4 tablespoons canola oil, divided
2 tablespoons lemon juice
1-1/2 teaspoons seasoned salt
1-1/2 teaspoons dried oregano
1-1/2 teaspoons ground cumin
1 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon crushed red pepper flakes, optional
1-1/2 pounds boneless skinless chicken breasts, cut into thin strips
1/2 medium sweet red pepper, julienned
1/2 medium green pepper, julienned
4 green onions, thinly sliced
1/2 cup chopped onion
6 flour tortillas (8 inches), warmed
Optional: Shredded cheddar cheese, taco sauce, salsa, guacamole, sliced red onions and sour cream

Steps:

  • In a large bowl, combine 2 tablespoons oil, lemon juice and seasonings; add the chicken. Turn to coat; cover. Refrigerate for 1-4 hours. , In a large cast-iron or other heavy skillet, saute peppers and onions in remaining oil until crisp-tender. Remove and keep warm. , Drain chicken, discarding marinade. In the same skillet, cook chicken over medium-high heat until no longer pink, 5-6 minutes. Return pepper mixture to pan; heat through. , Spoon filling down the center of tortillas; fold in half. Serve with toppings as desired.

The ingredient that makes this marinade both spicy and sweet is adobo sauce from canned chiles in adobo, a useful sauce that I had not thought to use in marinades until I was introduced to the idea by the cookbook author and television host Pati Jinich. The sauce has enough heat, so I don't use the canned chipotles, though you could add one if you wanted. I hold back a couple of tablespoons of the marinade and use it to finish the vegetables and deglaze the pan.

Finely grated zest of 1 lime (about 2 teaspoons)
1/4 cup fresh lime juice
Salt and black pepper
2 teaspoons cumin seeds, lightly toasted and ground
2 tablespoons adobo sauce from canned chipotles in adobo
1 chipotle chile in adobo, seeded and minced (optional)
1/4 cup plus 2 tablespoons extra-virgin olive oil
4 large garlic cloves, minced or put through a press
1 1/2 pounds boneless, skinless chicken breast
1 large red or yellow onion, halved and sliced
2 red bell peppers (or 1 red and 1 orange or yellow), seeded and sliced about 1/4 inch thick
1 green bell pepper, seeded and sliced about 1/4 inch thick
1 jalapeño or 2 serrano chiles, minced
1/4 cup chopped cilantro
4 large flour or 8 corn tortillas
1 tablespoon grapeseed or canola oil (or use olive oil)
1 romaine heart, sliced crosswise
Salsa fresca, for serving (see recipe)
Queso fresco, for sprinkling

Steps:

  • In a small bowl, combine lime zest and juice, 1/2 teaspoon salt, 1 teaspoon ground cumin, the adobo sauce and optional minced chipotle, 1/4 cup olive oil and half the garlic. Mix well. Set aside 2 tablespoons of the marinade.
  • Season chicken with salt and pepper and place in a resealable bag. Pour in the marinade and seal bag. Move chicken around to coat well, place bag in a bowl and refrigerate for 30 minutes (or up to 12 hours). Flip the bag over from time to time to redistribute marinade.
  • Heat a large, heavy skillet over medium-high heat and add 2 tablespoons olive oil. When oil is hot, add onions and cook, stirring, until they soften and begin to color, 3 to 4 minutes. Stir in bell peppers and chile and cook, stirring, until peppers begin to soften, 3 to 4 minutes.
  • Turn heat to medium, add remaining garlic and cumin and salt to taste, and cook, stirring often, until peppers are nicely seared, softened and beginning to caramelize, 5 to 8 minutes.
  • Pour in reserved 2 tablespoons marinade and scrape bottom of pan with a wooden spoon to deglaze. Add half the cilantro, and stir together. Taste and adjust seasoning. Remove from heat but keep warm.
  • Wrap tortillas in foil and warm in a low oven, or wrap in a towel and warm in a steamer or in the microwave.
  • Heat grapeseed or canola oil over medium-high heat in a large, heavy skillet. Remove chicken breasts from marinade, reserving marinade, and pat dry with paper towels. Add to pan, rounded side down, and sear for 3 to 4 minutes, until lightly charred. Flip breasts over, pour in marinade, cover pan and reduce heat to medium. Cook 12 to 15 minutes, flipping over from time to time, until a thermometer registers 160 to 165 degrees when inserted into thickest part. Transfer to a cutting board and cover with foil. Let sit 5 to 10 minutes, then cut across the grain into 1/2- to 3/4-inch thick strips.
  • Arrange lettuce on a platter, then place chicken next to lettuce. Tip juices from cutting board over chicken and sprinkle with cilantro. Serve vegetables on the same platter or separately. Serve with warm tortillas, salsa and crumbled queso fresco.

