I have been making a larger version of this recipe for as long as I can remember, more than 40 years. I am very happy to share with you this smaller version for an average size family. I am sure it will become your favorite as it has ours. Recipe is found in my cookbook. I have now added a picture.

1 1/2 lb lean ground beef
1 medium onion, chopped
1 medium red or green bell pepper, chopped
1 lb bacon, cut into pieces
1 c heinz catsup
3 Tbsp distilled vinegar, or prepared yellow mustard
1/3 c dark molasses
2/3 c brown sugar
1 can(s) 16 oz. kidney or lima beans
2 can(s) 16 oz. baked beans or pork n beans
1 Tbsp liquid smoke

Steps:

  • 1. Most of the ingredients used to create this recipe.
  • 2. PREHEAT OVEN TO 350 DEGREES F. In a large skillet over medium heat, brown ground beef, chopped onions and bell peppers, until cooked thourgly. Drain any excess fat.
  • 3. In a separeate pan over medium heat , saute' bacon pieces, until cooked and crispy in microwave or skillet. Remove and drain on paper towels.
  • 4. Add crumbled bacon to ground beef mixture. Mix well and stir in catsup, brown sugar,vinegar or mustard, molasses, drained kidney beans,& baked beans or pork n Beans. Stir to mix. Cover skillet and bake in preheated oven for 1 1/2 to 2 hours. Makes 8 hearty servings.

This can be a main dish or a side. My sister and I had a birthday party catered for my Aunt who was turning 80. This was one of the dishes served. It got rave reviews. I was so happy that the caterer gave me the smaller scale version of it. She adapted the recipe from several others she said. We especially like the hot and sweet...

1/2 lb bacon, sliced in 1/2 inch lengths
1 1/2 lb lean ground beef
1 c chopped onion
1 can(s) (28 ounces) pork and beans not drained, use sauce
1 c dark red kidney beans (15 ounces), drained and rinsed
1 can(s) light red kidney beans (15 ounces), drained and rinsed
1 can(s) butter beans (15 ounces), drained and rinsed
1 can(s) great northern beans, drained and rinsed
1/2 c sweet bbq sauce
1/2 c catsup
1/2 c brown sugar, firmly packed
1 tsp salt
1/2 tsp chili powder or hot pepper sauce to taste

Steps:

  • 1. In a large frying pan brown beef and bacon. Remove from pan and drain most of the drippings. Leave enough to cook onions just until tender. Mix meats and onions. Pour meat mixture into a large casserole dish or 9 by 13 inch pan. Drain and rinse all canned beans, except the can of pork and beans. Leave that sauce in. Add to meat mixture and stir together. Set aside.
  • 2. In a medium bowl mix all remaining ingredients well. Stir into meat and bean mixture which you set aside. Cover and bake for 25 minutes. Remove cover and bake for 10 minutes more. The sauce will be thin when first removed from oven. Allow to sit, uncovered for 10 minutes before serving and sauce will thicken up a bit.

COUNTRY-STYLE BEEFY BAKED BEANS image

This is my husband's favorite baked beans recipe. It's based on what he recalls of his mother's. It was trial and error until I finally got it right. Let's just say, that night, there wasn't much talkin' at the dinner table... He was too busy eatin' and goin' back for more! It's a great, hearty yet economical, dish for potlucks and church dinners, family reunions and backyard barbecues.

Number Of Ingredients 9

1 pound(s) ground beef (i usually use chuck)
1 medium sweet onion
1/3 cup(s) ketchup
2 teaspoon(s) prepared yellow mustard
2/3 cup(s) dark brown sugar
1/8 teaspoon(s) ground mustard
1/16 teaspoon(s) liquid smoke flavoring (about 6 drops)
1 pinch(es) salt
3 can(s) pork and beans, juice drained from top

Steps:

  • In a large skillet, over medium/medium-high heat, combine and cook the ground beef and onions until no pink remains and onions are translucent.
  • Drain thoroughly (I use a wire mesh strainer set over a heat resistant bowl) and set aside.
  • Preheat oven to 350ºF.
  • In a 2 quart baking dish, mix together the ketchup, yellow mustard, dark brown sugar, ground mustard, liquid smoke and salt, thoroughly.
  • Add the drained beef and onions; mix well.
  • Fold the partially drained beans into the mixture.
  • Place the dish on a baking sheet; bake at 350ºF for 45 minutes. (Total baking time is 1 1/2 hrs.)
  • After baking for the first 45 minutes, cover with lid or foil; bake, covered, another 45 minutes, until bubbly.
  • Remove from oven and allow to cool for a few minutes before serving (because it's HOT as lava!) Cover and refrigerate leftovers.
