My family loves morning casseroles. I love them because all the work is done the night before. This really comes in handy on those mornings when you have overnight company and want something really yummy, but don't especially want to make the large mess in the kitchen.

8 eggs, beaten
1 lb sausage, browned and drained
2 cups grated cheddar cheese or 2 cups cheese, of choice
1 can mushroom stems and pieces
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 cup milk
3 slices whole wheat bread, cubed
1 can cream of mushroom soup
salt and pepper

Steps:

  • The night before: Mix all ingredients as and place in a 13x9x2 inch casserole dish that has been sprayed with oil.
  • Place in refrigerator.
  • Morning: Remove dish from refrigerator.
  • Preheat oven to 350 F.
  • Cook for 1 hour or until lightly browned.

HOBO CASSEROLE (OAMC)

One of our best and most inexpensive concoctions yet. Makes a great one dish meal. Just add a salad and you're ready to go. Makes 4 casseroles, and the extras can be frozen for later cooking.

Number Of Ingredients 10

10 lbs potatoes, cut into 1 inch cubes
3 lbs ground beef
6 -8 medium carrots, diced
1 (10 ounce) bottle Worcestershire sauce (approx. 1 1/4 cups)
1 large onion, chopped
1 head garlic, peeled and chopped fine
3 (26 ounce) cans undiluted cream of mushroom soup
4 cups milk
salt, to taste (I use approximately 1 tablespoon)
pepper, to taste (I use approximately 1 teaspoon)

Steps:

  • Preheat oven to 400°F.
  • Spray 4 9x13-inch baking pans with non-stick cooking spray (such as Pam); set aside.
  • Combine ground beef, onion, and garlic in large skillet.
  • Cook over medium-high heat until ground beef is browned.
  • Drain.
  • Add Worcestershire sauce, cream of mushroom soup, and milk.
  • Stir until sauce is fairly smooth.
  • Boil potatoes until tender; drain. Add potatoes and carrots to sauce.
  • Divide mixture evenly between the 4 baking pans.
  • To bake: Cover baking pan with foil and bake for 30 minutes.
  • Remove foil and bake an additional 15-20 minutes or until potatoes are tender.
  • To freeze: Allow mixture to cool in baking pan.
  • Cover and label; Freeze.
  • To use frozen casserole: Allow casserole to thaw overnight in fridge.
  • Bake as directed above (may take an additional 15 minutes to bake if placed in the oven directly from fridge).
  • **I have to mix this recipe in thirds since I don't have a large enough skillet or bowl to mix it all at once**.

I like the recipe because it is easy. If you don't want to get up early and have to make breakfast early it is already made the night before. All you have to do is pop it in the oven in the morning and let it cook while you are getting ready for the day. It came from my late Grandma...may God bless her soul. I miss her. This makes a great Christmas morning casserole as you can cook it while opening Santa's gifts. Try it. It is yummy and saves time on Christmas morning--or anytime.

2 lbs bulk sausage, mild or hot
8 slices bread, remove crusts
3/4 lb grated extra-sharp cheddar cheese
8 large eggs, beaten
3 cups milk
1 1/2 teaspoons salt
1 1/2 teaspoons dry mustard

Steps:

  • In a large skillet, brown sausage; crumble and drain.
  • Butter a 9 x 13-inch casserole dish.
  • Place bread (torn into bite-sized pieces) in bottom of dish.
  • Place sausage on the top of bread.
  • Sprinkle cheese over top.
  • In a large bowl, mix beaten eggs, milk, salt, and dry mustard; blend well.
  • Pour over the other ingredients.
  • Cover and refrigerate overnight.
  • The next morning, uncover and bake at 350°F for 45 minutes.
  • Slice into squares and serve warm.
  • You may also add some ham, cut into bite-sized pieces, or crumble some bacon in it along with the sausage.

4 1/2 cups seasoned croutons
2 cups shredded cheddar cheese
1 medium onion, chopped
1/4 cup chopped sweet red pepper
1/4 cup chopped green pepper
1 (4 1/2 ounce) can sliced mushrooms, drained
8 eggs
4 cups milk
1 teaspoon salt
1 teaspoon ground mustard
1/8 teaspoon pepper
8 slices cooked bacon, crumbled

Steps:

  • Sprinkle croutons, cheese, onion, peppers and mushrooms into two greased 8-in. square baking dishes. In a bowl, combine the eggs, milk, salt, mustard and pepper. Slowly pour over vegetables. Sprinkle with bacon.
  • Cover and freeze one casserole for up to 3 months.
  • Bake the second casserole, uncovered, at 350° for 45-50 minutes or until a knife inserted near the center comes out clean.
  • To use frozen casserole: Completely thaw in the refrigerator for 24-36 hours.
  • Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 50-60 minutes or until a knife inserted near the center comes out clean.

3 cups frozen hash brown potatoes (24 oz bag)
3/4 cup shredded monterey jack cheese
3/4 cup shredded cheddar cheese
1 cup diced ham
1/4 cup sliced green onion
6 beaten eggs or 1 1/2 cups frozen fat-free liquid egg product
1 (12 ounce) can evaporated milk
1/4 teaspoon pepper
1/8 teaspoon salt

Steps:

  • Grease a 2 quart square baking dish.
  • arrange potatoes evenly on bottom of dish.
  • sprinkle with cheese, ham, green onion.
  • in medium mixing bowl, combine eggs, milk, salt and pepper. Pour egg mixture over potato mixture in dish. Freeze.

1 pinch salt
1 pinch pepper
1 onion, finely chopped
2 garlic cloves, crushed
2 tablespoons cider vinegar or 2 tablespoons wine vinegar
1 tablespoon mustard powder
3 tablespoons sugar
1 (5 1/2 ounce) can tomato paste
3 tablespoons soy sauce
1 (400 g) can chopped tomatoes
6 sprigs fresh basil, shredded

Steps:

  • Place chicken and remaining ingredients (except for fresh basil) in a large ziplock freezer bag.
  • Remove as much air from the bag as possible then label and freeze.
