1/2 lb grass-fed ground beef ((I used Thousand Hills))
1/2 lb beef liver (chopped into tiny pieces)
1/2 tsp garlic powder
1/2 tsp onion powder
1/3 cup fresh chopped parsley
1 large egg
1/2 cup Trader Joe's Gluten-Free Rice Crumbs
1 tsp sea salt
1/2 tsp dried oregano
1/2 tsp dried basil

Steps:

  • Preheat your oven to 350 degrees and line a sheet pan with parchment paper.
  • Combine all of the ingredients in a large bowl. Mix enough to incorporate all of the ingredients, but be sure not to do too much or the meat will toughen.
  • Divide the meat into 1 inch balls.
  • Bake for 28-30 minutes, until they're just cooked and slightly browned on top.

Cooking spray
2 pounds ground beef
1/2 cup breadcrumbs
1/2 cup milk
2 large eggs, lightly beaten
1/2 small onion, grated
1 clove garlic, finely grated
1/3 cup chopped fresh parsley
Kosher salt and freshly ground pepper

Steps:

  • Preheat the oven to 450˚ F. Line 2 baking sheets with foil and coat with cooking spray.
  • Combine the beef, breadcrumbs, milk, eggs, onion, garlic, parsley, 2 teaspoons salt and 1/2 teaspoon pepper in a large bowl; mix with your hands until combined. Form into 1 1/2-inch meatballs (about 30). Arrange the meatballs on the prepared baking sheets.
  • Bake the meatballs until browned and cooked through, 12 to 15 minutes.

1 lb grass fed ground beef
1/4 pound pastured beef liver, finely diced, or ground in a food processor
1/2 cup onion, diced
2 teaspoons smoked paprika
1 Tbsp garlic
1 Tbsp Garam Masala
1 teaspoon black pepper
1/2 teaspoon salt
Bacon strips

Steps:

  • Preheat the oven to bake at 350. In a medium sized mixing bowl, combine ground beef and beef liver. Season with smoked paprika, garlic, garam masala, black pepper, and salt. Continue to mix with hands until meat is equally seasoned.Mix in the diced onion. Form meat mixture into balls, slightly larger than an ounce. Cut bacon in half. Place cross-wise in muffin tin. Fill bacon strips with meat mixture. Bake for 25 minutes.
