This strata makes breakfast less hectic because all the prep work is done the night before. The quantities of mushrooms, onions, and green peppers can be varied to suit the tastes of those who will be eating this dish.

9 slices bread, torn into bite size pieces
½ cup diced fresh mushrooms
½ cup chopped green bell pepper
16 ounces Cheddar cheese, shredded
½ cup chopped onion
2 cups cubed cooked ham
8 eggs
2 cups milk

Steps:

  • Grease a 9x13 inch baking dish. Layer half of the torn bread in the bottom of the dish. Sprinkle the mushrooms and green bell pepper evenly over the bread layer. Sprinkle with half of the cheese. Top with remaining bread pieces, then layer with the onion and ham. Sprinkle with remaining cheese. Whisk together eggs and milk; pour over the entire pan. Cover with aluminum foil, and refrigerate for 12 to 24 hours.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake covered for 35 minutes, then remove foil and bake for an additional 15 minutes, or until top is evenly brown.

5 slices white bread
1 1/2 cups grated sharp cheddar cheese

1/2 teaspoon dry mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350°F. Melt 1 1/2 tablespoons butter in heavy large skillet over medium-high heat. Add bell pepper to skillet and sauté until just tender, about 4 minutes. Mix in green onions; sauté 1 minute longer. Remove from heat.
  • Spread 1 1/2 tablespoons butter thinly on bread. Cut bread into 1/2-inch pieces. Layer half of bread in 8 x 8 x 2-inch glass baking dish. Cover with half of cheese, then half of bell pepper mixture. Repeat layering with bread, cheese and bell pepper mixture. Beat milk, eggs, Dijon mustard, dry mustard, salt and pepper in medium bowl to blend. Pour over strata.

1 red bell pepper, seeded and thinly sliced
6 green onions, chopped
5 slices white bread
butter, softened
2 cups cheddar cheese (can use more)
2 cups full-fat milk or 2 cups half-and-half cream
3 large eggs
1 tablespoon Dijon mustard
1/2 teaspoon dry mustard
salt and pepper
1/3 cup grated parmesan cheese (or to taste)

Steps:

  • Set oven to 350 degrees.
  • Butter an 8 x 8-inch square baking dish.
  • Melt 3 tablespoons butter in a large skillet.
  • Add in bell pepper and saute until JUST tender (about 3-4 minutes).
  • Mix in green onions and saute for about 1 minute longer.
  • Spread softened butter thinly on bread slices.
  • Cut bread into 1-inch pieces, then layer half of the bread pieces in the bottom of prepared baking dish.
  • Cover with half of the cheddar cheese, then half of the bell pepper/onion mixture.

1 tablespoon extra virgin olive oil, plus

1/2 cup chopped onion
1/2 cup chopped red bell pepper
1 clove garlic, minced

1 teaspoon kosher salt, plus

Steps:

  • Over medium heat in large skillet, heat sausage, stirring with wooden spoon to crumble, until lightly browned, about 5 minutes.
  • Strain sausage of fat, and set aside.

Steps:

  • Brush a 9" x 9" pan with oil. In a bowl, beat eggs, milk, Parmesan and 1/4 teaspoon each salt and black pepper. Add bread; toss until coated; ransfer to pan; let sit. Heat oven to 400°F. In a large nonstick pan, heat 2 tablespoons oil over medium-high heat. Sauté bell pepper, onion, thyme and remaining 1/2 teaspoon salt and 1⁄4 tsp black pepper until onion begins to brown, 10 minutes. SPINACH, ROASTED PEPPER AND CHEESE STRATA

Strata are easy and transform stale bread and leftover vegetables into an elegant pseudo-souffle! We first tried strata as newlyweds, working from a Sunset cookbook "Cooking for Two" and have since tried many variations. Here's a recent take.

2 tablespoons butter
2 tablespoons olive oil
1 sweet onion, diced
1 red bell pepper
2 (10 ounce) boxes frozen spinach, thawed and drained
1/2 cup fresh cilantro, chopped
8 ounces feta cheese
5 large eggs
1 cup milk
1 loaf French bread, cubed
8 ounces mozzarella cheese, shredded

Steps:

  • Heat butter and olive oil in a small saute pan. Add sweet onion, a generous dash of salt, and several grinds of fresh black pepper. Cook slowly over low heat until onions are nicely caramelized.
  • Meanwhile, quarter, stem and seed the bell pepper, being sure to cut away any white pith. Place the pepper quarters skin side up under the broiler for about 5 minutes, or until the skin is beginning to char. Remove peppers to a closed container or a bowl with a plate across it. Once cool enough to handle, slough off the skin and dice the pepper.
  • Squeeze as much moisture out of the thawed spinach as possible. In a wide bowl, combine spinach, cilantro, caramelized onion, diced roasted pepper and any collected pepper juices until evenly mixed. Gently stir in feta.
  • In a separate bowl or small pitcher, whisk together eggs and milk. If desired, add a tablespoon of grainy mustard or a teaspoon of prepared horseradish, along with additional ground black pepper, into the custard.
  • Spray a large deep lidded casserole with cooking spray. Spray the edges of the lid as well. Spread half of the bread cubes across the bottom. Arrange spinach mixture over bread to cover, all the way out to the edges. Top spinach with shredded cheese and then remaining bread cubes.
  • Slowly pour the custard mixture evenly over the strata, moving in concentric circles. Cover strata and refrigerate at least one hour and up to one day.
  • Preheat oven to 350 degrees. Bake strata, covered, 30 minutes. Remove lid and continue to bake 20-25 minutes, or until golden. Remove from oven and allow to stand 5 - 10 minutes.

3 tablespoons Dijon-style mustard
Tabasco to taste

Steps:

  • In a large skillet cook the onion, the scallion, and the mushrooms in the oil over moderately low heat, stirring, until the onion is softened, add the bell peppers and salt and pepper to taste, and cook the mixture over moderate heat, stirring, for 10 to 15 minutes, or until all the liquid the mushrooms give off is evaporated and the peppers are tender. Arrange half the bread cubes in a buttered large shallow (4 1/2-quart) baking dish, spread half the vegetable mixture over them, and sprinkle half the Cheddar and half the Parmesan over the vegetables. Arrange the remaining bread cubes over the cheeses, top them with the remaining vegetables, and sprinkle the remaining cheeses over the top.
