AUTHENTIC ITALIAN BRUSCHETTA
Authentic Italian Bruschetta is a classic appetizer that people absolutely love. It is perfectly crispy with just the right amount of fresh tomatoes, basil, and balsamic. Learn all the little tricks for making the perfect bruschetta right at home.

Steps:
- Combine the diced tomato with fresh basil, dried oregano, a pinch of salt, 1 to 1 1/2 tablespoons olive oil, oregano, a pinch of salt, and a splash (1 teaspoon) of balsamic vinegar. Chill.
- Slice the baguette into 1/4 to 1/2 inch slices. Cut off the end of the garlic clove and rub the garlic onto each side of each piece of bread. Drizzle both sides of the sliced bread with a little olive oil (or use a brush to brush it on).
- Toast on a grill or in a hot skillet until browned on both sides.
- Top hot bread with cold tomato bruschetta and serve immediately.

- In a small skillet, heat the oil over medium-high heat. Add the garlic and stir, lightly frying for about a minute, removing before the garlic gets too brown (it can be golden). Pour the garlic and oil into a mixing bowl and allow to cool slightly.
- Add the red and yellow tomatoes, balsamic and basil to the bowl. Sprinkle with salt and pepper. Toss to combine, and then taste and add more basil if needed, and more salt if needed (don't over salt, though!) Cover and refrigerate for an hour or two if you have the time.
- Cut the baguette into diagonal slices to allow for the most surface area possible. Melt 4 tablespoons of the butter in a large skillet and grill half the bread on both sides, making sure they're nice and buttery. Cook until golden brown on both sides. Repeat with the remaining 4 tablespoons butter and the other half of the bread.
- To serve, give the tomato mixture a final stir, and then spoon generously over the slices of bread. Serve on a big platter as a first course or appetizer.
BASICALLY THE BEST BRUSCHETTA EVER

- (If you find it to vinegary for your taste simply add some sugar and olive oil).
- Serve on garlic bread with some parm cheese (the fresh, block kind you grate your self) or bake on the bread with a little feta or assagio cheese for a change of pace.
- Enjoy.

- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Toast muffin halves under broiler until golden, about 2 to 3 minutes. Mix garlic, butter, and basil together in a small bowl; spread butter mixture evenly onto each toasted muffin half.
- Combine tomatoes, olives, and tomato paste in a large bowl; set aside. Whisk together the olive oil, lemon juice, and honey in a small bowl. Spoon some of the tomato mixture onto each muffin, then drizzle the olive oil mixture over the top, place a piece of mozzarella on top, and season with salt and pepper.
- Return muffins to broiler; cook until the cheese has melted, 1 to 2 minutes. Serve immediately.

- For The Bruchetta:.
- Mix together tomatoes, basil, garlic, and cheese.
- drizzle olive oil and vingar over the tomato mixture. You don't want to skimp but you don't want to go over board either. For 3 cups of tomato mixture I would reccomend about a cup of liquid. Appx 3/4 cup of oil and a 1/4c of vinigar but this is just an estimate. Go by your own preference.
- Stir the ingredients.Taste it and add more oil, vinigar, as needed. You can also ad a little garlic salt if you think it needs salt.
- For The Garlic Toast:.
- Cut the bread slices in half so they are snack sized (if you used italian bread. If you use french bread the slices should be perfect sized).
- Spread slices on a broiler pan, drizzle w/ olive oil, sprinkle with garlic powder, parsley, and a touch of paprika. Put under the broiler untli toasted but not burned.
