ROAST BEEF HORSERADISH ROLL-UPS



Roast Beef Horseradish Roll-Ups image

I make a batch of these roll-ups on Sunday and give them to the hubby and kids in their lunches throughout the week. They are also great to put out for parties!

2 (8 ounce) packages fat-free cream cheese, softened
3 ½ tablespoons prepared horseradish
3 tablespoons Dijon-style mustard
12 (12 inch) flour tortillas
30 spinach leaves, washed with stems removed
1 ½ pounds thinly sliced cooked deli roast beef
8 ounces shredded Cheddar cheese

Steps:

  • Beat the cream cheese, horseradish, and mustard together in a bowl until well blended.
  • Spread a thin layer of the cream cheese mixture over each tortilla. Arrange spinach leaves evenly over the tortillas. Place two slices of roast beef over the cream cheese. Sprinkle with Cheddar cheese, dividing evenly between tortillas. Starting at one end, gently roll up each tortilla into a tight tube. Wrap with aluminum foil or plastic wrap to keep the rolls tight. Refrigerate at least 4 hours.
  • To serve for lunch, unwrap and slice into 2 or 3 pieces. Only cut the rolls you will be using that day so the others do not dry out. To serve for parties, unwrap and slice the rolls diagonally into 1 inch sections, and arrange on a serving platter.

Don't let its name fool you--these roll-ups are worthy of a special occasion and call for using one of the leaner cuts of beef, top-round steak.

1 3/4 pounds center-cut top round steak (1 1/2 inches thick), sliced horizontally into 6 1/4-inch-thick slices
4 tablespoons unsalted butter
5 tablespoons olive oil
1/2 medium onion, finely chopped and 1/2 medium onion, thinly sliced
1 pound white mushrooms, finely chopped
Coarse salt and freshly ground pepper
6 tablespoons finely chopped fresh flat-leaf parsley
1/4 cup dry breadcrumbs
1 large clove garlic, minced
1 can (15-ounce) tomato sauce
1/2 cup red wine
Grated Beets, for serving
Buckwheat Groats, for serving

Steps:

  • Preheat oven to 350 degrees. Place slices of steak between two pieces of plastic wrap, and pound to an even thickness; set aside.
  • In a large skillet, heat 1 tablespoon butter and 1 tablespoon oil over medium-high heat. Add chopped onions, and cook until translucent. Add mushrooms; season with salt and pepper. Cook until the mushrooms have released all of their liquid and it has evaporated. Stir in parsley. Transfer to a small bowl; set aside.
  • Place one piece of steak on work surface. Spoon 1/6 of the filling onto the center of the steak. Sprinkle with 1/6 of the breadcrumbs. Roll up steak to enclose filling. Tie each end with a piece of kitchen twine. Repeat with remaining steak, filling, and breadcrumbs.
  • In the same large skillet, heat 2 tablespoons olive oil and 2 tablespoons butter. Add roll-ups, and cook until browned on all sides, about 4 minutes. Transfer roll-ups to a baking dish just large enough to hold them in a single layer.
  • In a small saucepan, heat remaining tablespoon butter and remaining 2 tablespoons olive oil over medium-high heat. Add garlic and sliced onions. Cook until onions are translucent, about 2 minutes. Stir in tomato sauce and wine. Cook until heated through. Pour over roll-ups and bake, covered, until tender, about 1 1/4 hours. Remove twine, and serve with grated beets and buckwheat groats.

ROULADEN (BEEF ROLL UPS)

This is an old fashioned German recipe that my family enjoys. It has been passed down from my mother who is from Germany, try it you will love it.

4 -6 thinly sliced steak (some grocery stores will call it rouladen)
1 large onion, chopped
8 -12 slices uncooked bacon, chopped (smoked bacon may be substituted)
pickle, chopped (opptional)
dry mustard
salt
pepper
garlic
2 -3 beef bouillon cubes

Steps:

  • Pound steaks ,if necessary, to thin them out. Season with garlic, salt, pepper and mustard to your liking. Place chopped bacon, onions, and pickles down the center of the steaks and roll up. Tie with string.
  • In large pot brown in vegetable oil, then add beef boullion and cover with water, let simmer for at least 3 hours. Add more water, if necessary, to keep them covered.
  • Remove rouladen from pot and thicken liquid to make gravy. Season to taste. Return meat to pot and heat through.
  • Serve with mashed potatoes or potato dumplings.

