BEEF SUMMER SAUSAGE
This is a ground beef summer sausage you can make at home. It takes a while, but have you seen the prices of store bought summer sausage?! This recipe is well worth the wait. You can also wrap them in foil and freeze them.

Steps:
- In a large bowl, combine the beef, meat tenderizer, cayenne pepper, ground black pepper, garlic powder, brown sugar, mustard powder and peppercorns and mix well. Pour the liquid smoke over the mixture, but do not mix. Cover and place in the refrigerator for at least 24 hours.
- Preheat oven to 150 degrees F (65 degrees C).
- Remove the beef mixture from refrigerator and mix well. Roll into 1 1/2x9 inch logs and place in a 9x13 inch baking dish.
- Bake at 150 degrees F (65 degrees C) for 4 hours. Remove from oven and let cool.

Steps:
- Mix all ingredients together and form into rolls 2 inches in diameter, about 4 rolls.
- Wrap each roll in aluminum foil and refrigerate 24 hours.
- Place foil wrapped rolls in water.
- Cover and simmer 1 hour or bake on a rack in oven for 1 hour at 350 degrees.
- When cool, open the foil and drain.
- Wrap in plastic wrap and refrigerate.
- May be frozen either before or after cooking.
- Great to serve as an appetizer on crackers with a soft cheese.

- 1st day mix thorougly and refrigerate covered.
- 2nd day knead like bread cover and refrigerate.
- 3rd day repeat 2nd day instructions.
- 4th day form into 5 rolls about 1 1/2 inch thick.
- put on broiler pan and bake at 175 degrees for 4 hours turning once every hour until end of cooking time.
- drain on rack.