2 red bell peppers, sliced
1 large onion, sliced
2 pounds skinless, boneless chicken breasts, cut into thin strips
1 (1 ounce) package fajita seasoning mix, divided
2 tablespoons vegetable oil, divided
8 (6 inch) flour tortillas
½ cup sour cream, or to taste
½ cup salsa, or to taste
½ cup chopped fresh cilantro, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch glass baking dish with cooking spray.
  • Spread red bell peppers and onion in the baking dish.
  • Coat chicken strips with a few pinches of the fajita seasoning mix. Heat 2 teaspoons vegetable oil in a skillet over medium heat; cook and stir seasoned chicken until browned, about 2 minutes per side.
  • Place chicken in the baking dish with bell peppers and onion; top with remaining fajita seasoning mix and vegetable oil. Stir until chicken and vegetables are evenly coated.
  • Bake in the preheated oven, stirring halfway through baking, until chicken is no longer pink in the center, about 30 minutes.
  • Spoon chicken mixture into each tortilla and top with sour cream, salsa, and cilantro.

I am a big-time fajita lover and these really are the best! They come from Rachel Ray's cookbook (which I highly reccomend - 30 min. meals). If you dont like spicy, dont be alarmed, just lower the hot sauce and leave out the jalepeno - you dont want to miss this recipe!

2 tablespoons hot sauce
2 tablespoons ground cumin
1 teaspoon allspice
2 tablespoons chili powder
fresh oregano
thyme, combined (or a couple shakes of dried)
0.5 (12 ounce) bottle beer
1 tablespoon olive oil
1/2 lb steak or 4 boneless chicken breasts
olive oil
1 large onion, cut in 1/2 inch strips
1 green bell pepper, seeded & cut in 1/2 inch strips
2 poblano chiles, cut into strips (optional)
salt & pepper
finely chopped tomatoes
serrano peppers or jalapeno chile, chopped fine
minced onion
cilantro
mint (optional)
salt

Steps:

  • Mix marinade and set aside.
  • Coat meat or poultry and let sit.
  • Mix together pico de gallo in small bowl and set aside.
  • In saucepan, drizzle with olive oil over med-high heat.
  • Add onions, peppers and chiles- toss occasionally and turn off heat once tender.
  • In second skillet over high heat, drop meat or poultry in and sear for 2 mins each side.
  • Remove from heat, slice thin and return to pan to brown and cook through.
  • Warm tortillas according to package, fill with meat, poultry, peppers and pico de gallo- MMMM!

¼ cup olive oil
1 lime, juiced
3 tablespoons chopped fresh cilantro
2 tablespoons finely chopped onion
3 cloves garlic, finely chopped
1 ½ teaspoons ground cumin
1 teaspoon salt

2 (8 ounce) boneless New York strip steaks, cut into thin strips
8 (6 inch) white corn tortillas, or more as needed

Steps:

  • Whisk olive oil, lime juice, cilantro, onion, garlic, cumin, salt, and black pepper in a bowl, and pour into a resealable plastic bag. Add steak strips, coat with the marinade, squeeze out excess air, and seal bag. Marinate in the refrigerator for 4 hours to overnight.
