1 teaspoon salt, or to taste
1 teaspoon ground allspice
1 teaspoon packed brown sugar
1 teaspoon onion powder
½ teaspoon dried minced garlic
½ teaspoon ground nutmeg
½ teaspoon black pepper
½ teaspoon ground ginger
¼ teaspoon cayenne pepper
¼ teaspoon ground cinnamon
¼ teaspoon dried thyme leaves
1 (2 to 3 pound) whole chicken, cut into pieces
¼ cup vegetable oil

Steps:

  • Make the jerk rub by combining the salt, allspice, brown sugar, onion powder, garlic, nutmeg, pepper, ginger, cayenne pepper, cinnamon, and thyme. Toss the chicken pieces with the spice mixture, then cover, and marinate in the refrigerator 2 to 4 hours.
  • Preheat oven to 350 degrees F (175 degrees C). Pour the vegetable oil into a 9x13 inch baking dish.
  • Place the chicken pieces skin-side up into the baking dish. Bake in the preheated oven for 1 hour 20 minutes, until no longer pink near the bone. Turn the oven on to broil, and cook until the skin crisps, 2 to 5 minutes.

This Easy Jerk Chicken recipe is so flavorful! Succulent grilled chicken, seasoned with the best homemade jerk marinade - so good!

2 green onions (roughly chopped)
1/2 onion (roughly chopped)
2 Scotch bonnet or habanero peppers*
1 small knob fresh ginger (peeled)
3 garlic cloves
1 teaspoon dried thyme
1/2 tablespoon ground allspice
2 tablespoons brown sugar
1/2 teaspoon salt
1/2 teaspoon ground pepper
1/4 cup soy sauce
2 tablespoons olive oil
1 tablespoon apple cider vinegar (or any vinegar)
Juice of 1 lime
2 pounds chicken breasts or thighs
2 cups diced pineapple (fresh is best but any will do)
1 jalapeno (diced)
1/4 red onion (finely diced)
juice from one lime
2 tablespoons cilantro (chopped)
pinch salt

Steps:

  • Place all the ingredients, except the chicken, in a food processor or blender. Pulse/blend until the mixture is mostly smooth. Place the chicken in a large plastic bag or bowl and pour in the marinade. Toss chicken in the marinade until well-coated. Cover the bowl or seal the bag. Place in the refrigerator to marinate at least 1 hour or up to overnight, which will bring out the best flavor.
  • Heat the grill to medium-high heat. Grill the chicken for 10-15 minutes total, flipping halfway through.
  • Stir together all ingredients for the pineapple salsa. Keep in the fridge until ready to serve. Spoon over chicken and enjoy.

1/2 of 1 nutmeg
1 cinnamon stick
1 tablespoon coriander seeds
1 teaspoon cloves, whole
6 pimento seeds (allspice)
1 teaspoon black peppercorns
1 bunch scallions, chopped
1 large onion, roughly chop
2 to 3 Scotch Bonnet peppers
10 sprigs thyme, leaves picked
10 garlic cloves
1/2 cup fresh lime juice or white vinegar
1 cup soy sauce
1/2 cup raw sugar
1 whole chicken, cut into 8 pieces

Steps:

  • Preheat the oven to 350 degrees. Score chicken and season with salt. Spoon desired amount of jerk marinade over chicken and rub into scores. Marinade refrigerated for 2 hours to overnight. Bake for 35 minutes in the oven. Remove from the oven and finish on the grill.;

1/4 cup dark brown sugar
2 tablespoons soy sauce
1 tablespoon fresh thyme leaves
1 teaspoon freshly grated nutmeg
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
6 scallions, roughly chopped
3 cloves garlic
1 habanero or scotch bonnet chile, seeded
Kosher salt
Vegetable oil, for drizzling and oiling the pan
8 pieces mixed chicken thighs and breasts, boneless and skin on
8 pieces mixed chicken thighs and breasts, boneless and skin on
Mango Chutney, recipe follows
Fresh cilantro leaves, for serving
1/3 cup dark raisins
1/3 cup dark brown sugar
2 tablespoons grated ginger
2 cloves garlic, grated
2 mangos, cut into small dice
1 jalapeno, minced
Kosher salt
1/3 cup white wine vinegar
1 teaspoon turmeric

Steps:

  • Combine the sugar, soy sauce, thyme, nutmeg, allspice, cinnamon, scallions, garlic, habanero and a pinch of salt together in a food processor and blend for a couple of minutes, scraping up any pieces that cling to the walls to make sure everything is blended evenly.
  • Drizzle veggie oil on the chicken and work the spice rub into the chicken, making sure to put the mixture under the skin as well. Cover and let the chicken marinate in the refrigerator for at least 3 hours or up to overnight.
  • Oil and preheat a grill pan over medium heat. Grill the chicken skin-side down, flipping halfway through, 5 to 8 minutes per side. Serve with the Mango Chutney and cilantro.
  • Mix together the raisins, sugar, ginger, garlic, mangos, jalapenos and salt to taste in a medium bowl. Cover and refrigerate for at least 30 minutes or up to overnight.
  • Combine the mango mixture with the vinegar and turmeric in a small saucepan and bring to a simmer. Cook, stirring occasionally to prevent the chutney from sticking to the pan, until thickened and thoroughly combined, about 20 minutes.

Spicy Caribbean-style jerk chicken cooked slowly on a warm grill reminds me of my trips to the islands as a sailor. Good main. A little time consuming putting the marinade together but well worth it. Don't worry if you don't have all the ingredients, use what you have. You can double the dry ingredients and save for your next dinner party.

2 tablespoons garlic powder
1 tablespoon white sugar

¾ teaspoon ground nutmeg
¾ teaspoon ground cinnamon
¾ cup white vinegar
½ cup fresh orange juice

¼ cup olive oil
1 lime, juiced
1 cup finely chopped white onion
3 each green onions, diced
1 Scotch bonnet chile pepper, chopped
4 each skinless, boneless chicken breasts, trimmed

Steps:

  • Combine salt, garlic powder, sugar, allspice, thyme, cayenne, black pepper, sage, nutmeg, and cinnamon in a large bowl. While beating with a wire whisk, slowly add vinegar, orange juice, soy sauce, olive oil, and lime juice. Add onion, green onions, and chile pepper and mix well. Add chicken breasts, cover, and marinate for at least 1 hour, up to overnight.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Remove the chicken from the marinade; reserve.
  • Cook chicken on the preheated grill, basting with the reserved marinade frequently, until no longer pink in the center and juices run clear, 6 to 8 minutes per side, depending on the thickness of the chicken. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
