2 large eggs
2 large egg yolks
2-1/4 cups half-and-half cream
2 cups whole milk
1/2 cup butter, melted
1/4 cup sugar
1 tablespoon vanilla extract
1-1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon sea salt
20 dinner rolls (1-1/4 pounds), cut into 1-inch cubes (18 cups)
3 tablespoons brown sugar
SAUCE:
1 cup butter, cubed
1 cup packed brown sugar
1 cup half-and-half cream
2 teaspoons vanilla extract
1/4 teaspoon sea salt
1/8 teaspoon baking soda

Steps:

  • Preheat oven to 350°. Whisk together the first 10 ingredients until blended. Gently stir in bread. Transfer to a greased 3-qt. or 13x9-in. baking dish. Sprinkle with brown sugar; let stand until bread is softened, about 15 minutes. Bake until puffed and a knife inserted in center comes out clean, 40-45 minutes., Meanwhile, for sauce, melt butter in a large heavy saucepan over medium heat. Add brown sugar; stir until dissolved. Gradually stir in cream. Bring to a boil. Reduce heat; simmer until thickened, 15-20 minutes, stirring constantly. Remove from heat; add vanilla, sea salt and baking soda, stirring well. Serve sauce with warm bread pudding.

And I honestly believe it's because so often, the bread pudding we've experienced in restaurants or even at potlucks more closely resembles a sweetened bread cinder block than a rich, custardy pudding. This recipe is here to give you a new lease on the classic dessert. It's almost too easy, but yields utterly decadent results. The key is in the ratio of bread to custard base; this recipe calls for quite a bit of bread, but also has an adequate amount of liquid components to balance it out.

4 large eggs
4 cups whole milk
1 cup white sugar
1 cup light brown sugar
¾ cup heavy cream
4 tablespoons unsalted butter, melted and cooled
2 tablespoons vanilla extract
½ teaspoon salt
1 (16 ounce) loaf sourdough bread
14 ounces brioche
2 tablespoons white sugar
2 tablespoons light brown sugar
¾ teaspoon ground cinnamon
1 large egg
½ cup heavy cream
1 cup white sugar
½ cup unsalted butter
2 tablespoons bourbon
¼ teaspoon salt

Steps:

  • Prepare the pudding. Whisk eggs in a large mixing bowl to beat lightly. Whisk in milk, 1 cup white sugar, 1 cup brown sugar, heavy cream, butter, vanilla extract, and salt until evenly combined.
  • Tear sourdough and brioche breads into bite-sized pieces. Add both breads to the custard mixture and stir with a rubber spatula until well coated. Allow to stand at room temperature and soak for 20 to 30 minutes, stirring occasionally.
  • Meanwhile, preheat the oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish with butter.
  • After soaking, spoon bread mixture into the prepared baking dish.
  • Bake in the preheated oven for 55 minutes.
  • Meanwhile, whisk together the remaining 2 tablespoons white sugar, remaining 2 tablespoons brown sugar, and cinnamon in a small bowl.
  • Remove the pudding from the oven and sprinkle the cinnamon-sugar mixture evenly over the top. Increase oven temperature to 450 degrees F (230 degrees C).
  • Return pudding to the oven and bake until firm with a lightly crisped top, about 6 minutes. Cool at least 20 minutes before slicing.
  • While pudding cools, prepare the sauce. Beat egg in a small mixing bowl. Whisk in the heavy cream.
  • Combine sugar and butter in a medium saucepan over medium heat. Cook, stirring frequently, until butter melts and sugar dissolves. Remove saucepan from heat. While rapidly whisking the butter and sugar mixture, slowly pour in the beaten egg and cream mixture, whisking until entirely incorporated. Whisk in bourbon and return to medium heat. Cook, whisking constantly, for 1 to 2 minutes. Whisk in salt.
  • Cut the pudding into squares and serve with warm bourbon sauce.

6 dinner rolls (hamburger size rolls)
1/2 cup white sugar
4 eggs
4 teaspoons baking powder
2 teaspoons vanilla flavoring
3 cups milk
1/4 cup butter
nutmeg (optional)
raisins (optional)
cinnamon (optional)
1/2 cup melted butter
1/2 cup brown sugar
1 teaspoon cinnamon
1 cup chopped pecans or 1 cup pecan halves

Steps:

  • Heat oven to 350.
  • Cube rolls into 1 inch pieces.
  • In a saucepan, heat milk, butter, but don't allow to boil.
  • When cooled, add vanilla, beaten eggs, sugar and baking powder.
  • Blend until smooth.
  • Spray 9X13 baking dish with Pam, layer the bread cubes and pour the liquid all over, making sure the bread is well saturated.
  • Sprinkle brown sugar topping all over the bread and cover with pecans.
  • If you prefer, sprinkle top with cinnamon and raisins.
  • Bake for about 30 to 35 minutes, until top is brown and looks crusty.
  • Serve warm with cream.

