1/2 cup low-sodium soy sauce
2 tablespoons cornstarch
2 tablespoons sugar
2 tablespoons rice wine vinegar
1 tablespoon minced fresh ginger
1/2 teaspoon crushed red pepper flakes, plus more for garnish
3 tablespoons peanut oil
1 red bell pepper, seeds removed and cut in thin strips
1 yellow bell pepper, seeds removed and cut in thin strips
1 pound jumbo shrimp, peeled and deveined
5 scallions, cut into 1/2-inch pieces
1 cup packed curly kale, stemmed and hand torn
1 tablespoon chopped fresh cilantro
2 teaspoons chopped fresh mint

Steps:

  • In a bowl or measuring cup, mix together the soy sauce, cornstarch, sugar, rice wine vinegar, ginger and crushed red pepper flakes.
  • Heat the oil in a large high-sided skillet or wok over high heat. Add the bell peppers and stir until browned, 1 to 2 minutes. Scoot the peppers to the edge of the pan, creating an opening in the center.
  • Add the shrimp in a single layer to the center of the pan and cook until just beginning to turn pink, 1 to 2 minutes. Add three-quarters of your scallions (hold back the rest for garnishing at the end) and stir everything together.
  • Add the kale and cook until wilted, about 2 minutes. Next, pour in the sauce and allow it to bubble and thicken in the pan while stirring, about 1 minute. The sauce should really cling to the shrimp and vegetables. Remove from the heat.
  • Sprinkle everything with the cilantro and mint and stir to combine. Garnish with more red pepper flakes and the remaining scallions before serving.

2 teaspoons cornstarch

1 large garlic clove, minced
1 lb chicken tenders, cut into bite-size pieces
3 tablespoons peanut oil or 3 tablespoons vegetable oil, divided
4 ounces mushrooms, sliced
1 stalk celery, sliced diagonally into 1-inch slices
1 cup sugar snap pea, trimmed
1/2 red bell pepper, cut into 1/2-inch pieces
6 green onions, including some green tender tops, sliced (plus finely chopped green tops for sprinkling on top)
1 cup long-grain white rice, cooked according to package directions (3 cups cooked)

Steps:

  • In a large bowl, whisk together the soy sauce, wine, cornstarch, ginger, and garlic.
  • Stir in the chicken and let it stand at room temperature for 10 minutes.
  • In a wok or large skillet over med-high heat, add 1 1/2 tablespoons of the oil.
  • When the oil is hot, remove the chicken from the marinade with a slotted spoon and add it to the wok.
  • Reserve the marinade.
  • Stir-fry until the chicken is cooked through, 3-4 minutes.
  • Transfer the chicken to a plate.
  • Add the remaining 1 1/2 tablespoons oil to the wok.
  • When the oil is hot, add the mushrooms, celery, sugar snap peas, bell pepper, and sliced onions and stir-fry until the vegetables are tender-crisp, about 5 minutes.
  • Return the chicken to the wok along with the reserved marinade and stir-fry until heated through and the sauce is thickened, 2-3 minutes; taste and add salt/pepper or red pepper flakes, if needed.

4 7 to 8 ounce pork chops about 1/2 inch thick

1 medium zucchinni halved lenghtwise cut crosswise into 1/4 thick diagonal slices
1 yellow summer squash halved lenghtwise cut crosswise into 1/4 inch thick slices
1 small red bell pepper seeded cut into strips

Steps:

  • Preheat oven to 350 degrees. Place chiliies and 2 garlic cloves in small baking dish. Sppon 1 tablespoon olive oil over run to coat. Roast until chilies and garlic are very soft turning once about 40 minutes. Cool. Puree mixture in processor. Whisk puree 4 tablespoons olive oil soy sauce dijon mustard honey oriental seasme oil rosemary and lemon peel in medium bowl to blend. Place pork chops in 13 by 9 by 2 inch glass baking dish. Pour marinade over pork chops and run to coat. Cover and refrigerate 1 hour turning occasionally. Cook asparagus in medium pot of boiling slated water until crisp and tender about 1 minute drain transfer asparagus to bowl of ice water to cool drain. Prepare barbecue medium high heat or preheat broiler. Remove pork chops from marinade. Sprinkle with slat and pepper and grill or broil pork chops until no longer pink in center about 5 minutes per side. Transfer pork chops to platter. Tent with foil to keep warm while preparing vegetables. Heat remaining 2 tablespoons oil in heavy large skillet over medium heat add minced garlic suate until golden about 1 minute. Add zucchini yellow squash and red bell pepper same until vegetables are crisp tender about 2 minutes. add asparagus saute until heated through about 1 minute longer. 2 red bell peppers
1 yellow bell pepper
2 garlic cloves
6 plum tomatoes
1 pound cleaned small squid
4 tablespoons peanut oil

