up for a few minutes, add the vegetable fat to the potatoes in the hot pan and let it melt; turn the potatoes in the melted fat until they are shiny and well coated, then tip them onto the hot baking tray.
  • Place the tray in the oven for about 45 minutes; add the bay leaves, if using, 15 minutes into the cooking time; turn and baste the potatoes a few times during cooking.
  • To serve, lift the potatoes from the baking tray with a slotted spoon, sprinkle with sea salt if desired: NOTE - if you are unable to serve the potatoes immediately, do not cover them (they'll loose their crispiness); instead keep them warm in the oven until you are ready.

5 russet potatoes (cut into bit size pieces)
1 (16 ounce) bag baby carrots
1 small onion (cut up)
2 garlic cloves
2 tablespoons Worcestershire sauce

1 (10 ounce) can cream of mushroom soup

  • Place cut up potatoes carrots and onion in bottom of crock pot.

  • In a bowl mix the remaining ingredients and pour over roast.
  • cover and cook on high for the first hour, reduce to medium and cook for another 4 to 5 hours.

2 -3 lbs chuck or 2 -3 lbs rump roast
1 garlic clove
1 -1 1/2 cup white mushroom, sliced
3 russet potatoes
1 cup flour
garlic powder
onion powder
1 tablespoon salt
1 tablespoon pepper
1 onion
3 tablespoons oil (I prefer grapeseed)
1/4 cup water

Steps:

  • Chop onion and put in bottom of crock pot with water and turn pot on low.
  • Mix flour, onion powder, garlic powder, salt and pepper in a large ziploc freezer bag.
  • Put roast in bag and toss until outside of roast is completely covered with a light layer of flour mixture.
  • Heat oil in a pan large enough for roast (I usually use a wok).
  • Brown roast on all sides in the pan.
  • After browning, empty excess oil into crock and keep roast in pan.
  • Chop garlic into slices.
  • Make incisions in the roast and put garlic in the slices with fingers.
  • Add roast to crock pot.
  • Add mushrooms on sides and top of roast.
  • After 4 or 5 hours, skin and chop potatoes and add to crock pot.
  • Cook until potatoes are soft and roast is tender enough to pull apart with a fork (usually 1-2 more hours).
  • Salt and pepper to taste.

1 Duck about 5 lbs.

Steps:

  • Place the duck in a large pot, cover with cold water and bring to boil. Reduce the heat and simmer for 35 minutes. Drain and pat dry with paper towels. Preheat the oven to 400F. Salt and pepper the duck and place it on a roasting rack in a shallow roasting pan. Roast the duck for about 45 minutes, until nicely browned and a meat thermometer reads 180 in the thigh. Remove from the oven and let rest for about 15 minutes before carving.
