Bell pepper eggs are very tasty and so easy to make - simply fry eggs in butter inside pepper rings. It's a lovely way to serve eggs for breakfast or brunch.

1 tablespoon butter
3 bell pepper rings (1/3-inch thick)
3 medium eggs
1/4 teaspoon Diamond Crystal kosher salt (Or a pinch of fine salt)
1/4 teaspoon freshly ground black pepper

Steps:

  • Heat the butter in a large nonstick skillet over medium heat, about 4 minutes.
  • Add the bell pepper rings. Cook them for 2 minutes on each side.
  • Crack an egg into each bell pepper ring. Lower the heat to medium-low.
  • Cook the eggs until the whites are set, 5-10 minutes.
  • Season with salt and pepper, and serve.

6 eggs
kosher salt
Freshly ground black peppers
2 tbsp. Chopped chives
2 tbsp. chopped parsley

Steps:

  • Heat a nonstick skillet over medium heat, and grease lightly with cooking spray.
  • Place a bell pepper ring in the skillet, then sauté for two minutes. Flip the ring, then crack an egg in the middle. Season with salt and pepper, then cook until the egg is cooked to your liking, 2 to 4 minutes.
  • Repeat with the other eggs, then garnish with chives and parsley.

3 bell peppers
1 cup whole wheat breadcrumbs, or panko bread crumbs (50 g)
½ cup grated parmesan cheese
2 teaspoons garlic powder
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon salt
½ teaspoon pepper
3 eggs, beaten
1 cup all-purpose flour
dipping sauce, of your choice, optional

Steps:

  • Preheat the oven to 425˚F (220˚C). Grease a baking sheet with nonstick spray or line with parchment paper.
  • Cut the bell peppers carefully around the stem and remove the stem and seeds. Cut the peppers crosswise into ½-inch (1 cm) slices.
  • In a large bowl, combine the bread crumbs, Parmesan, garlic powder, paprika, oregano, basil, salt, and pepper. Add the eggs to a separate bowl and whisk. Add the flour to a third bowl.
  • Dredge the bell pepper rings in the flour, then the eggs, then finally in the bread crumb mixture, making sure to coat all sides.
  • Arrange the bell pepper rings on the baking sheet.
  • Bake for 10-15 minutes, flipping halfway through, until golden brown on both sides.
