2 Tbsp. oil, divided
1/2 cup chopped onions
1/4 cup chopped green peppers
1 clove garlic, minced
1 lb. beef sirloin tip steak, cut into 1-inch cubes
3 Tbsp. flour, divided
1-1/2 cups fat-free reduced-sodium beef broth, divided
2 Tbsp. lite soy sauce
2 Tbsp. LEA & PERRINS Reduced Sodium Worcestershire Sauce
1/4 tsp. black pepper
1 cup long-grain white rice, uncooked

Steps:

  • Heat 1 Tbsp. oil in large skillet on medium heat. Add onions, green peppers and garlic; cook and stir 5 min. or until onions are tender. Remove vegetables from skillet.
  • Toss meat with 2 Tbsp. flour in large bowl. Heat remaining oil in same skillet. Add meat; cook 8 to 10 min. or until browned on all sides, stirring frequently.
  • Add 1-1/4 cups broth, soy sauce, Worcestershire sauce and black pepper to skillet; mix well. Stir in vegetables. Bring to boil; partially cover. Simmer on low heat 1 hour or until meat is tender, stirring occasionally.
  • Meanwhile, cook rice as directed on package, omitting salt.
  • Mix remaining broth and remaining flour in small bowl until blended. Stir into meat mixture; bring to boil, stirring constantly. Simmer on medium-low heat 2 to 3 min. or until thickened. Serve over rice.

2 1/2 pounds beef stew meat
1 1/4 cups water
2 beef bouillon cubes
1 (10.5 ounce) cream of mushroom soup
1 onion (chopped)
2 (.87 ounce) packages brown gravy mix
3 cups cooked rice

Steps:

  • Spray slow cooker with non stick cooking spray. Turn onto Low setting.
  • Place stew meat in the bottom of the slow cooker.
  • In a microwave safe bowl add the water and 2 beef bouillon cubes. Bring to a boil in the microwave and then stir until cubes are dissolved.
  • Then add in the soup, chopped onion, and gravy mix packets.
  • Stir until combined and pour over the beef in the slow cooker.
  • Gently stir until all the meat is covered.
  • Cover with lid and cook on low setting for 6 hours.
  • If you like the gravy a little thicker at the end of the cooking time, add in 1 Tablespoon of cornstarch.
  • Serve over cooked rice.

1 (32 fluid ounce) container beef broth
1 (10.75 ounce) can condensed cream of mushroom soup with roasted garlic
¼ large onion, chopped
¼ large onion, sliced
1 (2 pound) beef rump roast
2 tablespoons butter
2 tablespoons all-purpose flour
4 cups cooked brown rice

Steps:

  • Mix beef broth, mushroom soup with roasted garlic, chopped onion, and sliced onion together in a slow cooker until thoroughly combined; place the beef rump roast into the soup mixture, cover the cooker, and cook on Low until beef is very tender, at least 7 hours.
  • One hour before serving time, remove the roast from the cooker and cut into bite-size pieces; remove and strain 2 cups of beef broth and set aside. Return beef pieces to the slow cooker.
  • Melt butter in a heavy skillet over medium heat and stir in flour to make a paste. Reduce heat to low and cook and stir the flour mixture until it bubbles and turns golden brown, about 15 minutes. Watch carefully because the mixture burns easily. Whisk about 1/4 cup of the reserved beef broth into flour mixture at a time and bring gravy to a simmer.
  • To serve, spoon brown rice onto serving plates and top with beef pieces; pour gravy over beef.

3 tablespoons olive oil
2 pounds beef stew meat
¼ cup all-purpose flour
5 cups water
2 (6 ounce) packages long grain and wild rice mix
1 (8 ounce) package sliced mushrooms

Steps:

  • Melt butter with olive oil in a large heavy pot or Dutch oven over medium heat. Place flour in a shallow bowl and dredge the beef tips in the flour. Brown the beef in the hot butter and oil, stirring often, about 15 minutes.
  • Pour water into the pot and scrape to dissolve browned food bits from the bottom of the pot. Stir in the flavor packets from the rice mix and dissolve; mix in the rice and mushrooms. 2 tablespoons butter
1/2 cup slivered or sliced almonds
2 cups white rice
1 orange, zested
1 lemon, zested
1 quart chicken stock
6 tablespoons extra-virgin olive oil, divided
2 pounds beef tenderloin or sirloin tips, bite size pieces
Salt
Freshly ground black pepper
1 1/2 pounds mushroom caps, cremini or white, brushed clean and halved
6 clove garlic, finely chopped
1/2 cup dry Spanish sherry
1 cup beef stock

Steps:

  • Heat a sauce pot over medium heat, add butter to the pot and melt. Add almonds and toast 3 to 4 minutes. Add rice and the zest of an orange and a lemon then turn the rice to coat, cook 1 minute. Add stock and bring to boil, reduce to simmer, cover and cook 17 to 18 minutes.
  • While rice cooks, heat a large skillet over medium-high heat with 3 tablespoons olive oil, 3 turns of the pan. Pat meat dry. When oil ripples and begins to smoke, add the beef and brown 3 minutes on each side. Remove when evenly deep brown and reserve on plate.
  • Add remaining olive oil to skillet, 3 turns, heat until oil ripples then add mushrooms and brown 7 to 8 minutes. Add garlic after 5 to 6 minutes. Season mushrooms with salt and pepper cook a few minutes more. Add sherry, reduce 1 minute, add beef stock and beef tips and their juices to pan. Reduce heat and cook 3 to 4 minutes more. Turn off heat.
  • Fluff rice with fork and serve with the beef and mushrooms.

