Favorite Beef Burritos image

Easy, tasty & filling weeknight meal!

1 pound lean ground beef (80/20)
1 small yellow onion (finely minced)
1 packet taco seasoning
¼ cup fresh cilantro (minced)
6 12" flour tortillas (warmed)
16 ounces refried beans (warmed)
1 cup colby jack cheese (shredded)

Steps:

  • In a 12" skillet set over medium-high heat add ground beef and yellow onion.
  • Cook the meat until it's no longer pink and the onions are translucent. Drain any fat.
  • Add in the taco seasoning and prepare according to the packet directions.
  • When the meat is fully cooked stir in the cilantro and remove from the heat.
  • Lay out the flour tortillas and spread a layer of refried beans into the middle of each tortilla.
  • Top each tortilla with an equal amount of the meat mixture and shredded cheese.
  • Roll up each tortilla burrito-style and enjoy warm.
  • Optional: Heat a non-stick skillet over medium heat. Add burrito seam side down and cook 2-3 minutes or until slightly browned. Flip over and repeat with the other side.

1 pound ground beef
2 (16 ounce) cans refried beans
4 cups shredded Colby-Monterey Jack cheese, divided
1 cup sour cream
1 (4 ounce) package cream cheese, softened
1 (1.25 ounce) package taco seasoning mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Stir ground beef, refried beans, 3 cups Colby-Monterey Jack cheese, sour cream, cream cheese, and taco seasoning mix together in a bowl until well mixed. Spread mixture into the prepared baking dish.
  • Bake in the preheated oven for 20 minutes; sprinkle with remaining 1 cup Colby-Monterey Jack cheese. Continue baking until cheese is melted, about 5 more minutes.

Love burritos and enchiladas? With these hearty burritos, smothered in enchilada sauce, you never have to choose a favorite! They come together in one skillet for a quick dinner that's packed with Mexican flavor.

1 tablespoon vegetable oil
1 lb lean (at least 80%) ground beef
1/2 cup diced onion
1 package (1 oz) Old El Paso™ original taco seasoning mix
1/2 cup water
1 package (11 oz) Old El Paso™ flour tortillas for burritos (8 inch)
1 cup Old El Paso™ refried beans (from 16-oz can)
1 1/2 cups cooked rice
2 cups shredded Mexican cheese blend (8 oz)
1 can (10 oz) Old El Paso™ enchilada sauce
Chopped fresh cilantro leaves, if desired
Lime wedges, if desired

Steps:

  • Heat oven to 350°F. In 12-inch ovenproof skillet, heat oil over medium-high heat. Add beef and onion; cook 6 to 8 minutes, stirring occasionally, until brown. Drain, and return mixture to skillet. Stir in taco seasoning mix and water. Cook over medium heat 2 to 3 minutes longer or until thickened. Transfer to medium bowl. Clean out skillet; spray with cooking spray.
  • Place tortillas on work surface. Divide refried beans, rice and beef mixture among centers of tortillas in 4-inch long strip. Evenly top with 1 cup of the cheese. Roll up into burritos, and place seam side down in skillet. Bake 25 minutes.
  • Drizzle with enchilada sauce; sprinkle with remaining 1 cup cheese. Bake 8 to 10 minutes longer or until cheese is melted and burritos are heated through (165°F). Serve with cilantro and lime wedges.

1 cup canned Old El Paso™ refried beans traditional
8 flour tortillas (10 inch)
2 cups shredded lettuce
2 medium tomatoes, chopped (1 1/2 cups)
1 cup shredded Cheddar cheese (4 oz)

Steps:

  • In two 1-quart saucepans, heat beef and refried beans separately over medium heat 2 to 5 minutes, stirring occasionally, until hot. Warm tortillas as directed on bag.
  • Place about 1/4 cup of the beef on center of each tortilla. Spoon about 2 tablespoons beans onto beef. Top with 1/4 cup of the lettuce, 3 tablespoons tomatoes and 2 tablespoons cheese.
  • Fold one end of tortilla up about 1 inch over filling; fold right and left sides over folded end, overlapping. Fold remaining end down.

Beef and Bean Burritos image

1 medium onion, diced
2 pounds ground beef
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon ground oregano
1/4 teaspoon salt
Three 7-ounce cans Mexican tomato sauce (I use El Patobrand) or enchilada sauce
One 28-ounce can refried beans
3/4 cup grated Cheddar, plus extra for sprinkling
12 burrito-size flour tortillas
1/2 cup fresh cilantro leaves

Steps:

  • Preheat the oven to 170 to 180 degrees F.
  • In a large skillet over medium heat, cook the onions until softened. Then add the ground beef and cook until the beef is cooked through. Add the cumin, chili powder, oregano and salt and stir to combine. Pour 2 cans of the Mexican tomato sauce into the meat and simmer over low heat for 5 minutes. Add a little water if the mixture gets too dry.
  • Meanwhile, heat the refried beans in a saucepan over medium-low heat. Add the cheese, and stir it in till its melted. Remove from the heat.
  • Heat the tortillas in the microwave for 1 minute, and then spread a small amount of beans on each tortilla. Add a small amount of the meat. Fold over the ends of the tortilla, and then roll them up. Repeat with the rest of the tortillas. Then place them in a large baking dish, cover with foil and keep warm in the oven.
  • When ready to serve, drizzle the remaining can of tomato sauce over all of the burritos and sprinkle with more grated Cheddar. Return to the oven for a couple of minutes just to melt the cheese.
  • Sprinkle the tops with the cilantro leaves and serve immediately to the fork-bangers in your life. They'll kiss you and hug you. Repeatedly.

