ASPARAGUS ROLL-UPS
These roll-ups are simply divine. A friend shared the recipe after serving them at a church brunch, where they disappeared fast. They make a unique finger food, a side dish at supper or a lovely lunch served with soup.

- In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry. Set aside., Flatten bread with a rolling pin. Combine the cream cheese, bacon and chives; spread 1 tablespoonful on each slice of bread. Top with an asparagus spear. Roll up tightly; place seam side down on a greased baking sheet. Brush with butter and sprinkle with Parmesan cheese. , Cut roll-ups in half. Bake at 400° for 10-12 minutes or until lightly browned.

- Rinse the asparagus under cool running water.
- Place in steaming basket.
- Cook until tender.
- Shock under cold water to stop the cooking process.
- Roll in paper towels to dry.
- Have cream cheese at room temperature for easier spreading.
- Pat ham slices dry with paper towel.
- Spread each ham slice with a thin layer of cream cheese.
- Place one piece of asparagus on the edge of the ham slice.
- Roll up tightly, sealing the end closed with cream cheese.
- Serve cold or at room temperature, whichever you prefer.

- Preheat the oven to 450 degrees F. Line a baking sheet with a wire rack.
- Put the asparagus, olive oil, 1/2 teaspoon kosher salt and 1/4 teaspoon pepper in a medium bowl. Toss to coat evenly. Spread the asparagus in a single layer on the prepared baking sheet. Roast for 10 to 12 minutes, until lightly browned and tender, but still bright green.
- Meanwhile, spread the Parmesan evenly in the bottom of a medium nonstick skillet over medium heat. Cook undisturbed until the cheese melts, sticks together and turns golden brown, about 2 minutes, then flip with a rubber spatula and cook until golden on the second side, about 2 minutes more. Transfer the frico to a wire rack-lined baking sheet to cool completely, about 2 minutes. Break the frico into small crumbles and put in a small bowl. Add the lemon zest and 1/2 teaspoon black pepper and toss to combine.
- Transfer the roasted asparagus to a serving platter and squeeze the fresh lemon juice over the top. Top with the crumbled frico mixture.

- Heat oven to 350°F.
- Flatten ham slices; pat dry. Stack in piles of 2 slices each; spread each stack with 1 tsp. reduced-fat cream cheese.
- Place 1 aparagus spear on 1 long side of each ham stack; roll up. Place, seam-sides down, in 13x9-inch baking dish.
- Bake 15 to 20 min. or until heated through.

CHICKEN ASPARAGUS HAM ROLL
Someone e-mailed me this recipe. I've altered it very slightly. My husband and I both love it and we even got our 10 year old son to eat some, too....It looks like a lot of work, but it's really not. It's fairly simple to make.

- Snap off about one inch of the blunt ends of the asparagus.
- Add salt and asparagus to boiling water and blanch until the asparagus is slightly greener but is still crisp- about 2 minutes.
- Drain Asparagus, cool asparagus with cold water and drain asparagus again.
- De-bone Chicken breasts and leave the skin on.
- Place individual chicken breasts (skin side down) between plastic wrap and flatten.
- I pounded my chicken with a cast iron skillet-- this did the trick.
- Flatten chicken to about a 1/4 inch.
- Loosen skin from chicken and put 1/4 of the taragon between the skin and meat.
- Turn chicken over and place two pieces of ham over the meat.
- Put 4 asparagus spears on top of the ham on one side of the chicken and roll chicken into a roll (around the asparagus).
- The skin of the chicken should be on the outside of the roll.
- Secure the roll with toothpicks.
- Place in a lasagna pan seam side down.
- Brush with the melted butter and sprinkle with salt.
- Pour in the chicken stock and the wine.
- Do not cover the chicken- place in the oven and cook at 375 degrees for approximately 30 minutes or until chicken is no longer pink in the center.
- Once cooked, broil for an additional 3 or 4 minutes until the skin is brown and crisp.
- Move the chicken to another dish and set aside in a warm spot.
- Pour juices from baking dish into a measuring cup and skim off the fat.
- If you need to, add more chicken broth to make 3/4 of a cup.
- Pour into a small saucepan.
- Bring to a boil.
- Meanwhile, (in a heatproof bowl) combine lemon juice, corn starch, egg yolks, and pepper- wisk.
- Slowly wisk in boiling juices.
- Return mixture to saucepan, cook over medium heat, stirring constantly without boiling.
- Cook until thick enough to cover a spoon- around 3 or so minutes.
- Serve sauce with chicken.

- Fill 13x9-inch (3-quart) glass baking dish half full with water and ice; set aside.
- In 12-inch skillet, heat 1 inch water to boiling over high heat. Snap or cut off tough ends of asparagus spears. Add asparagus to boiling water; cook uncovered 2 to 3 minutes or until crisp-tender. Remove asparagus from skillet; place in baking dish with ice water. Let stand 3 to 5 minutes or until chilled. Drain; pat dry with paper towels. Set aside.