I have been experimenting with bread pudding for years, since it is my husbands favorite, and I don't have to throw out the old bread. The main ingredient that makes this recipe the best is the brown sugar instead of white sugar. This is a keeper and now my search is over. Hope you enjoy it as much as we do.

1/2 c raisins (if not using raisin bread)
1/2 c water or brandy to cover
1/4 c butter or margarine melted
8-10 slice dry bread/ or challah or raisin bread
1 c brown sugar ( light or dark)
1 tsp cinnamon, ground
3 eggs
1/4 Tbsp salt
1 tsp vanilla
3 c milk scalded

Steps:

  • 1. cover raisins with water or brandy set aside melt butter or margarine break up bread and set aside combine brown sugar and cinnamon reserve 3 TBL of sugar for topping pour melted butter over bread add sugar mixture ( sugar will adhere better with butter) lightly grease 1 1/2 qt baking dish add 1/2 bread mixture drain raisins and add 1/2 to bread combine eggs, salt and vanilla beat well add milk slowly to eggs and mix add rest of bread and raisins pour milk and eggs over bread mixture let stand for 5 minutes sprinkle reserved sugar mixture on top bake at 325F for 45-50 minutes

This is an easy way to use up stale French or Italian Bread. It is delicious warm or cold. It can be varied by using peeled apples, or dried cranberries, cherries, or blueberries in addition to or instead of the raisins. It is very good plain; but, I especially enjoy it with a Lemon Sauce topping. Refer to Recipe #21838.

10 cups stale bread cubes, left out to air dry
3/4 cup raisins
4 tablespoons butter, melted
5 cups skim milk
8 eggs, slightly beaten
1 1/4 cups sugar
2 teaspoons cinnamon
2 teaspoons vanilla

Steps:

  • Preheat oven to 350 degrees.
  • Line a 9"x13" glass ovenproof pan with the stale bread cubes (You can leave them out on a tray overnight to air dry).
  • Sprinkle the raisins over the bread, pushing some between the cubles.
  • Drizzle cubes with the melted butter.
  • Using a medium size bowl, mix together the milk, eggs,sugar cinnamon, and vanilla. Pour the mixture over the cubes.
  • Press the cubes down into the mixture;and, let sit for 10 minutes to let the bread absorb some of the liquid.
  • Bake for 45 minutes at 350 degrees. Pudding will become quite puffy.
  • Sprinkle with 2 Tablespoons of sugar and return to the oven 5-10 more minutes or until center of the pudding is firm and top is brown.
  • Optional: Top with Lemon Sauce. Recipe #21838 works well.

1 loaf of cinnamon swirl bread, b.b.bakery
8 jumbo extra large organic eggs
6 c organic raw whole milk
2 c organic raw half and half or cream
2 1/2 tsp cinnamon
1 /1/2 tsp ginger
3/4 tsp nutmeg
1/2 tsp ground cloves
1 c golden raisins, soaked in brandy or hot water, drained (optional)
1 c nuts mixed, walnuts, pecans, hazelnuts, chopped into pieces. (optional)
1 vanilla bean scraped or 1 1/2 teaspoons of extract , any you like
1 cup dark chocolate chips melted for drizzling (optional)
1 1/2 c sugar
1/2 c melted butter

Steps:

  • 1. As this was baking it was hard to resist just sticking a fork in and grabbing a bite before it was finished. My house smelled so good and I wish I had some left over this morning to eat. But, my testers ate it all. Sigh! Cut the slices of bread in 1" inch pieces. Place in a buttered large roasting pan. Add the nuts, or raisins. Mix lightly. You can use currants or dried cranberries or any dried fruit or use them all. Beat the eggs with the milk and half/half or cream, sugar and vanilla bean seeds or extract. Add the spices. Add the half a cup of cooled melted butter. Beat all together.
  • 2. Pour the spiced milk butter mixture over the bread and let sit in the refrig. a couple of hours. Fold it over to lift the bottom to the top and to soak the top. Bake at 350 for 55 minutes or until done. Drizzle melted chocolate over the top.
  • 3. Serve with a Hot Brandy, Rum or Vanilla sauce made of powdered sugar, butter, cream, rum or brandy or any extract you like. Or make a homemade hot thin pudding as I did. Or serve with a hot Chocolate sauce. Serve HOT with the a sauce of your choice. If the top looks like it is getting too brown cover with tin foil and finish baking.

2.75 cups sugar
0.25 teaspoons vanilla
20.5 slices white bread
0.5 teaspoons cinnamon powder
1 teaspoons sugar
2 tablespoons raisins

Steps:

  • Mix well: half-and-half, whipping cream, eggs, sugar and vanilla.
  • Arrange bread on bottom of pan*. Pour mixture over bread. Mix cinnamon with sugar and sprinkle over bread. Spread raisins over top.
  • Cover with foil and bake in water bath at 400 degrees F for 75-90 minutes.
