BEST BROCCOLI RICE CASSEROLE

Steps:
- Preheat the oven to 350 F degrees.
- In a large skillet, melt the butter. Add the onion and garlic and cook, stirring with a wooden spoon, until softened, 3 to 4 minutes. Sprinkle over the flour, dry mustard and cayenne and stir to mix it in well. Continue to cook for 1 minute.
- Next, add the milk, stirring constantly; cook until thickened, about 2 minutes. Add the cream cheese and Parmesan, stirring until totally combined. Stir in the pepper, salt and paprika. Add the processed cheese, stirring until completely melted. Next, add 1 1/2 cups of the Cheddar and stir until melted. Then, fold in the broccoli and pimentos.
- In a large baking dish, create a base with half of the rice. Top with half of the broccoli cheese sauce. Repeat with the remaining rice, then the remaining sauce. Sprinkle the rest of the Cheddar evenly over the top of the casserole. Bake until bubbly, about 30 minutes.
WILD RICE BROCCOLI CASSEROLE - BEST OF BRIDGE

- Cook the rice as directed - it's fine if the rice is tender and there's still extra moisture left.
- Prepare the broccoli and in a medium bowl mix together 1 1/2 c. of the cheese with the soup.
- Grease a 4 L casserole and spread half of the rice evenly on the bottom followed by half of the broccoli and then half of the soup mixture. Repeat the layers and top with the remaining 1/2 c. of cheese.
- Bake at 350 for about an hour.
MY OWN BEST CHEESY BROCCOLI RICE CASSEROLE

- 1. In large bowl, combine soups and Velveeta. Microwave til melted and creamy. About 5 minutes, stirring occasionally. Stir in broccoli and rice. Pour into greased 13x9-inch pan or glass baking dish. Stir cracker crumbs into melted butter and sprinkle evenly over top. Lightly sprinkle top evenly with a little parsley and paprika. Cover and bake at 350ºF for 30 minutes. Uncover and bake 10-15 minutes longer. Or til casserole is bubbly and crumbs are golden. Enjoy! :D

This broccoli rice casserole is one of my husbands favorites. It has to be made every holiday. It's creamy and not too cheesy. Hope you guys like it.

- Preheat oven to 375.
- Lightly saute the onion and celery in the margarine.
- Add the soups and the cheese whiz. Mix well.
- drain the cooked broccoli well, then add to the above mixture.
- Lastly add you cooked rice ( the 1 2/3 cup rice is measurement of uncooked rice) and stir lightly.
- Spread into a greased 13X9 pan. Bake uncovered at 375 for about 45 minutes or until lightly browned.

BEST BROCCOLI RICE CASSEROLE
I saw this because it was an adopted recipe. I made it the other day and it was yummy! If you want you can use Cream of Chicken soup instead of Cream of Mushroom. My husband doesn't like mushrooms even if it's just tiny itty bitty bits!

- 1. Bring water and salt to a boil.
- 2. Add rice; cover and remove from heat.
- 3. Let sit for 5 minutes.
- 4. Melt butter in skillet; saute\' onion and celery until tender.
- 5. In large mixing bowl, combine rice, celery and onion with remaining ingredients.
- 6. Pour into a greased 1 1/2 quart casserole.
- 7. Bake at 350 degrees for 1 hour.
