BEER CHEESE FONDUE
My family always wants me to make this for them! It's so perfect for the Holidays! I put this out on the table with other appetizers and let everyone dip at their own pace.

Steps:
- Rub inside of fondue pot with garlic.
- Discard garlic.
- Do at stovetop-------------------.
- Add beer to fondue pot and heat until boiling.
- Turn down heat.
- Coat grated cheeses with flour and add to pot.
- Heat slowly.
- At the table------------------.
- Turn on your fondue pot element.
- Put your fondue pot into place.
- Place one cube of bread onto the your fondue spear and dip into Cheese mixture.
- If mixture become too thick, thin it with a little beer by pouring it directly into fondue pot.

BEER CHEESE FONDUE IN SOURDOUGH ROUND (RAREBIT IN A HOLE)
This is so GOOD!!! I originally got this recipe from a "Best of Bridge" cookbook. I've changed the recipe a bit and also expanded the recipe since the original only filled my bread-bowl about a quarter full. It's so awesome and even reheats well (wrapped in foil in the oven), if you happen to have leftovers. *You can also optionally stir in bacon bits and finely chopped green onion before serving.

Steps:
- Combine all ingredients except bread. Set aside.
- Hollow out the bread round leaving 1/2" sides. Cut pulled out bread into 1"cubes and also cut additional bread loaf into slices or cubes and put in a plastic bag until ready to serve.
- Fill bread-bowl with cheese mixture, wrap in foil and bake at 375 degrees for 1 hour.
- Place on a platter and serve with bread cubes and/or slices around the bread-bowl.

BEER CHEESE FONDUE
Soft pretzels, sliced German sausages, pickled garden vegetables, and roasted Brussels sprouts can all be dipped in this oozy cheese sauce for one amusing wintertime party. Swiss Alpine-style cheeses are the best choice for fondue, given their earthy, robust flavor and excellent melting quality. Substitute any easy-melting cheese for the Gruyère found in this recipe. Raclette, Emmentaler, Cheddar, Fontina, and Gouda are all delicious choices, and can be blended for a more complex flavor.

- Bring the beer to a boil over medium-high heat in a fondue pot or a medium heavy saucepan. Reduce the heat to medium-low so the beer is gently simmering.
- Toss the Gruyère with the cornstarch in a medium bowl. Add the cheese mixture to the beer one large handful at a time, stirring the cheese in a figure-eight pattern until completely melted before adding more. Stir in the mustard, Worcestershire sauce, and paprika, and season with salt. Serve immediately. The fondue can be refrigerated, covered, for up to 2 days and then rewarmed over medium-low heat, stirring in a figure-eight pattern, until the cheese is melted and hot.
WELSH RAREBIT
A classic English tavern snack, Welsh Rarebit is essentially a rich beer cheese fondue drizzled over toasted bread - it's cheesy comfort food at its simplest. The English have long enjoyed topping their toast with a wide range of tasty foodstuffs, and no dish captures this tradition better than the 18th century tavern nosh known as Welsh Rabbit, which, oddly enough, contains no rabbit whatsoever. The moniker was designed as a slight by the English, who created the dish, toward the Welsh, whom they considered shifty, shiftless, and usually broke. So broke, in fact, that they might actually call a piece of cheese a rabbit...which doesn't make a lick of sense. As for the "rarebit" variation, we can only assume it was devised in an effort to appease customers angered by the fact that there was no rabbit in their rabbit. Whatever you call it, I certainly would say that any dish that marries beer, cheese, and toast qualifies as good eats. When I make it, I prefer to do so right in front of the fire with my camp stove, which is basically a cast iron Dutch oven with little feet on it. - Melt the butter over medium-low heat in a small saucepan. Whisk in the flour and cook, whisking constantly, for 2 to 3 minutes, being careful not to brown the flour.
- Whisk in mustard, Worcestershire sauce, salt, and pepper until smooth. Add the beer and whisk to combine. Pour in the cream and whisk until well combined and smooth. Gradually add the cheese, stirring constantly, until the cheese melts and sauce is smooth, 4 to 5 minutes. Add the hot sauce. Pour over toast and serve immediately.

- Combine cheeses and cornstarch in a bag. Shake to make sure cheese is coated with cornstarch.
- Rub inside of pot with garlic clove cut in half. Discard garlic.
- Pour in beer. Warm until bubbles rise to the surface. Do not cover or boil.
- Remember to stir constantly from now one. Add a handful of cheeses, keeping the heat medium (do not boil), when melted add another handful. After all the cheese is melted and bubbling add a dash of pepper sauce. Transfer to fondue pot and keep warm over fondue burner.
- Note: If fondue becomes too thick add a bit of warmed beer. If it separates combine 1 T cornstarch and 2 T wine and stir into fondue.

- Cut bread into bite-sized pieces.
- Place bread pieces in ungreased 15x10x1-inch baking pan.

This take on Welsh Rarebit is a great last-minute party snack or part of a simple dinner. The cheese topping is like a fondue--just switch out the Gruyere cheese for Cheddar and white wine for beer. It takes about 10 minutes to put together and you can keep it warm in the oven if you don't want to dig in right away.

- Preheat the broiler.
- Melt the butter in a medium saucepan over medium-low heat. Add the flour and whisk for 1 minute. Add the Cheddar, dry mustard, paprika and cayenne and a pinch each of salt and black pepper and whisk to combine. As the cheese melts, gradually add the pale ale, stirring to combine. Bring to a simmer, whisking until smooth. Remove from the heat.
- Place the baguette slices on a baking sheet. Spoon on the cheese sauce and coat each slice in the middle. Broil until the cheese is bubbly and browned, about 2 minutes (watch closely, as broilers vary). Top with chives and enjoy!