ASPARAGUS ROAST BEEF ROLL-UPS

12 medium asparagus spears, trimmed by snapping off the ends where they break naturally
1 teaspoon prepared horseradish, or more to taste
2 tablespoons light sour cream
Salt and pepper, to taste
6 ounces thinly sliced or shaved Simple Grilled London Broil, Pot Roast, or extra-lean deli roast beef

Steps:

  • Stovetop Instructions:
  • Half-fill a large bowl with ice water. Place a steamer rack insert in a large pot. Fill the pot with water so it reaches just below the steamer rack. Place the pot over high heat, cover it with a lid, and bring the water to a boil. Add the asparagus, cover the pot (leaving the lid slightly ajar), and steam the asparagus until crisp-tender, 3 to 5 minutes, depending on thickness. Transfer the asparagus to the bowl of ice water to stop the cooking. Drain well. Meanwhile, in a small bowl, mix the horseradish and sour cream until well combined. Season with salt and pepper. Lay 1 1/2 ounces of the beef on a flat work surface or cutting board. Spread one-quarter (about 1/2 tablespoon) of the horseradish mixture over the beef, leaving a small border. Place 3 asparagus spears at one of the narrower ends of each beef slice so the tips hang over. Roll the beef around the bundle of asparagus until you reach the other end of the beef. Repeat with the remaining roast beef, horseradish mixture, and asparagus to create 3 more roll-ups. Serve immediately.
  • Microwave Instructions:
  • Follow the directions above, except instead of steaming the asparagus, add 1 tablespoon of water and the asparagus to a medium microwave-safe bowl or dish. Cover the dish with a microwave-safe plate. Microwave on high for 1 to 2 minutes, or until the asparagus is crisp tender. Transfer the asparagus to a bowl of ice water to stop the cooking. Drain well.

GERMAN ROULADEN / BEEF ROLL-UPS



German Rouladen / Beef Roll-Ups image

Another great dish to serve with Rotkohl (Red Cabbage) on the side. I can smell them simmering at Grandma's and it has been over 50 years since she last made these great beef rolls for me.

4 beef loin steaks (about 8-10
kosher salt and freshly ground black pepper to taste
4 oz bacon
3 Tbsp butter, unsalted or olive oil, extra virgin
3 small onions
1 Tbsp flour
1 large carrot
1 celery stalk
2 large dill pickles
chopped fresh parsley
brown mustard
2 c beef broth

Steps:

  • 1. Tenderize the thin beef slices with a meat mallet on both sides evenly. You can overlap the beef steaks (if not large enough) and seam them together by pounding with the meat mallet. Season with salt and pepper. Spread thin layer of mustard on one side (where the filling will go).
  • 2. Sauté the bacon, cut into small cubes, with two finely chopped onions until onions are tender, add the chopped parsley. Cut the pickles into thin stripes (lengthwise). Spoon the bacon/onion mixture and add several of the thinly cut pickles on top of the beef.
  • 3. Roll up the beef tightly (fold sides first over the mixture, then roll up lengthwise, like a burrito) holding in place with toothpicks or wrap with string. Braise Rouladen in some oil (with little butter added for extra flavor) until browned on all sides. Add the finely chopped carrot, onion and celery, season with salt and pepper. Add little beef broth, let simmer covered for 1.5 hours or until beef is tender. More beef broth can be added during the cooking process.
  • 4. Remove Rouladen from pot, remove toothpicks or string and let rest, strain sauce through a sieve. Optionally you can thicken sauce with some flour: Return strained sauce to pot and simmer, add 1-2 tablespoons of flour to a small cup, add a little bit of cold water to the cup and stir with a fork making a thin paste. Add flour paste to the simmering sauce, stir until sauce is thickened. Season once again to taste. Remove sauce from heat and add the sour cream and 1 tablespoon of tomato paste (optional) and mix to combine everything. Return the Rouladen to the pot. Serve with Spätzle, Knödel, Rotkohl (red cabbage) mashed potatoes, asparagus or green beans.
  • 5. Return the Rouladen to the pot. Serve with Spätzle, Knödel, Rotkohl (red cabbage) mashed potatoes, asparagus or green beans.

