Here's what you need: bananas, frozen mixed berry, vanilla extract, almond milk

3 bananas
½ cup frozen mixed berry
1 teaspoon vanilla extract
½ cup almond milk

Steps:

  • Cut the bananas into coins, then place in a resealable bag. Freeze overnight, or until solid.
  • Add the frozen bananas, berries, vanilla, and almond milk to a food processor and blend on high speed until smooth.
  • Transfer the mixture to a loaf pan and smooth the top with a rubber spatula. Freeze for 1 hour, or until solid.
  • Scoop and serve.
  • Enjoy!

1 scoop each vanilla, chocolate and strawberry ice cream
2 tablespoons sliced fresh strawberries or 1 tablespoon strawberry ice cream topping
2 tablespoons pineapple chunks or 1 tablespoon pineapple ice cream topping
2 tablespoons whipped cream
1 tablespoon chopped peanuts
1 tablespoon chocolate syrup
2 maraschino cherries with stems

Steps:

  • Place banana in a dessert dish; place scoops of ice cream between banana. Top with remaining ingredients. Serve immediately.

This is a slight adaptation of a recipe from one of my favorite cookbooks, "500 Fat Free Recipes." This is a lovely end to your meal that you can feel reasonable eating. Healthy and decadent tasting though still helping you get all your fruit servings. I used raspberry flavored honey which was lovely, but any honey will be good here. The original recipe called for 2 cups strawberries but I really enjoyed the strawberry/blueberry combination.

1/2 cup plain fat-free yogurt
2 tablespoons honey
3 frozen bananas
1 cup fresh strawberries
1 cup fresh blueberries

Steps:

  • Peel the bananas and slice them into rounds. Keep the rounds frozen until you are ready to make and eat.
  • In a blender or food processor put the yogurt and honey and blend until mixed. Then add the banana rounds and process until smooth.
  • Put some banana cream in the bottom of each parfait glass. Add some sliced strawberries and some blueberries. Add more cream and more berries until all your supplies are used up.
  • Eat right away!

1 sheet refrigerated pie pastry
1/4 cup chopped pecans
1-1/4 cups cold fat-free milk
1/2 cup reduced-fat sour cream
Sugar substitute equivalent to 1/4 cup sugar
1 package (.9 ounce) sugar-free instant banana pudding mix
2 cups reduced-fat whipped topping
1 tablespoon lemon juice
2 medium bananas
1/3 cup fresh blueberries

Steps:

  • Unroll pastry on a lightly floured surface. Sprinkle with pecans; lightly roll pecans into pastry. Transfer to a 9-in. pie plate. Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack., In a small bowl, combine the milk, sour cream and sugar substitute. Gradually whisk in dry pudding mix. Fold in whipped topping. , Place lemon juice in a small bowl. Slice bananas into juice and stir gently to coat. Set aside 1/3 cup; spoon remaining banana slices into the crust. Top with pudding mixture, blueberries and reserved banana slices. Cover and refrigerate for 30 minutes before serving.
