2 tablespoons butter
3 tablespoons honey
4 large eggs
1/2 cup whole milk ricotta
3 tablespoons sugar
1 cup whole milk
1/4 cup orange juice
4 slices of bread, torn into 1-inch pieces (about 4 cups)
1 (10-ounce) bag frozen mixed berries, thawed and drained

Steps:

  • Melt the butter in a small saucepan over low heat. Turn off the heat, add the honey, and stir to combine.
  • Meanwhile, in a large bowl combine the eggs, ricotta, and sugar. Using a fork, mix to combine and beat the eggs. Add the milk, orange juice, butter and honey mixture, and bread. Stir to combine. Gently fold in the berries.
  • Place the ingredients in a 10-inch round (2-quart) baking dish. Cover with plastic wrap and place in the refrigerator for at least 2 hours and up to 12 hours.
  • Preheat the oven to 350 degrees F. Bake the strata until golden on top and baked through, about 40 minutes. Let stand for 5 minutes before serving. Spoon into dishes and serve.

I was watching Giada today on the food network and she whipped this up. It looked very good and pretty easy. On the episode she used only ricotta cheese and mixed berries and she warmed up the honey with 2 tbsp of butter. As I don't care for cooked strawberries I have changed the recipe to refect that. You can also use any bread that suits your fancy just make sure it is day old or at least a bit on the dry side.

4 ounces cream cheese, room temperature (about 1/2 cup)
4 ounces ricotta cheese, room temperature (about 1/2 cup)
8 eggs
2 cups milk
1 cup frozen mixed berries, thawed and drained (about 10 ounces)
1/2 cup honey, warmed
1 teaspoon ground cinnamon
1 loaf ciabatta, loaf crust removed and cut into 1-inch cubes

Steps:

  • Place the cheeses in a large bowl and stir together with a wooden spoon. Add the eggs, 1 at a time, mixing until completely incorporated before adding the next. Stir in the milk, strawberries, honey, cinnamon, and bread. Pour into an 8 by 10 by 2-inch casserole dish. If freezing, cover with plastic wrap and place in the freezer for 1 day and up to 1 month.
  • To bake, preheat the oven to 350 degrees F. Bake covered with foil for 45 minutes. Increase the oven temperature to 400 degrees F. Remove the foil and continue baking for 30 to 35 minutes.

I wanted a simple way to use strawberries and blueberries in a breakfast recipe, so I created this strata. It's not an overly sweet recipe so I like to sprinkle it with sugar and serve it with sweetened whipped cream.-Diane Denny, Jacksonville, Florida

1 prepared angel food cake (10 to 12 ounces), cut into 1-inch cubes
1 package (8 ounces) cream cheese, softened
1 tablespoon sugar
1 teaspoon salt
1 teaspoon ground cinnamon
12 large eggs
1 cup half-and-half cream
2 cups fresh strawberries, chopped
2 cups fresh blueberries
Coarse sugar
Sweetened whipped cream, optional

Steps:

  • Place cake cubes in a greased 13x9-in. baking dish. In a large bowl, beat cream cheese, sugar, salt and cinnamon until blended. Gradually beat in eggs, beginning with one at a time. Stir in cream. Fold in berries. Pour over cake cubes. Refrigerate, covered, overnight., Preheat oven to 350°. Remove strata from refrigerator while oven heats; sprinkle with coarse sugar., Bake, uncovered, 45-50 minutes or until a knife inserted in the center comes out clean. Cover loosely with foil if top browns too quickly. Let stand 10 minutes before cutting. If desired, serve with whipped cream.