2 cups sliced button mushrooms

1 tablespoon cornstarch
3 tablespoons water

  • If not precut, cut beef into strips.
  • Lay a piece of bacon on top of each piece of beef and roll up. Secure each with a toothpick.
  • Season with salt and pepper.
  • Fry remaining bacon in large skillet and crumble. Reserve bacon fat in pan.
  • Sear roll-em-ups on all sides in bacon fat.
  • Put roll-em-upa, bacon pieces,onion,and mushrooms in a crock pot set to low.
  • Add more salt and pepper to your taste.

1 tablespoon prepared horseradish
stuffed olives, minced
scallion, minced
crabmeat, flaked, chopped

Steps:

  • Cream cheese and horseradish until smooth and creamy.
  • Spread mixture over each slice of dried beef.
  • Roll up then refrigerated for a couple hours.
  • When ready to serve, cut each roll diagonally, making each cut about 1 inch long For variations: mix minced pimento stuffed olives with basic mixture.
  • Mix minced green onions with basic mixture or crabmeat.

1/4 lb ground beef
3 tablespoons onions, chopped
1 (14 ounce) jar pasta sauce
1 egg white
1/2 cup ricotta cheese
2 tablespoons parmesan cheese, grated
1 teaspoon oregano
3/4 cup mozzarella cheese, shredded
1 cup baby spinach leaves, washed
4 lasagna noodles, cooked

Steps:

  • Heat oven to 350. Cook beef and onion over medium-high heat; drain. Stir in 1/2 cup pasta sauce. Remove from heat.
  • In a small bowl, beat egg white. Add ricotta, parmesan, oregano, and 1/2 cup mozzarella cheese.
  • Spread 3 Tablespoons of pasta sauce in bottom of an 8 inch square pan.
  • Spread 1/4 of ricotta on one noodle. Add 1/4 cup spinach leaves, 1/4 of beef. Starting at one short end, roll up loosely.
  • Place seam side down in baking dish. Repeat with remaining 3 noodles. Top with remaining sauce. Cover with foil.
  • Bake 30 minutes. Remove foil and add remaining mozzarella cheese. Bake 5 more minutes.

Hearty and delicious Sunday Dinner. Beef Roll-Ups, Rouladen as they are called in Germany make a great dish, especially when served with red cabbage and potato dumplings. They are easily frozen and reheated! If you can find smoked and salted pork belly instead of bacon, you'll have a real fantastic traditional German dish

4 pieces flank steaks, sliced very thin
4 large onions
3 slices bacon, steak, smoked and salted
1/2 cup pickle, diced, dill, kosher, German style
mustard, spicy, hot
salt
pepper
paprika
cooking oil
2 cups broth

Steps:

  • Flatten out the flank steaks with a meat pounder and spread mustard on the "inside" of the meat.
  • Dice 1 onion, the bacon and the pickles and distribute even amounts onto your roll up meat.
  • season well with salt, pepper and paprika powder.
  • Roll up meat from the short side up and secure edge with either tooth picks or some yarn/thread.
  • spread more mustard on the outside of roll ups and season some more
  • Heat oil in a heavy broiler pan and brown roll ups from all sides.
  • ad 1 1/2 cups of broth to the broiler as well as the left over 3 onions cut into quarters INCLUDING the brown skins (very important, this will give color to the gravy).
  • cover your boiler pan and broil in the oven at 350 F for 2-3 hours (uncover for the last 1/2 hour) or until meat is tender. ad broth if needed.
  • take rouladen out of pan and set aside. Strain the liquid into sauce pan and reduce until thickened.
  • Serve with potato dumplings and red cabbage.