1 (1 1/4 ounce) package onion soup mix
21 ounces water (2 soup cans water)
1 tablespoon minced garlic clove
pepper (to taste)
1 1/2 cups brown rice
16 ounces frozen peas

Steps:

  • 1. Place stew beef in crock pot.
  • 2. Pour mushroom soup and onion soup mix on top of beef.
  • 3. Add 2 soup cans of water.
  • 4. Add garlic and pepper.
  • 5. Mix all ingredients in crock pot.
  • 6. Cook on high for 1 hour and then lower setting to low, cook an additional 3 hours. Or cook on low for 6-8 hours. I cook on high for an hour to speed up the cooking process, because I usually don't remember to start dinner until lunch time.
  • 7. Add rice and peas. If you are short in time, you can cook rice and peas separately, and then serve.
  • 8. Cook an additional 2 hours.

3 lbs sirloin tip steaks, cut into 1-inch cubes
1/3 cup all-purpose flour
5 tablespoons olive oil, divided
1 large yellow onion, chopped
1 green bell pepper, chopped
2 garlic cloves, minced
4 cups water
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1 teaspoon seasoning salt
1/2 teaspoon black pepper
1/3 cup water
3 tablespoons all-purpose flour
hot cooked rice
1/2 tablespoon dried parsley, for garnish

Steps:

  • In a large Dutch oven, heat 2 tablespoons olive oil over medium heat.
  • Add onion, bell pepper and garlic.
  • Cook for about 5 minutes or until veggies are tender.
  • Remove veggies from pan and place on a dinner plate.
  • In a bowl, toss together beef tips and 1/3 cup flour.
  • Add remaining 3 tablespoons of oil to the Dutch oven.
  • Place beef tips in Dutch oven and brown on all sides and cook for about 10 minutes, stirring regularly.
  • Add veggies back to the Dutch oven.
  • Add 4 cups water, soy sauce, Worcestershire sauce, seasoned salt and pepper, stirring well.
  • Bring to a boil.
  • Reduce heat and cover partially.
  • Let simmer for 1 hour.
  • In a small bowl, combine 1/3 cup cold water and 3 tablespoons flour, mix well.
  • Add flour mixture to the beef tips, cooking for 2-3 minutes or until mixture thickens.
  • Serve over hot cooked rice.
  • Garnish with parsley.

Steps:

  • 1. Cut Chuck Roast into bite size pieces
  • 2. Season meat with garlic powder and salt
  • 3. Coat meat with flour
  • 4. Heat oil in skillet
  • 5. Fry flour coated meat in pan until lightly browned
  • 6. Place browned meat in crock pot
  • 7. Once, all meat is browned. Use left over flour and brown it in the left over oil.
  • 8. Pour browned flour in crock pot
  • 9. Add enough water to barely cover the meat
  • 10. Cook on low for 8 hours or cook on high for 4 hours. Stir every couple of hours
  • 11. When the meat is done, cook rice according to package.
  • 12. Serve with Beef Tips covering the rice.

3-5 lb boneless chuck roast
1-2 box beef broth, reduced sodium
2-3 tsp salt
1-2 tsp pepper
1-2 tsp garlic powder
1-2 tsp onion powder
1 tsp rosemary, dried
2 pkg brown gravy mix-i use mccormick or pioneer
2 c rice or egg noodles

Steps:

  • 1. The night before, trim roast by cutting away as much fat as possible
  • 2. Cut roast into bite size cubes
  • 3. Add all dry ingredients to the cubed meat inside a gallon size ziplock bag and toss until all the meat is coated. Refrigerate meat (I prepare the night before to let it marinate overnight)
  • 4. The next morning around 9 am to serve at 5 pm, Pour the beef broth into your crockpot and slowly add your roast being careful not to splatter. I like to add a little rosemary to the broth also.
  • 5. Stir the meat until it's all submerged into the broth and place the lid. Cook on low setting for 8 hours.
  • 6. At around the 7 hour mark, add your gluten free gravy mix to cool water and whisk until it's all combined. Pour into crockpot and stir. Place the lid and continue cooking for the remaining hour.
  • 7. Boil rice or noodles during the last 30 minutes. (I use boil-in-bag rice because I am rice challenged and well, I'm also lazy. But, you can fix your rice anyway you'd like. I've also used egg noodles too and that's just as good!)
  • 8. When your beef tips are finished, stir briskly with a fork or whisk to loosen up the meat. When all of the meat is shredded, add in your rice or noodles and stir. Voilà!! It's ready! I usually serve with my "famous" green beans and honey/cinnamon carrots with this meal.

