1 pound Italian loaf or French loaf
1/2 cup softened unsalted butter (can also use salted)*
4 cloves garlic, finely minced
1 tablespoon finely chopped fresh parsley
⅛ teaspoon sea salt
Optional:
¼ cup freshly grated parmesan cheese
OR
½ cup shredded mozzarella cheese
For garnishing:
Extra parsley and chives

Steps:

  • Preheat oven to 425 degrees F and line a large baking sheet with parchment paper or foil. Slice bread in half lengthwise and place on a large baking sheet, cut sides up.
  • In a medium bowl, mix butter, garlic, parsley and salt together until well combined. Spread evenly over bread.
  • Bake for 10-15 minutes or until slightly golden brown on the edges. If you want to add cheese, add it the last 2 minutes of baking. If you like a crispier garlic bread, bake for 3-5 minutes more, watching carefully until it is as golden as you like.

Make these up ahead of time and have a handy cache of these ready for those days when your hair looks great, your nails are polished, and you must get straight to the phone to spread the juicy gossip you just heard.

1 loaf crusty French bread
1/2 cup butter, room temperature (8 tbsp)
garlic powder

Steps:

  • Buy a loaf of fresh french bread. You know- the kind that is piping hot everyday at your grocery baker at 4 O'clock every afternoon. Let cool and slice on the diagonal about 1 1/2 inches thick. Try to make clean, straight slices. You want at least one side to have as flat of a side as possible. You should have eight slices.
  • Spread each slice on each side generously with butter. About 1/2 tablespoon butter per side.
  • Sprinkle each side with garlic powder to your taste. Stack buttered slices together in stacks of two or four, depending on the size of your family unit. Wrap in heavy foil and freeze.
  • ________________________________________.
  • When time to prepare- preheat a cookie sheet and oven to 425.
  • Take bread out of the freezer at the last moment and separate slices. You may at this time sprinkle on top some dried parsley, or oregano, or cheese or whatever strikes your fancy on this particular day if you wish.
  • Open oven door carefully and place the flattest side of each piece on preheated cookie sheet. Be careful not to set yourself on fire. Aqua Net hair spray is terribly flammable.
  • Bake for 5-7 minutes and enjoy. The flat side will be toasted and the top side will be moist and buttery.
  • NOTE: I suppose day old French bread would slice easier and cleaner and taste just as well. I just have never tried it and always do it this way.

12 tablespoons (1 1/2 sticks) unsalted butter
1 head garlic, cloves separated and peeled
1 cup freshly grated Italian Parmesan cheese
2 tablespoons minced fresh parsley
2 teaspoons grated lemon zest
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 (20 to 24-inch-long) crusty French baguette
Fleur de sel or sea salt

Steps:

  • Preheat the oven to 450 degrees F. (Make sure your oven is clean or it will smoke!)
  • Melt the butter in a small saucepan over low heat. Add the garlic, stir to coat with the butter, and cook, covered, for 20 minutes, stirring occasionally, until the garlic is very tender. Transfer to a small bowl and set aside until cool enough to handle. Mash the garlic in the butter with a fork. Stir in the Parmesan, parsley, lemon zest, red pepper flakes, 1 1/2 teaspoons kosher salt, and 1/2 teaspoon black pepper.
  • Slice the baguette in half lengthwise and place both halves, cut sides up, on a cutting board. Score each half diagonally (don't cut all the way through) in large serving-size pieces. Spoon all of the garlic mixture generously on the cut sides of the bread. Cut each half of the baguette in half crosswise along a score and place the 4 pieces on a sheet pan lined with parchment paper.
  • Bake for 5 to 7 minutes, until the topping is bubbly and starting to brown and the bread is crisp. Transfer to a board, cut in serving pieces along the scores, sprinkle with fleur de sel, and serve warm.

1 1/2 sticks (12 tablespoons) unsalted butter
4 cloves garlic, finely chopped
1 large soft Italian or French loaf
1/4 cup grated Parmesan
Kosher salt
2 tablespoons flat-leaf parsley leaves, finely chopped

Steps:

  • Arrange a rack in the center of oven and preheat to 450 degrees F.
  • Melt the butter in a small skillet over medium heat. Add the garlic and cook, stirring occasionally, until the butter is golden and the garlic is very fragrant, about 3 minutes.
  • Slice the bread in half lengthwise. Liberally brush the crust with the garlic butter. Turn the bread cut-side up. Slice each loaf crosswise at 2-inch intervals without cutting all the way through, making "pull-apart" garlic bread. Liberally brush the cut sides of the bread with more garlic butter, spreading any remaining garlic evenly over top. You should use all the garlic butter. 1 1/2 teaspoons active dry yeast (this is slightly more than one packet)
1 cup warm water (110-115 degrees)
2 teaspoons granulated sugar
1 1/2 teaspoons salt
3 tablespoons extra virgin olive oil
2 1/2 cups bread flour
1 tablespoon dried rosemary
1/4 teaspoon fresh ground black pepper
1/4 teaspoon dried oregano or 1/4 teaspoon italian seasoning
1 head roasted garlic clove
olive oil
coarse sea salt, and chopped fresh rosemary for top

Steps:

  • In large bowl, sprinkle yeast into 1 cup warm water. Mix in the sugar and salt. To proof, let sit for about 10 minutes and become foamy.
  • Add in olive oil, bread flour and knead, by hand or stand mixer, for about 10 minutes. Add dried rosemary, black pepper and oregano or Italian seasoning. Knead another 5 minutes.
  • Add to the dough the roasted garlic cloves and gently knead to incorporate, about 1 - 2 minute. Dough should come together well at this point and may be slightly sticky.
  • Place dough ball in a well oiled bowl, turning dough to cover entire surface. Tightly cover bowl with plastic wrap. Place in warm, draft-free area to rise until dough is doubled, about 1 - 1 1/2 hours.
  • After dough has doubled, punch it down and shape into a rounded loaf. Place rounded loaf on greased baking sheet. Using sharp knife, makeing a couple of deep cuts on top. Cover loaf with a clean dish towel or large mixing bowl inverted over it. Make sure bowl is large enough that it gives your loaf room to rise. Let rise until doubled again, approx 1 hour.
  • After the second dough rise, gently brush with olive oil then with coarse sea salt and freshly chopped rosemary. Bake at 375F for 25-30 minutes, spraying loaf with water once during the middle of baking. Raise oven temperature up to 425F and spray loaf with water again. Watching closely, bake just until top is golden brown, taking care not to over bake.
