The reason I like to make this dish is because, apart from being really quick and simple, it's a sociable feast where everyone can tuck in and help themselves. I love all that. I always serve this on a large plate in the middle of the table, with crusty bread and a glass of wine. Any leftovers are even more gorgeous the next day in a nice firm bap.

- Preheat the oven to 450 degrees F (230 degrees C/gas 8).
- Wash and scrub the beets, trim the ends, and toss into a large piece of foil with a little oil, balsamic vinegar, and seasoning. Wrap and roast until tender. Cooking time depends on size.
- Mix the rosemary salt and pepper on a board. Roll and press the fillet of beef over this, making sure all sticks to the meat. In a very hot, ridged pan, or on a barbecue, sear the meat until brown and slightly crisp on all sides, around 5 minutes. Remove from the pan. Allow it to rest for 5 minutes, then slice it all up as thinly as you can. Lay the slices on a large plate.
- After preparing the beef, sprinkle the roasted beetroots randomly (whole, halved or quartered, depending on size) over the sliced meat. Now mix the horseradish and creme fraiche together. It has to be seasoned well, usually needing a little white wine vinegar or lemon juice. Dribble this over the beetroots. Dress some watercress with olive oil and lemon juice. Then scatter this, along with some small slivers of shaved Parmesan, all over the plate and get ready to tuck in!

- Cut cube steak into serving size pieces. Coat meat with the bread crumbs and parmesan cheese. Heat olive oil in a large frying pan, and saute 1 teaspoon of the garlic for 3 minutes. Quick fry (brown quickly on both sides) meat. Place meat in a casserole baking dish, slightly overlapping edges. Place onion rings and peppers on top of meat, and pour pasta sauce over all.

Serve meat and sauce atop a mound of pasta! HINT: make the meat ahead of time, and refrigerate over night, the acid in the tomato sauce will tenderize the meat even more. If you do this, save the mozzarella till the last minute.

- Make tomato sauce:
- Cook tomatoes with garlic, salt, and 1/8 teaspoon pepper in 2 tablespoons oil in a 2-quart heavy saucepan over moderately high heat, stirring occasionally, until tomatoes have broken down and sauce is thickened, 8 to 12 minutes.
- Make filling:
- While tomatoes are cooking, pulse olives, capers, and 2 tablespoons pine nuts in a food processor until coarsely chopped and transfer to a bowl. Stir in bread crumbs, cheese, 2 tablespoons parsley, 1 tablespoon oil, and remaining 1/8 teaspoon pepper.

- In food processor mix the bread or cracker crumbs, cheese, eggs, herbs and garlic until it forms a paste.
- Brush the pounded flank steak with vegetable oil and season to taste with salt and pepper.

- Roll the pounded meat tightly and tie with kitchen twine.

BEEF PARMESAN AND SPAGHETTI SQUASH
I recently bought my first spaghetti squash. After digging through the freezer and cupboards, this is what I put together.

- 1. Heat oven to 350 degrees. Cut the spaghetti squash in half lengthwise. With a large metal spoon, scoop out the seeds. Drizzle squash halves with olive oil and place cut side up on a baking sheet.
- 2. In a medium bowl or a plastic zip-type bag, combine bread crumbs and grated Parmesan cheese. In another bowl or zip-type bag, place the flour. You can season the flour if you like; for me, the breadcrumbs and cheese are enough. In a third bowl or pie plate, place the beaten eggs.
- 3. Dredge the cube steaks in flour, shaking to get rid of excess. One at a time, dip the cube steaks in the beaten egg, making sure that no flour stays dry. Then roll or shake the cube steaks in the bread crumb-Parmesan mixture.
- 4. At this point, you can pan-fry the cube steaks in olive oil if you prefer. I was feeling extra lazy this day and just placed them side by side on a 9 x 13 baking dish that I had covered with aluminum foil and sprayed with no-stick spray. I put the squash and the cube steaks in the oven at the same time and set the timer for one hour.
- 5. After 40 minutes, take the cube steaks out of the oven and top with the spaghetti sauce. Return the steaks to the oven for the remaining 20 minutes. When the 60 minutes are up, remove the spaghetti squash from the oven. Top the steaks with the mozzarella, turn the oven off, and leave them in the oven to keep them warm while you scrape the squash.
- 6. Use a fork to scrape the "spaghetti" into a large bowl. Add olive oil, butter, garlic, salt and pepper to the bowl and toss well. Serve squash topped with the cube steaks and spaghetti sauce.
- 7. The cube steaks I had were pretty thick - in two pounds of meat there were only six steaks. Next time I'll definitely choose much thinner steaks, or try a ground beef patty instead.
BEEF KABOBS & PARMESAN ORZO
This is a wonderful meal! It is also easy & quick, it can be prepared in less than 30 minutes, as well. Make a nice green vegetable or salad and some warm bread or raolls and you are set.

