3/4 lb ground beef
1/2 small onion, chopped
1/2 teaspoon dried thyme
1 1/2 cups rice, cooked
1/2 red bell pepper, chopped
1/2 avocado, peeled pitted and chopped
1/4 cup fresh parsley, chopped
3 tablespoons olive oil
3 tablespoons seasoned rice vinegar
3 pita bread rounds, cut in half
lettuce leaf
tomatoes, sliced

Steps:

  • Brown beef and onion 6 to 8 minutes in a large skillet over medium-high heat, stirring to break up meat.
  • Drain fat; stir in thyme.
  • Combine rice, red pepper, avocado and parsley in medium bowl.
  • Add meat mixture; mix lightly.
  • Whish together oil and vinegar.
  • Pour over salad mixture; toss lightly.
  • Season with salt and pepper if desired.
  • Fill pita halves with lettuce, tomatoes and salad mixture.

4 pounds uncooked long grain rice
1 quart mayonnaise
2 cups finely chopped onion
2 cups French salad dressing
1/2 cup prepared mustard
4 teaspoons salt
1 teaspoon pepper
6 pounds cubed fully cooked ham
36 hard-boiled large eggs, chopped
8 cups (2 pounds) shredded cheddar cheese
6 cups thinly sliced celery
4 cups sweet pickle relish
2 cups diced pimientos, drained

Steps:

  • Cook rice according to package directions. Combine the mayonnaise, onion, dressing, mustard, salt and pepper; add to hot rice and mix well. Cool to room temperature. , Fold in ham, eggs, cheese, celery, relish and pimientos; mix well. Chill for 2-3 hours.

Turn a rice and pasta blend into an easy main dish by stirring in hearty ground beef and colorful vegetables.

1 pound lean ground beef
2 1/2 cups hot water
3/4 cup baby-cut carrots, cut lengthwise in half
1 tablespoon butter or margarine
1/4 teaspoon pepper
1 package (6.4 ounces) four-cheese rice and pasta blend
1 1/2 cups broccoli flowerets
1/2 cup cherry or grape tomatoes, cut in half

Steps:

  • Cook beef in 12-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain.
  • Stir water, carrots, butter, pepper, rice mixture and contents of seasoning packet into beef. Heat to boiling; reduce heat. Cover and cook about 15 minutes or until rice and carrots are almost tender.
  • Stir in broccoli. Cover and cook 5 minutes or until crisp-tender. Stir in tomatoes. Cook uncovered about 1 minute or until heated.

Great black bean and rice salad!

⅔ cup uncooked white rice
1 ⅓ cups water
¾ cup black beans, drained and rinsed
1 large tomato, seeded and diced
¾ cup shredded Cheddar cheese
⅓ cup sliced green onions
⅓ cup vegetable oil
¼ cup vinegar
1 tablespoon diced jalapeno peppers
½ teaspoon white sugar
salt to taste
1 avocado - peeled, pitted and diced

Steps:

  • In a saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Remove from heat and chill.
  • In a large bowl, mix together the rice, beans, tomato, cheese and green onion.
  • In a small bowl, whisk together the oil, vinegar, peppers, sugar and salt. Pour over the rice mixture and toss to coat. Cover and refrigerate salad for 30 minutes. Top with avocado just before serving.
