BERRY ANGEL DELIGHT
From Betty's Soul Food Collection... It's the berries - and the angel food cake - that create this impressive, easy dessert.

Steps:
- In chilled medium bowl, beat whipping cream and sugar with electric mixer on high speed until stiff peaks form. Gently stir in yogurt.
- Place cake pieces in large bowl; gently stir in yogurt mixture. In medium bowl, gently mix berries.
- Spoon half of the cake mixture into 9-inch springform pan; press firmly in pan with rubber spatula. Top with half of the berries. Repeat with remaining cake mixture; press with spatula. Top with berries. Cover and refrigerate at least 4 hours or overnight.
- Run metal spatula carefully along side of dessert to loosen; remove side of pan. Cut dessert into wedges.

- In a large saucepan, combine sugar and gelatin. Add 1 cup cranberry-peach juice; cook and stir over low heat until gelatin is completely dissolved, about 5 minutes. RHUBARB BERRY DELIGHT SALAD

- In a large saucepan, cook rhubarb, strawberries and 1 cup sugar until fruit is tender. In a large bowl, dissolve raspberry gelatin in boiling water. Stir in fruit; set aside. , In another saucepan, heat milk and remaining sugar over low until sugar is dissolved. Meanwhile, soften unflavored gelatin in cold water. Add to hot milk mixture and stir until gelatin dissolves. Remove from the heat; add vanilla. Cool to lukewarm; blend in sour cream. Set aside at room temperature. , Pour a third of the fruit mixture into a 3-qt. bowl; chill until almost set. Spoon a third of the sour cream mixture over fruit; chill until almost set. Repeat layers twice, chilling between layers if necessary. Refrigerate until firm, at least 3 hours.

- 1. Preheat oven to 350 degrees. Grease cake pans. (I used two 8" round pans.)
- 2. In a mixer, combine cake mix and 12 oz. of soda. Mix until combined. Pour into cake pans and bake according to directions on the box. (Toothpick should come out clean.)
- 3. Dice your strawberries and blackberries while the cake is baking.
- 4. Once cool, place 1 round cake pan on the bottom of a baking dish, whole. Take the 2nd cake and crumble or dice it.
- 5. Add a layer of frosting. (I chose chocolate. You could replace frosting with a cool whip/pudding mix as well.)
- 6. Add a layer of diced strawberries & blackberries on top of the frosting.
- 7. Sprinkle part of the crumbled cake over the fruit. Repeat steps 5 & 6. Refrigerate before & after serving.

Steps:
- Combine sugar and gelatin in a large saucepan.
- Add 1 cup of the juice and cook and stir over low heat until gelatin is completely dissolved, about 5 minutes.
- Remove from heat and stir in remain juice, and lemon juice.
- Halve strawberries and place in an 8 cup ring mold, coated with cooking spray.
- Add 2 cups of the gelatin and refrigerate until set, but not firm, about 30 minutes.
- Stir blueberries into remaining gelatin and spoon over strawberry layer.
- Refrigerate overnight.
- Unmold onto a serving platter.
