Beer Batter for Fish, Shrimp & Onion Rings image

Great for a fish fry. Mushrooms and other veggies go great too, as well as chicky tenders, and squares of marinated tofu. Experiment and have fun! Makes enough for 1 pound of seafood.

Number Of Ingredients 6

2/3 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon baking powder
1/2 cup beer
1 egg
1 tablespoon vegetable oil

Steps:

  • Mix flour, salt, and baking powder in a bowl using a fork.
  • Beat beer, egg and oil together in a separate bowl.
  • Stir into flour mixture until well blended.
  • Batter should be pretty smooth and moderately thick.
  • Dip fish, shrimp, or onion slices in coating and deep-fry in hot oil that has been heated to 350 degrees, until it becomes golden.
  • Drain, and serve while hot and crispy.
  • This recipe also works well with chicken tenders and vegetable pieces; whatever you like to coat with beer batter.

1 cup flour
1 cup beer (I prefer Budweiser)
2 large onions (I prefer Vidalias)
vegetable oil (For Deep Fat Frying)

Steps:

  • Put the flour into a bowl and make a well in the center.
  • Pour the beer into the well and whisk until combined.
  • Let rest, covered for 1 hour.
  • Peel onions and cut crosswise 1/3 inch thick and separate into rings.
  • Dust the onion rings with the additional flour, shaking off the excess, and coat them with the batter.
  • Working in batches, fry the onion rings in 2 inches of preheated 370 degrees, oil until they are golden.
  • Transfer them with a slotted spoon to paper towels to drain and sprinkle them with salt to taste.

3 cups all-purpose flour
2 eggs, separated
1 cup beer
4 tablespoons butter, melted
salt to taste
3 large onions, sliced into rings
2 quarts oil for frying

Steps:

  • Sift flour into a large bowl. In another large bowl, whisk egg yolks. Mix in beer, butter and salt. Set aside 1 cup of flour for dipping the onion rings. Slowly stir the egg yolk mixture into the remaining flour and mix well. Allow the mixture to stand 30 to 60 minutes.
  • Heat deep fryer to 375 degrees F (190 degrees C).
  • In a small bowl, stiffly beat the egg whites. Gently combine the egg whites with the batter.
  • Coat each onion ring with flour and dip into batter.
  • Deep fry the battered rings, several at a time, until golden brown. Drain on paper towels and serve.

2 teaspoons salt

  • In med-sized pot, heat oil 350°F.
  • Slice onions in to 1/4 slices and seperate.
  • In med-bowl, mix beer, flour, paprika and salt into a batter.
  • Dip onion rings into batter until well coated, then fry in small batches for approximately 2 minutes, or until golden brown. Turn once during frying.
  • Remove and drain on a paper towel.
  • Serve immediately.
  • I love mine dipped in ketchup, and washed down with a beer.

About 2 weeks ago my friend Ellie and I went up to HOPE, Idaho. We spent the day on the lake and enjoyed mother nature. While thre we had a delish lunch, and onion ring appetizer were the best we ever had! We conjoled, begged then flirted with the cook..untill we got his "secret" recipe. The restaurant has to remain a secret.While there we met another JAP cook LORETTA J. that lives in Hope. She was teaching lessons on how to sketch at the local gift store. What a wonderful lady she turned out to be. Last weekend she drove down for a visit with us! BUT..here it is, the "secret"" recipe..

2-3 - large sweet onions
8 ounce(s) ice cold beer
8 ounce(s) flour
1/8 teaspoon(s) baking soda
1 tablespoon(s) corn starch
dash - of salt

Steps:

  • WIPE the onions off with a paper towel. Leave the skins on and slice the end off. Then slice the onions into about 1/4 inch wide slices..When the rings start getting small, stop cutting. Start warming the oil...so it will be ready for your onions.
  • Gently remove only the paper outer skins from onions. Then seperate the rings into single rings, by pushing the centers out. The center and the ends of the onion, can be chopped up and used for a salad, spaghetti sauce....et. Maybe my CREAMED ONION RECIPE ! You only want the larger rings.
  • In a bowl combine the flour,salt,and baking soda...Mix well. THen add the ice cold beer. Mix again. you want a batter like pancake mix. If the batter get thick, add a littl water...or more beer..you can alwys drink what is left!....LOL Dip you rings into batter, one at a time with a fork....cook in the hot oil.in a skillet.. 2-3 at a time. Both sides. Drain on a paper towel, and cook more. THey can be kept warm in a slow oven...on a cookie sheet lined with a new paper towel...till serving time. Use a sauce of your choice. 2 egg yolks (save whites)
2/3 c beer any kind but not lite
2 Tbsp vegetable oil
3 to 4 large spanish onions
2 egg whites

2 large onions
2 qt peanut oil
1 cup all-purpose flour
1⁄2 cup cornstarch
1 tsp baking powder
1⁄4 tsp baking soda
1⁄2 tsp paprika
¾ cup light-flavored beer, ice-cold
1⁄4 cup vodka with 40% alcohol
kosher salt

Steps:

  • First, peel the onions, cut them into 1/2-inch slices, and separate them into rings. Put them into a freezer for 1 hour in a zipper-lock bag.
  • Then, thaw the onion rings with tepid running water. Drain thoroughly on paper towels or kitchen cloth. Remove the membrane from each ring and set aside.
  • In a large bowl, mix flour, cornstarch, baking powder, baking soda, and paprika. In another bowl, mix beer and vodka.
  • Now, slowly pour in the beer and vodka mixture into the flour mixture, stirring constantly. Adjust the amount of liquid, so the density of the batter resembles a thick paint.
  • Heat the oil to 375˚F in a large wok or a Dutch oven.
  • Meanwhile, dip the onion rings into the batter, let the excess batter drip off, and gently place the onions into the hot oil.
  • Fry the rings for 2 minutes, then turn them over and fry for 2 more minutes.
  • Drain the onion rings on paper towels, season with salt, and serve.
