THE BEST BAKED BEANS
If you think baked beans only come from a can, you're in for a treat. Bacon, molasses and bourbon add depth and flavor to our classic recipe that's perfectly spiced with paprika, mustard and Worcestershire. A bit of brown sugar adds just the right amount of sweetness and to keep things easy, the beans require no soaking! They get tender and delicious right in the oven.

Steps:
- Preheat the oven to 300 degrees F. Cook the bacon in a large Dutch oven over medium-high heat until browned and crisp, about 8 minutes. Add the onion and garlic and cook until softened, 4 to 5 minutes. Add the paprika and toast, stirring, about 30 seconds. Add the tomato sauce, molasses, bourbon, brown sugar, Worcestershire sauce, mustard, 2 teaspoons salt and 1/2 teaspoon pepper. Bring to a simmer and cook 5 minutes.
- Add the beans and 8 cups water. Bring to a boil, then cover the pot and transfer to the oven. Bake until the beans are tender, about 3 hours. (If the beans are still slightly firm, continue cooking, stirring every 45 minutes and adding more water if necessary to just cover.)
- Once the beans are tender, uncover and increase the oven temperature to 325 degrees F. Bake until the beans are thick and browned, about 1 more hour. (Again, if the beans need more time, continue cooking, stirring occasionally and adding more water if necessary.) Remove from the oven and thin with water if necessary.

BEST IN THE WEST BAKED BEANS
I think I clipped this recipe out of the newspaper years ago. It is always a huge hit at picnics, barbecues and get togethers. It's a nice change from the more traditional baked beans. I can't even begin to guess how many times I have handed out the recipe.

Steps:
- Brown beef, bacon and onion in large skillet. Drain.
- Combine all ingredients except beans, mix well.
- Add beans and stir gently.
- Bake one hour in a 325 to 350 oven (or until hot a bubbly).
- This recipe can easily be cut in half since it makes a rather large batch. I only use half the bacon. If you would like, you could add some more beef if cutting back on the bacon.
THE BEST SWEET & SOUR BAKED BEANS
This is my absolute favorite baked beans recipe - I didn't like them until I tasted this. It is my aunt's - a family favorite! When I can't find limas in a can, I use a frozen package. We also make this vegetarian by omitting the bacon.

THE BEST BOSTON BAKED BEANS
This is a great recipe I found for baked beans. It was originally posted from The Sacramento Bee, 1998. This recipe is used by the Durgin-Park Restaurant in Boston, MA. This restaurant dates back to the American Revolution and is famous for its Boston baked beans. The Durgin-Park cook, Tommy Ryan, has prepared this recipe at the restaurant for the past 37 years. The restaurant serves 1,000 diners on an average Saturday evening. A recipe that has been around this long - and has served many people - can't be wrong.

Steps:
- Use California pea beans, York State beans or small white navy beans.
- Soak beans overnight. Ensure water covers the beans by 4 - 5 inches. The beans will soak up the water.
- In the morning, preheat oven to 325°F
- Place the baking soda in a large pot and fill half way with water. Bring to a boil and add the beans. Boil for 10 minutes. Drain beans in a colander and run cold water through them. Set aside.
- Cut the bacon into 1 inch lengths. Put half of the bacon on the bottom of a 2 1/2 quart casserole dish (needs lid). Add the onion. Put beans in the casserole. Put the remaining bacon on top of the beans.
- Mix the sugar, molasses, mustard, salt and pepper with 3 cups of hot water and pour over the beans. Cover the casserole with the lid and place in preheated oven.
- Bake for 6 hours. Check the casserole periodically to check the amount of liquid. Add water to the beans slowly as needed to keep them moist; do not flood them.
- Remove the casserole from the oven and serve.

BETTER THAN BEST BAKED BEANS!
I got this recipe from a PACE Salsa summer pocket cookbook many years ago. It is a simple method to dress up canned baked beans. I have adjusted the ingredients/measurements for our personal tastes and I freepour everything, but had to provide measurements. Use the measurements as a guide only. I am always asked for the recipe or to bring them to BBQs and potlucks. They are quick, easy and without the hassle of making beans from scratch. The cumin and salsa gives them the kick and unique taste that have people coming back for more. I also make a big batch to ensure leftovers and put in the freezer. If you go camping, the frozen baked beans in ziploc bags make excellent icepacks! Enjoy! Edited to add: I make this in a 6 qt crockpot and the recipe as posted below fits perfectly.

Steps:
- Fry bacon in frying pan.
- I cut into bite sized pieces with scissors before frying.
- As bacon fries, chop onions.
- When bacon is finished, remove from pan, drain and wrap in paper towels to absorb grease.
- Saute onions in bacon fat til translucent.
- Pour into strainer, but not necessary to rinse or pat with paper towel.
- For me, straining is enough.
- Pour canned beans into 6 Qt Crockpot.
- Stir in bacon, onions, ketchup, Salsa, Brown Sugar and cumin, mixing very well.
- Stir often.
- Cook on high for 3 hours, then switch to low for another two hours, well ahead of serving as it tastes even better the longer you allow the flavors to blend together.
- If I'm making them for a party, I make them early morning for that night or even the night before, cooking overnight in the crockpot.
- They will stay hot for a long time and you can just turn the crockpot back on a couple hours before serving.
- I taste them often as they're cooking and add more salsa and/or cumin to taste.
- We like to taste the cumin, but if you don't that's ok.
- Recipe is easily halved or doubled.
- I never measure anything- I add all ingredients for our taste preferences.
- Freezes VERY well and you can reheat in microwave or in crockpot once thawed.
- Leftovers are great the next day!
KERI'S BAKED BEANS (THE WORLD'S BEST!)
I was trying to find a good baked bean recipe to bring over to a friends house for a party. I love barbecue, and I frequent a website called The Smoke Ring. Don't let the apple pie filling scare you... A big thank you goes to Keri for developing this recipe. Enjoy

- Mix all ingredients into a large baking dish and bake at 325º for 1 hour, or simmer on stove top in large pot for 30 minutes if you don't have time to do them in the oven.
- This is a rather spicy recipe due to the chipotle/cayenne powder. Feel free to leave it out if you'll be feeding those who prefer a less spicy taste.

These beans are truly the most fantastic baked beans we have ever had. I can't even begin to describe them. I even had them for lunch as a main dish. We used leftover smoked pulled pork, but you can substitute 1/2 pound crumbled cooked sausage if you don't have any on hand.

- • 1 to 2 tablespoons butter (for sauteing onions).
- • 3/4 cup ketchup.
- • 1/2 cup molasses.

- Preheat oven to 325* F. degrees f. Spray a 9x13 baking dish with non-stick cooking spray.
- Saute onions over medium to medium-high heat in butter until onions are tender and translucent.
- Mix beans, sauteed onions, ketchup, mustard, molasses and brown sugar until blended well. Pour in prepared baking dish. Top with uncooked bacon in single layer (see photo above). Bake on middle rack of oven uncovered for 2-3 hours. Beans are ready when the top is dark and caramelized. Serve warm. Enjoy!
- TIP - Make in Slow Cooker.
- These can also be thrown together and cooked in the slow cooker set on low for 6 to 8 hours as well. It won't get that nice caramelize top, but it will still be delicious if you're in a pinch for time. Be sure to saute the onions first.
