1 pint strawberries, hulled and cut in half
1 pint blueberries
1 pint raspberries
1 tablespoon good balsamic vinegar
1/4 cup sugar
Fresh mint, for garnish

Steps:

  • Place 6 glasses in the refrigerator.
  • In a large bowl, combine the berries, vinegar and sugar. Stir gently. Cover securely with plastic wrap and refrigerate for 30 minutes to 1 hour.
  • Spoon the berries into the chilled glasses. Garnish with a sprig of fresh mint.

For this sweet and tart salad, wheat berries are blended with cranberries, apples and pecans and tossed in a raspberry vinaigrette-a winning combination. A perfect side dish to take to a potluck or simply serve it over a bed of peppery arugula for vegan lunch. Recipe from Eating Well March/April 2007. (Cooking time is resting time). If you wish to sweeten your salad up a bit but don't have Agave, feel free to sub 1 T of honey. Also of note, I have made this with a peach and 2 apricots instead of the grapes and apple (thereby making this wheat berry salad with ORANGE fruit) and it is delightful!!!! This salad is even better on day 2, so it's a great make ahead recipe.

1/3 cup freshly squeezed orange juice (the juice of 1 orange)
1/3 cup dried cranberries (dried cherries are even better in my opinion)
10 chopped red grapes (optional)
3 cups cooked wheat berries
1 large fuji apple, unpeeled, diced
1/2 cup pecan halves, toasted and coarsely chopped
3 tablespoons raspberry vinegar (feel free to use Blueberry Pomegranate Infused Red Wine Vinegar)
2 tablespoons extra virgin olive oil
1 teaspoon agave nectar (optional)
1/4 teaspoon salt (I only use a pinch)
1/4 teaspoon fresh ground pepper (I use lemon pepper)

Steps:

  • Combine orange juice and cranberries in a small bowl. Let stand for 15 minutes.
  • Combine wheat berries, apple and pecans (and grapes if using) in a large bowl; stir gently.
  • Drain the cranberries, reserving the juice. Stir the cranberries into the wheat berry mixture.
  • Whisk the reserved orange juice, vinegar and oil in a small bowl until combined. Add Agave/honey if using. Season with salt and pepper. Pour over the salad and stir gently to coat.
  • Refrigerate for at least 30 minutes to allow the flavors to combine.
  • Serve cold or at room temperature.

1 6-ounce container blackberries (about 1 cup)

1/2 lb raspberries, fresh
1 c strawberry yogurt
1 Tbsp raspberry preserves, seedless
1 small mint leaf, fresh for garnishment
1/2 Tbsp equal or confectioner sugar

Steps:

  • 1. In a medium decorative bowl, wash all berries and place on paper towel to dry excess moisture off fruit.
  • 2. Slice strawberries, sprinkle all berries with equal or confectioner sugar, let stand for about 10 minutes so the berries can absorb the sugar. Then mix yogurt and preserve in separate small bowl.
  • 3. Top berries with yogurt mixture and place mint leaf on top for garnishment. Wallah!

  • Combine 3 cups of the cooked wheat berries, apple and pecans in a large bowl; stir gently. Drain the cranberries, reserving the juice. Stir the cranberries into the wheat berry mixture. (Refrigerate the extra cooked wheat berries for up to 2 days or freeze for up to 1 month.) Whisk the reserved orange juice, vinegar and oil in a small bowl until combined. Easy, fast, good for you, and delicious, this fruit salad looks pretty, too. My wife Romelle made it for a Thanksgiving church luncheon and it was gone within a few minutes with rave reviews. The Cool Whip and yogurt mixture is the key, creating a light consistency that holds its shape. The amounts don't matter, just the ratio. I'm sure it's been done many ways, but it doesn't get any easier than this!

3 -4 cups non-fat vanilla yogurt or 3 -4 cups low-fat vanilla yogurt
3 -4 cups Cool Whip Lite
3 -4 cups varioius fresh berries (we used blueberries, blackberries, strawberries, red seedless grapes)
1/2 cup sweetened flaked coconut (or as much as you wish)
1/2 cup slivered almonds

Steps:

  • Wash and drain all the fruit separately - pat dry if needed.
  • Stir the yogurt and Cool Whip together thoroughly.
  • In an appropriate size tall GLASS bowl, start with a layer of the yogurt mixture, then alternate layers of the fruit and yogurt, making sure the colorful fruit is visible along the edges. End up with a layer of yogurt.
  • Sprinkle the coconut on top like snow, then sprinkle the almonds over the coconut. Add a few berries on top, if desired.
  • Refrigerate until serving time. You're done.
