Number Of Ingredients 20

1 pound flank steak or other lean beef (,cut against the grain into thin strips)
1 tablespoon soy sauce
1 tablespoon sherry ((can substitute dry white or red wine))
2 tablespoons oil for high-heat frying
1 small yellow onion (,halved and then sliced)
1 tablespoon minced fresh garlic
1 tablespoon minced fresh ginger
4 cups fresh uncooked broccoli florets in bite-sized pieces
1 cup bean sprouts
For the Sauce:
1/3 cup soy sauce ((paleo: substitute coconut aminos))
1/3 cup low sodium chicken broth or water
1/3 cup brown sugar ((paleo: substitute approved sweetener))
1 tablespoon sherry ((can substitute red wine))
1 tablespoon toasted sesame seed oil
1/2 teaspoon freshly ground black pepper
1 1/2 tablespoons cornstarch
Optional: For an amazing boost in flavor add 1-2 tablespoons Chinese Black Bean Sauce
Homemade Chinese Black Bean Sauce
OR store-bought Chinese Black Bean Sauce

Steps:

  • Toss the beef strips with the soy sauce and sherry. Set aside until ready to use.
  • Combine the sauce ingredients until the cornstarch is dissolved. Set aside until ready to use.
  • Heat the oil over high heat in a wok or large heavy skillet. Once very hot, add the beef and fry until lightly browned, about 2 minutes. Add the onions, garlic and ginger and fry for another minute. Add a little more oil if necessary. Add the broccoli and fry for another minute or until crisp-tender. Stir in the bean sprouts. Stir in the sauce and simmer for another minute.
  • Serve immediately with steamed rice.

1 pound skirt steak, cut into 1/2-inch-thick slices
4 teaspoons cornstarch
1/2 cup low-sodium chicken broth
2 tablespoons minced fresh ginger (from a 2-inch piece)
2 tablespoons black-bean garlic sauce, such as Kikkoman or Lee Kum Kee
1 teaspoon sugar
2 teaspoons toasted sesame oil
1/4 cup vegetable oil
4 cups small broccoli florets (from 1 head)
3 scallions, white and light-green parts thinly sliced (1/2 cup), plus darker greens, sliced, for serving
Cooked rice, for serving

Steps:

  • Pat meat dry, then toss with 3 teaspoons cornstarch. Stir together broth, ginger, black-bean sauce, sugar, sesame oil, and remaining 1 teaspoon cornstarch in a bowl. Measure 2 tablespoons water in a separate small bowl and set aside.
  • Heat a large, heavy skillet (preferably cast iron) or wok over high for 3 minutes. Swirl in 2 tablespoons vegetable oil. Working in batches to avoid crowding pan, brown meat, about 1 minute per side. Transfer to a plate.
  • Swirl in remaining vegetable oil and add broccoli. Cook, stirring occasionally, until broccoli begins to brown, about 3 minutes. Add reserved water and toss until broccoli is bright green and tender, 1 to 2 minutes more.
  • Add white and light-green parts of scallion to skillet along with meat and any accumulated juices. Stir in black-bean-sauce mixture and toss until evenly coated and sauce has thickened, about 30 seconds. Serve with rice, sprinkled with scallion greens.

2 teaspoons canola oil, divided
1/2 pound beef top sirloin steak, cut into 1/4-inch-thick strips

Steps:

  • Mix the first 7 ingredients. In a large nonstick skillet, heat 1 teaspoon oil over medium-high heat; stir-fry beef until browned, 1-3 minutes. Remove from pan. , Stir-fry broccoli in remaining oil until crisp-tender, 3-5 minutes. Add green onions; cook just until tender, 1-2 minutes. Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir until sauce is thickened, 2-3 minutes. Add beef and heat through.

1 lb beef sirloin steak
1 1/4 teaspoons cornstarch
1 teaspoon sesame oil
1/4 cup low sodium chicken broth
2 tablespoons vegetable oil
3 cups broccoli, cut into 1 inch chunks
1/2 cup carrot, very thinly sliced on diagonal
2 tablespoons onions, chunked (optional)
1/2 cup bok choy, sliced (optional)
1/2 cup yellow bell pepper, cut bite size
1/8 teaspoon pepper, taste test maybe more
1 1/2 teaspoons garlic, minced (or more)
1 teaspoon gingerroot, finely chopped
2 tablespoons fish sauce
1/4 cup water chestnut, sliced
soy sauce, to taste
rice, cooked

Steps:

  • Trim fat from beef steak; cut beef lengthwise into 2 inch strips, and each strip cut crosswise into 1/8 inch slices.
  • In cup, mix cornstarch, sesame oil and broth, set aside.
  • Heat 12 inch skillet or wok until very hot.
  • Add vegetable oil; rotate skillet to coat bottom.
  • Add beef; stir fry 2 minutes or until beef is brown.
  • Remove beef from skillet.
  • Keep skillet hot.
  • Add broccoli, carrots, onion, and bok choy and saute for 3 minutes, add yellow pepper, and saute for 1 more minute.
  • Add pepper, garlic, ginger, and fish sauce; stir fry 30 seconds.
  • Add water chestnuts; stir fry 1 minute.
  • Stir in beef.
  • Stir in cornstarch mixture; cook and stir 15 seconds or until thickened.
  • Taste test for soy sauce.
  • Serve over rice.

Try this simple stir-fry using tender rump steak, peppers, ginger, chilli and garlic. Opt for a good quality black bean sauce - it will make all the difference

2 x 250g rump steaks
1 tbsp cornflour
2 tbsp sesame oil
1 large white onion, cut into thin wedges
1 red pepper, deseeded and sliced
1 green pepper, deseeded and sliced
2 fat garlic cloves, crushed
1 thumb-sized piece ginger, peeled and grated
1-2 red chillies, finely chopped
5 tbsp black bean sauce
1 tbsp rice wine vinegar
2 tsp sugar
sticky rice, to serve
coriander leaves, to serve (optional)

Steps:

  • Remove the thick layer of fat running down the side of the steaks and discard. Slice the steak into 1cm-thick, long strips and toss with the cornflour and some seasoning.
  • Heat the oil in a large frying pan or wok over a high heat then add the steak, frying for 3-5 mins or until golden brown on the outside. Remove with a slotted spoon and transfer to a plate.
  • Add the onion and peppers to the pan and fry for 6-7 mins or until beginning to soften. Stir through the garlic, ginger and chilli and cook for a further min. Return the beef to the pan and stir through the black bean sauce, rice wine vinegar, sugar and 2 tbsp water to loosen a little. Bring to a simmer and then remove from the heat.
  • Serve the stir-fry in deep bowls with mounds of sticky rice and top with coriander, if you like.
