This easy dish was in a back issue of Taste of Home. If you like onions--and who doesn't, right?--you will love this extra-oniony casserole. So quick and easy to prepare in under 30 minutes.

1 lb ground chuck
1 small onion, chopped
1 can(s) (10.5 oz.) condensed french onion soup
1 1/2 c shredded part-skim mozzarella cheese
1 tube(s) (12 oz.) refrigerated buttermilk biscuits

Steps:

  • 1. In a large skillet over medium heat cook ground beef and onion until beef is no longer pink; drain.
  • 2. Stir in the French onion soup; bring to a boil. Transfer to an ungreased 9-inch deep dish pie plate. Sprinkle with the mozzarella cheese.
  • 3. Bake in a preheated 350-degree oven for 3 minutes, or until the cheese is melted. Top with the biscuits and bake 15-20 minutes longer or until biscuits are golden brown.

This quick and easy comfort food pot pie is a great way to get a meal on the table in no time.

1 lb ground beef
1 can(s) beef with vegetables & barley soup
1/2 c water
1 pkg 10-oz. pkg frozen peas & carrots, thawed and drained
1/2 tsp salt
1/8 tsp garlic powder
1/8 tsp coarsely ground black pepper
1 c chedddar cheese, shredded (or your choice of cheese)
1 can(s) french-fried onion rings
1 pkg refrigerated biscuits

Steps:

  • 1. Preheat oven to 350 degrees F. In a large skillet, brown ground beef leaving some chunks. Drain well on paper towels.
  • 2. Return beef to pan and add soup, water, peas and carrots, and seasonings. Bring mixture to a boil; then reduce heat and simmer, uncovered, for approx. 5 minutes.
  • 3. Remove skillet from heat and stir in 1/2 cup cheese and 1/2 can french-fried onion rings.
  • 4. Pour mixture into a greased 12 x 8 baking dish. Cut each biscuit in half and place halves, cut side down, around the edge of the casserole. Bake, uncovered, for 15-20 minutes or until biscuits are done.
  • 5. Top with remaining cheese and french-fried onions - bake an additional 5 minutes or until onions are golden brown.

SLOW-COOKER BEEFY FRENCH ONION SOUP



Slow-Cooker Beefy French Onion Soup image

Fantastic French onion soup is made even heartier with beef stew meat. Start the soup in the morning and come home to a no-fuss dinner.

7 small onions, cut in half and thinly sliced (about 7 cups)
1 tablespoon butter or margarine, melted
2 tablespoons sugar
2 dried bay leaves
1 1/2 pounds beef stew meat
3 cans (10 1/2 ounces each) condensed beef consommé
1/4 cup dry sherry or apple juice
1 cup apple juice
1/4 teaspoon dried thyme leaves
8 slices ( 1/2 inch thick) French bread, toasted
2 cups shredded Swiss cheese (8 ounces)

Steps:

  • Toss onions, butter and sugar in 5- to 6-quart slow cooker. Top with bay leaves and beef.
  • Cover and cook on low heat setting 9 to 10 hours or until onions are deep brown.
  • Stir in beef consommé, sherry, apple juice and thyme. Increase heat setting to high. Cover and cook 10 minutes or until hot. Remove bay leaves.
  • To serve, spoon into ovenproof soup bowls and top each serving with slice of toast and 1/4 cup cheese. If desired, broil with tops 6 inches from heat 3 to 5 minutes or until cheese is bubbly and begins to brown.
