This recipe is super easy and guaranteed to 'wow' your family. Lots of flavor! You can put it together in no time...and it goes great with white rice and a green vegetable. Most of the ingredients can be substituted with similar ingredients you have around the kitchen.

two 3/4 lb haddock fillet
1 1/2 cups mayonnaise
1/2 cup French's French fried onions (optional)
2 tablespoons of finely sliced green onions (optional)
1 tablespoon yellow mustard
1 tablespoon brown mustard
1 teaspoon garlic powder
1/2 teaspoon parsley
1/3 cup of finely grated romano cheese or 1/3 cup parmesan cheese
2 tablespoons olive oil

Steps:

  • Preheat oven to 400 degrees.
  • Stir together mayonaise, yellow mustard, brown mustard, garlic powder, parsley, and green onions.
  • Place haddock on a greased pan and brush with olive oil.
  • Bake haddock in the oven for 10 minutes.
  • Remove Haddock from oven and spoon on topping.
  • Sprinkle with french onions.
  • Broil on low setting for roughly 8 minutes.
  • Fish should flake easily when fully cooked.

We'd invited a couple of families over for dinner, and our daughter Joyce and her husband, Josh, said they were going to bring some fresh haddock. Josh wanted to find just the right recipe to prepare, and this is the one he chose. The topping--sliced plum tomatoes plus bread crumbs mixed with herbs and vegetables--adds nice flavor and color. It made a hit, and everyone really enjoyed the meal.

1/2 cup chopped onion
1/4 cup chopped celery
3 tablespoons butter
1/2 cup chopped fresh mushrooms
2 cups soft bread crumbs
1 teaspoon salt
1/8 teaspoon pepper
Pinch dried tarragon
Pinch crushed dried rosemary, optional
2 pounds haddock fillets
1 tablespoon lemon juice
4 plum tomatoes, sliced

Steps:

  • In a large skillet, saute onion and celery in butter for 3 minutes or until tender. Add mushrooms; saute 1 minute longer or until tender. Remove from the heat; stir in the bread crumbs, salt, pepper, tarragon and rosemary if desired. , Place the fillets in a greased 11x7-in. baking dish. Sprinkle with lemon juice. Spoon the bread crumb mixture onto fillets; top with tomatoes. Bake, uncovered, at 375° for 25-30 minutes or until fish flakes easily with a fork.

This is a traditional New England classic made with the perfect combination of fresh bread crumbs and Ritz crackers for the topping. A little bit of Parmesan adds a great flavor and you wouldn't even be able to guess that it's there........it just doesn't get any better than this. 2 lbs haddock or 2 lbs cod fish fillets
32 Ritz crackers, crushed (32 crackers in a sleeve)
1/4 cup parmesan cheese, grated
2 teaspoons garlic powder
1/4 cup chopped fresh flat leaf parsley
3 tablespoons extra virgin olive oil
3 tablespoons butter, drawn

Steps:

  • Preheat the oven to 400 degrees.
  • Mix all ingredients together in a bowl except for the butter and fish. Use a food processor or your hands to make an evenly consistent bowl of crumbs.
  • Place the fish in a cooking dish(es), cover with a good handful of crumbs and sprinkle with drawn butter.
  • Place two tablespoons of water around the bottom of the fish.
  • Bake for 10 to 14 minutes, until the breadcrumbs become brown. Serve immediately with a lemon wedge and your favorite vegetable.

1 cup seasoned dry bread crumbs
1/4 cup butter, melted
2 tablespoons dried parsley flakes
2 teaspoons grated lemon zest
1/2 teaspoon garlic powder

Steps:

  • Preheat oven to 350°. Cut fish into 6 serving-sized pieces. Place in a greased 11x7-in. baking dish. Combine remaining ingredients; sprinkle over fish. Bake until fish just begins to flake easily with a fork, 20-25 minutes.
