Number Of Ingredients 8

2 cups all-purpose flour
3/4 cup sugar
3-1/2 teaspoons baking powder
2 large eggs, separated
1-1/2 cups whole milk
1 cup butter, melted
1 teaspoon vanilla extract
Sliced fresh strawberries or syrup

Steps:

  • In a bowl, combine flour, sugar and baking powder. In another bowl, lightly beat egg yolks. Add milk, butter and vanilla; mix well. Stir into dry ingredients just until combined. Beat egg whites until stiff peaks form; fold into batter. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Serve with strawberries or syrup.

Healthier whole wheat waffles that are fluffy, crispy, and a breeze to whip up. For best results, use whole wheat pastry flour. Weigh or spoon and level the flour when measuring for the best recipe results. Top with any and all of your favorite waffle toppings: maple syrup, nut butter, confectionary sugar, fruit, whipped cream, chocolate chips, etc.

2 2/3 cups (or 320 g) whole wheat pastry flour
3 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/4 cup packed light brown sugar
2 large eggs
2 cups low-fat buttermilk (nut or dairy; see notes below)
1/4 cup unsalted butter, melted
Non-stick cooking spray
Favorite waffle toppings: fruit, nut butter, whipped cream, maple syrup, chocolate chips, dates, bananas, confectioners sugar, etc.

Steps:

  • Preheat the waffle iron to medium-high heat.
  • Whisk together the dry ingredients (pastry flour through brown sugar) in a large mixing bowl until combined.
  • Add the eggs, milk, and melted butter to the dry ingredients. Whisk in until no streaks of flour remain.
  • Once the waffle iron has preheated, spray the iron with non-stick cooking spray and pour in the waffle batter by the 1/2 cup until the waffle iron grids are filled with batter, but not overflowing.
  • Cook the waffles according to the waffle iron's directions.
  • Repeat steps 4 & 5 until the rest of the waffle batter until all the batter is cooked, making about 3 large waffles.
  • Remove the waffles from the oven and serve hot with all your favorite toppings!

2 large eggs
1 cup milk
¼ cup vegetable oil
1 tablespoon white sugar
¼ teaspoon salt
3 teaspoons baking powder
½ cup all-purpose flour
½ cup whole wheat flour

Steps:

  • Spray a Belgian waffle iron with cooking spray and preheat according to manufacturer's instructions.
  • Beat eggs with a whisk until fluffy. Beating slightly after each ingredient, first add milk, then oil, sugar, salt, baking powder, all-purpose flour, and finally whole wheat flour; do not overbeat.
  • Pour 3/4 cup batter into the center of the hot waffle iron, spreading with a metal knife if necessary. Close the iron and bake until it stops steaming, 2 to 5 minutes, depending on your iron. Carefully remove cooked waffle with a fork and repeat with remaining batter.