- In 3-quart saucepan, heat 3 tablespoons oil over medium heat until fragrant. Add carrots and onion. Cook 7 minutes, stirring constantly, until vegetables soften but do not brown. Add garlic and cook about 30 seconds or until fragrant.
- Crumble sausage and beef into saucepan. Cook 8 to 10 minutes, breaking up and stirring occasionally, until meat is brown. Drain fat.
- Increase heat to high. Add wine to meat mixture and stir and scrape bottom of pan as wine boils. Allow wine to evaporate, about 7 minutes or until pan bottom is dry. Add beef broth and chicken broth and return to boiling. Allow mixture to evaporate just as wine did, stirring occasionally, about 25 minutes.
- Add half-and-half to nearly dry pan. Cook 10 minutes, stirring constantly, until there is only a glaze left on bottom of pan (be careful-half-and-half can scorch, so stir well).
- Add tomatoes and fennel and heat mixture to a simmer. Reduce heat to medium-low and cook about 20 minutes or until flavors are blended.
- Meanwhile, fill large pot with 5 quarts water; heat to boiling over high heat. When water is boiling, add salt if desired. When water returns to boil, add pasta. Stir immediately to make sure it doesn't stick to itself or pan. Boil pasta 9 to 10 minutes or until cooked through but still slightly firm. Drain in colander. There is no need to shake off excess moisture.
- In 12-inch skillet, heat 2 tablespoons oil over medium heat until hot. Add pasta (be careful-leftover water can make oil spatter). Cook 4 minutes, stirring occasionally, until edges of pasta turn slightly brown. Divide pasta evenly among 6 warmed pasta bowls. Sprinkle each with 2 tablespoons cheese. Top each with about 1 cup sauce.

SLOW-ROASTED FILET OF BEEF WITH BASIL PARMESAN MAYONNAISE

- For Beef Filet: Preheat the oven 275 degrees. Use an oven thermometer to be sure your oven temperature is accurate! Place the filet on a sheet pan and pat it dry with paper towels. Brush the filet all over with the oil, reserving about half of a tablespoon. Sprinkle it all over with the salt and pepper (it will seem like a lot but believe me, it makes a difference). Place the tarragon branches around the beef, tying them in 4 or 5 places with kitchen string to keep them in place, and then brush the tarragon with the reserved oil. Roast the filet of beef for 1 1/4 to 1 1/2 hours, until the temperature registers 120-125 degrees in the center for rare. Cover the filet with aluminum foil and allow to rest for 20 minutes. Slice thickly and serve warm or at room temperature with Basil Parmesan Mayonnaise. For Basil Parmesan Mayonnaise: Place the egg yolks, lemon juice, Parmesan, mustard, basil, garlic, 1 tablespoon salt, and 1 teaspoon pepper in a food processor fitted with the steel blade. Process for 20 seconds, until smooth. Combine the vegetable oil and olive oil in a 2-cup liquid measuring cub. With the processor running, slowly pour the oil-mixture through the feed tube to make a thick emulsion. Taste for seasonings-- the mayonnaise is a sauce so it should be highly seasoned. Store in the refrigerator until ready to use; it will keep for up to a week.

- Spread 1 cup meat sauce onto bottom of 13x9-inch pan sprayed with cooking spray. Cover with layers of 3 noodles, 2 cups meat sauce, half the ricotta mixture, 1 cup mozzarella and 1/3 cup Parmesan; repeat layers. Top with remaining noodles, sauce and cheeses; cover.
- Bake 1 hour or until heated through, uncovering for the last 15 min. Let stand 15 min. before cutting to serve.
