POTATO TACO CASSEROLE

Bake potatoes and beef, sprinkled with taco-seasoned cheese and tortilla chips to make delicious casserole dinner for five.

1/2 pound ground beef
1 package Betty Crocker™ au gratin potatoes
2 1/4 cups boiling water
2/3 cup milk
1 cup shredded taco-seasoned cheese (4 ounces)
1 cup coarsely broken tortilla chips

Steps:

  • Heat oven to 400°F.
  • Cook beef in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain.
  • Mix uncooked Potatoes, Sauce Mix, boiling water and milk in ungreased 2-quart round casserole. Stir in beef and 1/2 cup of the cheese.
  • Bake uncovered about 30 minutes or until top is light golden brown. Sprinkle chips over casserole; sprinkle remaining cheese over chips. Bake 3 to 5 minutes longer or until cheese is melted. Let stand 2 minutes before serving.

Perfect for buffets, parties or weeknight dinners, this 40-minute casserole features seasoned ground beef, tortilla pieces, picante sauce and lots of Cheddar cheese.

1 pound ground beef
1 can (10 3/4 ounces) Campbell's® Condensed Tomato Soup
1 cup Pace® Chunky Salsa OR Pace® Picante Sauce
1/2 cup milk
6 flour tortillas (8-inch) OR 8 corn tortillas (6-inch), cut into 1-inch pieces
1 cup shredded Cheddar cheese (about 4 ounces)

Steps:

  • Cook the beef in a 10-inch skillet over medium-high heat until well browned, stirring often. Pour off any fat.
  • Stir the soup, salsa, milk, tortillas and half the cheese in the skillet. Spoon the beef mixture into a 2-quart shallow baking dish. Cover the baking dish.
  • Bake at 400 degrees F for 30 minutes or until the beef mixture is hot and bubbling. Sprinkle with the remaining cheese.

This was emailed to me by Campbell's soup Co. I made some modifications and adjustments per some reviews on the website. I must admit that this is one of the tastiest and easiest to put together casseroles that I have made. Please note that you can use corn tortillas also. I hope you enjoy it as much as my son and I did. Hint: Use a pizza cutter or kitchen scissors to cut tortillas.

1 1/2 lbs ground beef
1 package taco seasoning
1 (10 3/4 ounce) can tomato soup
1 cup chunky salsa
1/2 cup milk
1 cup sour cream
1 (10 ounce) box frozen corn, thawed
6 -8 flour tortillas, cut into 1 inch pieces (8-6")
1 cup shredded cheddar cheese (I used more)

Steps:

  • Cook beef in skillet until browned.
  • Pour off fat.
  • Add taco seasoning, add water according to package directions.
  • Cook until seasonings are well blended Add soup, salsa, milk, sour cream, corn, tortillas and half the cheese.
  • Stir.
  • Spoon into a 9X13 baking dish.
  • Cover.
  • Bake at 400 degrees for 30 minutes or until hot.
  • Sprinkle with remaining cheese and allow cheese to melt.

1/2 cup milk
1/2 cup butter or 1/2 cup margarine
1 lb ground beef
1 (1 1/4 ounce) package taco seasoning mix (taco bell home originals preferred)
3/4 cup water
3/4 cup sour cream (breakstone "or" knudsen preferred)
1 1/2 cups shredded cheddar cheese, divided
1 cup salsa (Taco Bell Home Originals thick 'n chunky preferred)

Steps:

  • Preheat oven to 400 degrees.
  • Prepare dinner as directed on package.
  • While macaroni is cooking, brown meat and drain.
  • Add taco seasoning mix and water to the meat; simmer 5 minutes.
  • Stir sour cream into prepared dinner.
  • Spoon half of the dinner mixture into 8-inch square baking dish; top with layers of the meat mixture, 1 cup of the cheese and remaining dinner mixture.
  • Cover.
  • Bake 15 minute.
  • Top with salsa and remaining 1/2 cup cheese.
  • Bake, uncovered, an additional 5 minutes or until cheese is melted.

1 lb lean (at least 80%) ground beef
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons butter or margarine
1 small onion, chopped (1/4 cup)
3 tablespoons all-purpose flour
2 teaspoons chopped fresh thyme leaves
3 cups milk
3 cups shredded mild Cheddar cheese (12 oz)
6 medium white potatoes (2 1/2 lb), peeled, thinly sliced (6 cups)

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 10-inch skillet, cook beef, salt and pepper over medium-high heat 5 to 7 minutes, stirring frequently, until beef is thoroughly cooked; drain.
  • Meanwhile, in 3-quart saucepan, melt butter over medium-low heat. Add onion; cook about 2 minutes, stirring occasionally, until tender. Stir in flour. Cook 1 to 2 minutes, stirring constantly, until bubbly; remove from heat. Stir in thyme.
  • Stir milk into onion mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Stir in 2 cups of the cheese until melted.
  • Spread half of the potatoes in baking dish. Top with beef; spread remaining potatoes over beef. Pour cheese sauce over potatoes.
  • Cover with foil; bake 45 minutes. Sprinkle remaining 1 cup cheese over potatoes. Bake uncovered 15 to 20 minutes longer or until top is brown and bubbly and potatoes are tender. Let stand 5 minutes before serving.