1 small onion, chopped
1 (32 fluid ounce) container beef broth
2 (.75 ounce) packets dry brown gravy mix
1 tablespoon browning sauce (such as Kitchen Bouquet®)
½ teaspoon Worcestershire sauce
1 bay leaf
1 teaspoon dried parsley
¼ cup Merlot wine
¼ cup butter
1 small onion, chopped
1 cup white rice
2 (10.5 ounce) cans beef consomme

Steps:

  • Whisk flour, 1/4 cup Worcestershire sauce, garlic powder, and seasoned salt in a large bowl until smooth and toss the beef tips in the flour mixture to coat. Remove beef with a slotted spoon.
  • Heat vegetable oil in a large heavy pan or Dutch oven over medium heat; cook and stir mushrooms and 1 small chopped onion in oil until the onion is translucent, about 8 minutes. Stir in seasoned beef tips and cook and stir until the beef is browned and no longer pink inside, about 10 minutes.
  • Pour in beef broth and whisk dry brown gravy mix into the beef mixture until smooth; stir in 1/2 teaspoon Worcestershire sauce, bay leaf, parsley, and merlot. Bring to a simmer and reduce heat; simmer until gravy has thickened, about 10 minutes. Transfer to a slow cooker, cover, and cook on Low for 8 hours.
  • About 25 minutes before serving time, melt butter in a saucepan over medium heat and cook and stir 1 small chopped onion until translucent, about 5 minutes. Stir rice into the mixture and pour in beef consomme. Bring to a boil, reduce heat to low, and cover. Simmer rice until tender and the liquid is absorbed, about 15 minutes; let rice stand for 5 minutes covered before fluffing with a fork. Serve beef tips and gravy over the rice.

3 1/2 pounds beef sirloin tip roast, fat trimmed and cut into cubes
2 packages brown gravy mix
3 1/2 cups water
1 can mushrooms, optional
2 cups long-grain brown rice
1/2 teaspoon salt
1 beef bouillon cube
1 small onion, finely chopped

Steps:

  • Place the cubed beef and chopped onion in the bottom of the slow cooker. Mix both packets of brown gravy mix with 1 cup of water, and pour over the beef tips. Add the mushrooms and liquid from the can, if using. Add bouillon cube and set the slow cooker to high for 3-4 hours (or low for 6-8 hours). Place the brown rice, salt and remaining 2 1/2 cups of water in a wide, shallow pan. Bring it to a boil. Reduce the heat to simmer, cover the pan and cook for 30 minutes. 1 (3-5 pound) braising roast (see note)
Freshly ground black pepper, to taste
1/2 teaspoon of Cajun seasoning (like Slap Ya Mama), or to taste
1 tablespoon of canola oil
1/2 cup of beef broth
1-1/2 cups of water
Splash of red wine, optional
1 envelope of brown gravy mix
1/4 teaspoon dried thyme
Dash of Worcestershire sauce
Dash of hot sauce
Cooked rice or egg noodles
Slurry of cornstarch and water, optional

Steps:

  • Heat oil in a cast iron skillet over medium high heat. Cut meat into large cubes and toss with the black pepper and Cajun seasoning. Go light on the Cajun seasoning, since there is salt present in it and in both the commercial broth and the packaged gravy mix, so keep that in mind if you're watching your sodium. Wait to add any additional salt at the end, after tasting. Sear the meat in the hot oil until browned, transfer to crockpot. Add beef broth to the skillet and deglaze the skillet to remove all the browned bits. Transfer all of the liquid to the crockpot. Whisk together the water, wine, brown gravy mix, thyme, Worcestershire and hot sauce; pour into the crockpot. Cover and cook on low for 8 to 10 hours or until fork tender. Remove beef tips, cover to keep warm, and set aside. Turn crockpot up to high and cook until gravy thickens. Can also carefully transfer to a saucepan on the stovetop to speed up thickening. If gravy is not thick enough, stir 1 tablespoon of cornstarch into a small amount of cool water to make a slurry, then whisk that into the gravy and bring to a boil. Reduce heat and simmer until thickened. Taste, adjust seasonings, and return tips to the gravy, just to warm through. Serve over rice or noodles. Note: Use a braising type of roast for this recipe. You'll want an eye or bottom round (not top round) or a chuck (shoulder, arm, or blade) roast. I used a packet of Zatarain's Cajun brown gravy mix. If you prefer not to use packaged products, you can substitute homemade gravy for this recipe. Simply eliminate the gravy packet and make your own gravy from the drippings when the beef is cooked through and fork tender.
