BEEF AND CHEESE MANICOTTI

Steps:
- Heat a heavy medium skillet over medium heat. Add 1 teaspoon of the olive oil, onion and ground beef. Season with salt and pepper. Saute until the meat browns and the onion is translucent, about 5 minutes. Remove from the heat, and cool.
- Brush 1 teaspoon of oil over a large baking sheet. Cook the manicotti in a large pot of boiling salted water until slightly softened, but still very firm to the bite, about 4 to 6 minutes. Using a slotted spoon, transfer the manicotti from the pot to the oiled baking sheet and cool.
- Meanwhile, combine the ricotta, 1 1/2 to 2 cups mozzarella cheese, 1/2 cup Parmesan, and parsley. Add the garlic, salt, and pepper to taste, and mix. Stir the cooled meat mixture into the cheese mixture.
- Preheat the oven to 350 degrees F.
- Brush the remaining 2 teaspoons of oil over a 13 by 9 by 2-inch glass baking dish. Spoon 1 1/2 cups of the marinara sauce over the bottom of the prepared dish. Fill the manicotti with the cheese-meat mixture. Arrange the stuffed pasta in a single layer in the prepared dish and spoon the remaining sauce over.
- Sprinkle the remaining 1 1/2 cups of mozzarella cheese, then the remaining 1/2 cup of Parmesan over the stuffed pasta. Dot entire dish with the butter pieces. Bake the manicotti uncovered until heated through and the sauce bubbles on the sides of the dish, about 30 to 35 minutes. Let the manicotti stand 5 minutes and serve.
EASY-TO-STUFF MANICOTTI
Kids can help assemble these. The string cheese makes the filling deliciously gooey. Very kid-friendly and delicious for adults too. I got this from Quick Cooking magazine.

- Cook manicotti according to package directions.
- Meanwhile, in large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
- Stir in the spaghetti sauce.
- Spread half the meat sauce into a greased 13 x 9 inch baking dish.
- Drain manicotti; stuff each shell with a piece of string cheese.
- Place over meat sauce; top with remaining sauce.
- Cover and bake at 350 for 25-30 minutes.
- Sprinkle with mozzarella cheese.
- Bake, uncovered, for 5-10 minutes until cheese is melted.

- Preheat oven to 350.
- In a large skillet, brown beef, onion and garlic. Stir in sauce, tomatoes and seasoning mix. Spoon about half of meat mixture into bottom of 11x7-inch baking dish. In medium bowl, mix cottage cheese, 1 cup cheddar and egg; stuff into shells. Arrange in baking dish. Spoon remaining meat mixture over top.
- Cover. Bake 30 minutes. Uncover; bake 10 minutes longer. Sprinkle remaining cheese on top during last 2 minutes. Let stand 10 minutes before serving. Refrigerate leftovers.

CHILI MANICOTTI
I haven't tried this yet but I hope to make it soon. The recipe calls for canned chili but this would be a nice way to use up left over homemade chili!

- Preheat oven to 350 degrees. Cook manicotti shells as directed on package; drain.
- Meanwhile, add oil to a large skillet and saute onion and garlic until tender. Stir in chili and water. Bring to a boil; reduce heat and simmer 2 minutes.
- In a small bowl combine egg, cottage cheese and cheddar cheese. Stuff into manicotti shells.
- Spoon half the chili sauce into the bottom of a greased casserole dish. Place manicotti on top and cover with remaining sauce. Cover and bake for 30 minutes. Sprinkle with additional cheddar cheese (or your preference) and bake another 5 minutes.

- In a large bowl, combine the uncooked beef, beans, chili powder and oregano. Spoon into uncooked manicotti shells; arrange in a greased 13x9-in. baking dish. - Cook and drain manicotti as directed on package using minimum cooking time (cooking for the minimum time helps prevent the shells from tearing while filling).
- Meanwhile, in 10-inch skillet, cook beef, onion and garlic over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in pasta sauce.
- Heat oven to 350°F. Spray 13x9-inch glass baking dish with cooking spray.
- Squeeze thawed spinach to drain; spread on paper towels and pat dry. In medium bowl, mix spinach, cottage cheese, mushrooms, 1/3 cup Parmesan cheese, the nutmeg and pepper.
- In baking dish, spread 1 cup of the beef mixture. Fill manicotti shells with spinach mixture. Place shells on beef mixture in dish. Pour remaining beef mixture evenly over shells, covering shells completely. Sprinkle with mozzarella cheese and 2 tablespoons Parmesan cheese.

BEEF-STUFFED MANICOTTI
Most manicotti recipes are made with cheese. My family has always enjoyed this one, because it's stuffed with meat.

Steps:
- Brown ground beef & drain.
- Cook manicotti using package directions.
- Do not drain. Run cold water over it until water in pan is cold; leave manicotti in water until needed.
- Meanwhile, combine ground beef, egg, mozzarella, bread, milk, salt & pepper. Stuff each manicotti shell. Place in greased 13x9x2" baking pan. Pour spaghetti sauce over top, cover with foil & bake in 350 degree oven for 50 minutes. (1 hour if made ahead & chilled.).
- Pass grated parmesan cheese when serving.
