1 lb round steak, boneless, lean, about 1/4 inch thick
1 tablespoon margarine, reduced calorie
1/2 cup onion, chopped
1 garlic clove, finely chopped
3 cups mushrooms, sliced (about 8 ounces)
1/4 cup dry red wine
2 tablespoons cornstarch
1 cup condensed beef broth
1/4 teaspoon pepper
3/4 cup plain nonfat yogurt
2 cups noodles, cooked (or rice)
2 tablespoons parsley, fresh & chopped

Steps:

  • Trim fat from beef steak; cut beef with grain into 2-inch strips. Cut strips diagonally across grain into 1/4-inch slices. (For ease in cutting, partially freeze beef, about 1-1/2 hours.).
  • Heat margarine in 10-inch nonstick skillet over medium heat; Cook onion and garlic, stirring occasionally, until onion is softened. Stir in beef and mushrooms. Cook about 7 minutes, stirring occacionally, until beef is no longer pink. Stir in wine; reduce heat. Cover and simmer 10 minutes.
  • Mix cornstarch and broth; stir into beef mixture. Cook over medium-high heat, stirring occasionally, until thickened; remove from heat. Stir in pepper and yogurt; reduce heat. Cover and simmer about 30 minutes, stirring occasionally, until beef is tender.
  • Serve over noodles; sprinkle with parsley.

1 lb 97% lean ground beef
1 (11 ounce) can low-fat cream of mushroom soup
1/3 cup skim milk
1/2 cup low-fat sour cream or 1/2 cup fat free sour cream
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 small onion, diced
1 yellow bell pepper, diced
3 garlic cloves, crushed
1/2 lb egg noodles or 2 cups cooked rice

Steps:

  • Brown the hamburger, onion, bell pepper, and garlic in a large saucepan.
  • Drain.
  • Add soup, milk, worcestershire, sour cream, salt, and pepper.
  • Heat through.
  • Serve over noodles or rice.
  • You can also add a can of mushrooms, drained, or slice some fresh ones and cook them along with the hamburger-bell pepper saute.

2 pounds beef chuck roast
½ teaspoon salt
½ teaspoon ground black pepper
1 tablespoon butter
½ pound white mushrooms, sliced
4 green onions, sliced (white and green parts)
2 tablespoons butter, divided
⅓ cup white wine
¼ cup all-purpose flour
1 ¼ cups reduced-sodium beef stock, divided
1 teaspoon prepared mustard
⅓ cup light sour cream
salt and ground black pepper to taste

Steps:

  • Remove any fat and gristle from the roast and cut into strips 1/2-inch thick by 2-inches long. Season with 1/2 teaspoon salt and 1/2 teaspoon pepper.
  • Melt 1 tablespoon butter in a large skillet over medium heat. Add mushrooms and green onions and cook, stirring occasionally, until mushrooms are browned, about 6 minutes. Remove to a bowl and add 1 tablespoon butter to the skillet. Cook and stir one half the beef strips until browned, about 5 minutes, then remove to a bowl. Repeat with the remaining butter and beef strips. Pour wine into the hot skillet and deglaze the pan, scraping up any browned bits.
  • Combine flour and 1/4 cup beef broth in a jar with a tightly fitting lid and shake until combined. Stir into the skillet, whisking until smooth. Stir in the remaining broth and mustard, then return the beef to the pan. Bring to a simmer. Cover and simmer until the meat is tender, about 1 hour.

Skinny Beef Stroganoff image

I used 95%-lean ground beef and sauteed it with fresh mushrooms and onion with garlic and mustard powder. You'll want to be sure to drain off any fat and the liquid from the mushrooms. I added a combination of low-fat sour cream, low-fat mayonnaise, and low-sodium beef broth. The flavors of beef, mushrooms, and sauce all came through individually and melded together wonderfully in this skinny beef stroganoff.

1 (6 ounce) package egg noodles (such as No Yolks®)
1 pound lean ground beef
1 (8 ounce) package mushrooms, sliced
1 medium onion, diced
2 cloves garlic, minced
½ teaspoon mustard powder

½ teaspoon freshly ground black pepper
½ cup light sour cream
½ cup light mayonnaise
½ cup low-sodium beef broth

Steps:

  • Bring a pot of lightly salted water to a boil over high heat. Add egg noodles and cook, stirring occasionally, until tender yet firm to the bite, about 5 minutes.