BEEF BURRITO DIP

Everyone loves this dip. I love it because, unlike most taco type dips, I can make it a few days ahead. I try to please everyone by using Hot Ortegas and hot sauce on one side of the 13X9 and mild everything on the other side. I stick a few red toothpicks on the hot side to "mark" it. (Or you can use jarred jalapenos and sprinkle them on last over half so they can be seen.) My family loves anything Mexican so I usually double it and wrap the leftovers in flour tortillas and throw them in the freezer. They are wonderful!

3 onions, chopped
1 tablespoon salt
1 1/2 teaspoons cumin
1 1/2 teaspoons oregano
1 1/2 teaspoons pepper
3 garlic cloves (minced)
8 ounces tomato sauce
3 tablespoons red wine vinegar
2 lbs refried beans
1 (3 7/8 ounce) can sliced olives
1 (4 ounce) can ortega chili peppers (hot, mild or mixture)
1 lb shredded cheddar cheese
1 (16 ounce) jar taco sauce or 12 ounces salsa
1 lb tortilla chips, for scooping

  • Brown and drain the hamburger. Add the onion and garlic and the rest of the sauce ingredients. Simmer for at least 1/2 hour.
  • In a 13X9 pan, spread the refried beans.
  • Pour the meat mixture over the beans.

2 tablespoons taco seasoning
6 flour tortillas
16 oz refried bean, 1 can
1 cup shredded mexican cheese blend

Steps:

  • Add ground beef to a large skillet over high heat and sprinkle with taco seasoning. Cook, breaking up the meat, until browned. Drain the fat and set aside to cool.
  • Assemble the burritos by microwaving the flour tortilla for 20 seconds, and begin to layer burrito starting with refried beans, followed by the cooked beef and cheese.
  • Fold in the left and right sides of the tortilla and roll it up from the bottom, tucking the bottom edge under the filling. Wrap in parchment paper and label. Freeze up to 1 month.
  • To reheat from frozen, wrap the burrito in a damp paper towel and microwave for 2-3 minutes, flipping halfway or until the center is hot. Let stand 1 minute before eating.

1 pound lean ground beef
½ cup chopped onion
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes with juice, divided
1 tablespoon Worcestershire sauce
1 ½ teaspoons chili powder
1 teaspoon paprika
1 teaspoon dried oregano
¾ teaspoon ground cumin
½ teaspoon ground black pepper
2 cups refried beans
¼ teaspoon ground cumin
1 (18 ounce) jar beef gravy
1 (10 ounce) can enchilada sauce
4 large flour tortillas
2 cups shredded Cheddar cheese, divided
1 cup sour cream, divided
¼ cup chopped onion, divided
¼ cup chopped tomatoes, divided
1 cup chopped lettuce, divided

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place a skillet over medium heat. Cook and stir ground beef, 1/2 cup chopped onion, and garlic in the hot skillet until beef is browned and crumbly, breaking it apart as it cooks, about 8 minutes; drain excess grease. Mix in half the can of diced tomatoes, Worcestershire sauce, chili powder, paprika, oregano, 3/4 teaspoon of cumin, and black pepper. Bring meat mixture to a boil over medium-high heat and cook for 5 minutes, stirring often.
  • Heat refried beans and 1/4 teaspoon cumin in a saucepan over medium-low heat. Keep beans warm. Mix remaining half of diced tomatoes, beef gravy, and enchilada sauce in a separate saucepan; bring to a boil.
  • Place tortillas onto a microwave-safe plate and cover with a damp paper towel; microwave tortillas until they are soft and warm, about 30 seconds. Place a warmed tortilla onto a work surface and spoon 1/4 the beef mixture in a line down the center of the tortilla. Layer 1/4 the bean mixture on top of beef layer and spread 1/4 cup of Cheddar cheese over the bean layer. Fold right and left edges of the tortilla over the ends of the filling and roll up tortilla to make a burrito. Place burrito seam side down into a 9x13-inch baking dish. Repeat with remaining tortillas to make 4 burritos.
  • Pour gravy sauce over the burritos in the baking dish; top with remaining 1 cup Cheddar cheese.
  • Bake burritos in the preheated oven until the cheese has melted, 15 to 20 minutes. To serve, place each burrito on a serving plate and spoon sauce from baking dish over the burritos. Top each burrito with 1/4 cup sour cream, 1 tablespoon chopped onion and chopped tomato, and 1/4 cup of chopped lettuce.
