I used this for an appetizer at an Easter dinner I made for my friends while our husbands were deployed. It was a big hit and the kids loved it too!

I LOVE OLIVES AND CREAM CHEESE SPREAD
What's not to love? This is an easy make-ahead appetizer that takes 15 minutes to prepare and is so yummy it will be gone 15 minutes after you set it on the table. Pitted black olives and pimiento-stuffed Spanish/Manzanilla olives make it look as colorful as it is delicious. Serve it with crackers or crispinis. I also use it as a sandwich spread...it really spruces up a plain old cold-cut or deli sandwich.

BEEF OLIVE CHEESE SPREAD
I came up with this yesterday because I wanted to have something light for lunch and I like all of these things. I mixed them up and was pleased with the results. As I was enjoying a few crackers with this spread on it (with a glass of wine ;) ) my daughter came up and took one. She ate it and went into the kitchen to make some...

Steps:
- 1. Prep your ingredients...chop, dice, soften, grate, etc.
- 2. Mix everything together in a medium bowl. I did it by hand. Taste for seasoning.
- 3. Put into a crock or other short wide mouth container. I used a short Mason jar. Chill until flavors meld.
- 4. Serve with crackers or toasted baguette slices. Or on celery would be good. It's up to you!
