This is a wonderful way to take advantage of sweet, fresh seasonal berries. It is actually pretty quick, too. You can throw it together and pop it in the oven while having dinner. By the time you're finished your meal, dessert will be served.

1/2 cup all-purpose flour
2 tablespoons all-purpose flour
2 tablespoons granulated sugar
1 tablespoon fresh lemon juice
1/2 teaspoon grated nutmeg
2 cups blueberries
2 cups raspberries
1 cup quick-cooking oatmeal
1/3 cup dark brown sugar (packed)
1/2 cup unsalted butter, cold, cut into 1/2-inch pieces
whipped cream, for serving

Steps:

  • Heat oven to 375 degrees. Butter 8-inch round cake pan or pie plate.
  • Mix 2 T. flour, the granulated sugar, lemon juice, and 1/4 t. nutmeg in mixing bowl. Add berries and toss gently to combine. Transfer to buttered pan.
  • Place remaining 1/2 cup flour, the oatmeal, brown sugar, and remaining 1/4 t. nutmeg in food processor; process to blend. With machine running, add butter a few pieces at a time. Spoon mixture over berries.
  • Bake until top is golden, about 30 minutes. Let cool slightly. Serve warm with whipped cream.

Apples and berries are baked with a crunchy oat crust on the top and bottom. Serve with vanilla ice cream for an unbeatable dessert.

1/2 cup brown sugar
1/2 cup white sugar
1 cup quick-cooking oats
1 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup butter, MELTED
2 cups apples, chopped
1 cup blackberry
1 teaspoon lemon juice
1/2 teaspoon vanilla
1/2 cup white sugar
2 teaspoons ground cinnamon
2 tablespoons butter, each tablespoon cut into quarters

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Lightly grease a 7x11-inch glass baking dish with cooking spray.
  • For the filling - In a large Ziploc bag put in cut up apples, lemon juice, vanilla, mix white sugar and cinnamon together then add to bag - agitated gently to mix all ingredients.
  • For the crisp - In a large bowl, combine brown & white sugar, oats, flour, salt, baking soda. Pour in the melted butter. Mix until crumbly.
  • Place half of crumb mixture in pan, lightly press into pan.
  • Spread the apples cinnamon filling evenly over crumb mixture.
  • Spread the blackberries evenly on top of the apples.
  • Sprinkle with remaining crumb mixture on top of the fruit.
  • Place butter quarters evenly spaced on top of crumb mixture.
  • Bake in the preheated oven for 40 to 45 minutes, or until golden brown.
  • Let cool, serve with vanilla ice cream for an unbeatable combination.
  • Lastly - Add other fruit as the mood strikes - berries (black, Marion, Boysen, rasp), pears (skinned), peaches (skinned) or mix and match. Fruit total volume should be 3 to 3½ cups.

What is special is the topping which is oatmeal, oat flour, and flaxmeal with spices and nuts or seeds. This dish serves as a dessert in the evenings, a snack in the afternoon or a sweet and filling...

4-5 c blackberries, strawberries, blueberries, raspberries
2-4 Tbsp raw sugar
1/2 c rolled oats
1/2 c brown sugar
1/4 c flaxmeal or oat bran meal
1/4 tsp ginger, nutmeg, or cinnamon
1/4 c butter
1/4 c nuts or sunflower seeds
vanilla ice cream or low fat frozen yogurt (optional)

Steps:

  • 1. For filling: Thaw fruit if frozen. Do not drain. Choose the kind of berries desired or mix them. Place fruit in an 8 x 1 1/2 inch round baking dish. Stir in sugar.
  • 2. For topping: in a mixing bowl combine oats, brown sugar, flaxmeal or oatbran flour, and the spice of choice. Cut in butter until mixture resembles coarse crumbs. Stir in nuts and/or seeds. Sprinkle topping over filling.
  • 3. Bake in 375 degree oven for 30-35 minutes (40 minutes for thawed fruit)or until fruit is tender and topping is golden. Serve warm with ice cream or low fat frozen yogurt if desired. Serves 4-8