2 teaspoons Asian sesame oil

Steps:

  • Toast sesame seeds until golden. Cut onion half lengthwise into thin slices. Cut bell peppers into 1-inch pieces. Mince garlic. Peel and quarter tomatoes. Seed quarters and halve lengthwise. 2 tablespoons Thai-style chili sauce*
1 1/2 tablespoons soy sauce
2 teaspoons balsamic vinegar
2 teaspoons grated peeled fresh ginger
2 10- to 12-ounce New York steaks
1 1/2 tablespoons vegetable oil, divided
1 medium onion, halved, sliced
2 medium red bell peppers, cut into 1/2-inch-thick strips
4 green onions, chopped
1/2 cup chopped fresh cilantro

Steps:

  • # Preheat oven to 375°F. Whisk chili sauce, soy sauce, balsamic vinegar, and ginger in medium bowl; add steaks and turn to coat. Let marinate at room temperature 15 minutes, turning occasionally. # Heat 1/2 tablespoon vegetable oil in large ovenproof skillet over medium-high heat. Scrape most of marinade off steaks and back into bowl. Sprinkle steaks with salt and pepper; add to skillet and cook until browned, about 3 minutes. Turn steaks over and transfer skillet to oven. Roast until cooked to desired doneness, about 5 minutes longer for medium-rare. Transfer steaks to cutting board; let rest 10 minutes. # Meanwhile, heat remaining 1 tablespoon vegetable oil in heavy medium skillet over medium-high heat. Add onion and bell peppers; sauté until crisp-tender, about 3 minutes. Add green onions and all remaining marinade from steaks. Bring to boil. Stir in cilantro. Cut steaks crosswise in half. Divide steaks among 4 plates. Spoon vegetables over steaks and serve. # *A sweet-hot Thai-style condiment used in marinades and sauces; available in the Asian foods section of some supermarkets and at Asian markets.

Easy peasy stir fry recipe. Serve with couscous or rice. NOTE: You CAN add extra "heat" to this recipe (extra cayenne pepper or curry paste) to suit your own tastes. I have deliberately kept the flavors mild in this recipe in order to not overshadow the taste of the fresh peppers and cashews. I love spicy hot food, but sometimes a mild take on things is a nice change from my routine. You be the judge!

2 teaspoons olive oil
1 medium red bell pepper, stemmed, seeded, and thinly sliced
1 medium green bell pepper, stemmed, seeded, and thinly sliced
1 medium yellow onion, cut into wedges
2 garlic cloves, minced
2 teaspoons curry powder
1/3 cup vegetable broth
1 cup coconut milk
1/2 cup roasted and salted cashews (use whole cashews or halves, not pieces)

Steps:

  • Heat oil in a wok over medium high heat.
  • Stir in peppers, onion, and garlic.
  • Cook vegetables 5 minutes or until vegetables are tinged golden brown at the edges.
  • Add curry powder, and cook for about 30 seconds.
  • Add broth; cover, and continue to cook until peppers are tender, about 4 minutes longer.
  • Add coconut milk and heat until bubbling( do not boil!).
  • Spoon curry over hot couscous or rice and sprinkle with cashews.
  • Makes 4 generous servings.

1 yellow bell pepper, julienned
1 medium onion, sliced
1/4 cup sliced green onion
1 tablespoon minced fresh basil
1/2 teaspoon fresh thyme
1 teaspoon garlic powder
3 tablespoons dry white wine
2 tablespoons chopped fresh parsley

Steps:

  • Spray large skillet with cooking spray. Stir in vegetables, herbs and garlic powder.
  • Stir fry 2-3 minutes or until crisp-tender. Stir in wine. Sprinkle with parsley.
