4 salmon steaks, 1-inch thick
12 ounces beer
2 tablespoons lemon juice
1 medium onion, chopped
1 stalk celery, chopped
1 teaspoon salt
1 bay leaf
3 -4 peppercorns
1/2 cup mayonnaise
1/4 teaspoon dried tarragon
1 teaspoon chives, minced
1 teaspoon green onion, chopped
1/4 teaspoon Tabasco sauce
1 teaspoon parsley, minced

Steps:

  • In a skillet, combine beer, lemon juice, onion, celery, salt, bay leaf and peppercorns. Bring to a boil and simmer for 10 minutes. Add salmon steaks, cover and simmer 15 minutes.
  • Combine ingredients for tarragon mayonnaise and chill. Serve with salmon.

1 skin-on salmon fillet (2 lb.)
1 cup beer
1 pkg. (5 oz.) ATHENOS Crumbled Blue Cheese
1/4 cup chopped walnuts, toasted
1/4 cup chopped fresh parsley

Steps:

  • Heat grill to medium-high heat.
  • Place fish fillet onto center of large sheet heavy-duty foil. Bring up foil sides. Pour beer over fish. Fold to make packet.
  • Place packet on grill; cover with lid. Grill 7 min. Carefully open foil packet. Sprinkle cheese over fish; reseal packet. Cover grill with lid; grill 5 min. or until fish flakes easily with fork.
  • Remove fish from packet to serving platter; sprinkle with nuts and parsley.

3 cups pale ale
4 cups water
2 lbs flour
6 ounces flour
2 tablespoons baking soda
1 tablespoon salt
2 tablespoons paprika
4 ounces granulated sugar, by weight
2 thick salmon steaks
cooking oil (can use canola, or other)

Steps:

  • Preheat oil to 350 degrees.
  • Combine beer and water in mixing bowl.
  • Slowly incorporate other ingredients until smooth. Be sure to keep the batter as cool as possible.
  • When ready, cut salmon into individual thumb-sized pieces.
  • Coat fish pieces entirely in batter and let some excess drain.
  • Immerse in preheated 350 degree F oil until golden brown. Serve with caution, very hot!

2-3 slices of slab bacon cut into 1/4" bits
1 tbsp. butter
1 scallion (red onion is bolder)
4 oz. ommegang wheat beer
8 oz. wild sockeye salmon filet.
liberal toss of sea salt

Steps:

  • 1. bring bacon, butter and scallion to temp at medium high in a sauté pan just browning the bacon before adding the butter. so long as the bacon is lean, it will leave some nice residue in the pan, the beer will deglaze this residue, that is a good thing... 2. Add the beer and allow it to just boil before reducing the heat to a strong simmer. 3.add the salmon (skin side down) to the just under boil beer-y goodness. toss some sea salt on there and cover the pan. after three minutes, the fish should just begin to firm, flip it so that it's skin up. three more minutes. pull the cover off. enjoy the fragrant steam. let the liquid reduce a spell, if you like your fish on the med-rare side, pull it and cover it lightly and set aside while you reduce. 4. reduce the liquid to about half it's volume. 5. pour that goodness on the fish. 6. eat like a champ.

1/4 cup fresh lime juice
1/3 cup beer
3 tablespoons soy sauce
1/2 tablespoon minced fresh gingerroot
2 cloves garlic, minced
1 lb fresh salmon fillet
2 tablespoons green bell peppers or 2 tablespoons yellow bell peppers (or combination)
2 tablespoons lime zest (2-3 limes)
fresh ground black pepper

Steps:

  • Combine lime juice, beer, soy sauce, ginger, and garlic.
  • Mix well.
  • Place salmon fillets in shallow glass dish and pour marinade over top.
  • Turn pieces several times to coat; cover and refrigerate overnight.
  • Preheat oven, broiler or grill.
  • Remove salmon from marinade; discard marinade.
  • Broil, bake or grill for about 10 minutes (for 1" thick fillets) or until fish flakes in center.
  • Serve hot garnished with diced bell pepper, lime zest and pepper on top.

1 (12-inch) tail piece salmon fillet (about 1 1/2 pounds)
2 teaspoons garlic salt
3 tablespoons brown sugar
4 tablespoons butter, cut into small pieces
1 small red onion, thinly sliced
1 (12-ounce) bottle beer

Steps:

  • Preheat grill to medium-high heat.
  • Using aluminum foil, create an oblong cooking tray (approximately 13 inches by 8 inches by 2 inches) to be placed directly on grill. Place salmon fillet in center of tray. Season first with garlic salt, sprinkle with brown sugar, and then cover with pieces of butter. Top with sliced red onions. Pour beer of choice into tray to just below the highest point of the fillet. Cover tray with aluminum foil to envelope fish completely. Place tray on grill, cover with lid, and grill for approximately 8 minutes or until just cooked through.
