My friend Marian Schwartz gave me the idea to roast okra. It's an ingenious strategy: No need to marinate the okra in salt and vinegar beforehand -- it develops a wonderful seared flavor in the hot oven, and it won't be gooey.

1 pound okra
Salt to taste
2 tablespoons extra virgin olive oil
Fresh thyme leaves to taste optional
Freshly ground pepper

Steps:

  • Preheat the oven to 450 degrees. Rinse the okra, and drain on a kitchen towel. The okra should be dry. Trim away the stem ends and the tips, just the very ends, and then place the okra in a large bowl. Salt to taste, and toss with the olive oil until coated.
  • Lift the okra from the bowl, leaving behind any excess oil. Place on a sheet pan in one layer. Roast in the oven for 15 minutes (large okra might take a little longer), shaking the pan every five minutes. The okra should be lightly browned and tender, with a nice seared aroma. If you don't want it to brown as much, set the oven at 400 degrees.
  • Remove from the heat, toss with fresh thyme, if desired, and freshly ground pepper. Transfer to a platter. Serve hot.

2 lbs. okra
3 tablespoons extra virgin olive oil
2 tablespoons soy sauce
½ teaspoon kosher salt
½ teaspoon black pepper

Steps:

  • Preheat the oven to 425°F. If it is not already, place the rack is in the middle of the oven. Turn it on 20-30 minutes before you plan to roast the okra.
  • Wash and dry the okra. Use a sharp knife to cut off the stems/caps, then slice them down the middle, length-wise, to reveal the seeds.
  • Place the split okra in a bowl. Measure in the extra virgin olive oil and the soy sauce. Season with salt and pepper. Toss to coat. You may do this with tongs or your hands
  • Place the okra seed-side facing down on the baking sheet. This helps the okra crisp up.
  • Roast for 20 minutes, then remove it from the oven.
  • Flip the okra using tongs. The okra should be seed-side facing up. (This side should have a golden brown color-if it does not, you need to pop it back in and roast it for a little longer.)
  • Roast for another 15 minutes, then broil for 3-5 minutes or until the tops of the okra are totally crispy. Keep you eyes on the okra, especially while broiling, because you do not want it to burn and every oven is a little different.
  • Serve warm with your favorite dinner, and enjoy!

1 teaspoon kosher salt
1 teaspoon sweet paprika
1 teaspoon sugar
1 teaspoon ground coriander
1/2 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper
1/4 teaspoon celery seed
1 pound fresh okra
1 tablespoon unsalted butter, melted, or olive oil

Steps:

  • Preheat the grill to high.
  • Place the salt, paprika, sugar, coriander, black pepper, cayenne, and celery seed in a small bowl and stir to mix.
  • Rinse the okra under cold running water and blot dry with paper towels. Trim the tips off the stem ends of the okra but do not cut into the pods. Place the okra in a large mixing bowl, add the butter and toss to coat. Add the rub mixture and toss to coat.
  • When ready to cook, arrange the okra on the hot grate so that they are perpendicular to the bars or you may wish to skewer 4 or 5 pods side by side with bamboo skewers that have been soaked in water to keep any stray okra from falling through the grates and into the fire. Grill the okra until nicely browned, about 2 to 4 minutes per side, turning with tongs as needed. Transfer the grilled okra to a platter or plates and serve immediately.

butter flavored cooking spray
¼ cup yellow cornmeal
¼ cup panko bread crumbs
½ teaspoon garlic salt
¼ teaspoon ground black pepper

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Place a baking rack on top of a baking sheet or sheet pan.
  • Cook the frozen okra in the microwave using your microwave's frozen vegetable setting, or on high for 8 minutes. Drain and cool on paper towels, about 5 to 10 minutes. Spray generously with butter flavored cooking spray. Add the cornmeal, panko bread crumbs, garlic salt, and pepper to a plastic food storage bag. Place the okra into the bag and shake to coat the okra with the cornmeal mixture.
  • Remove the okra from the bag and spread it on the prepared baking rack. Bake in the preheated oven until golden brown and crispy, about 15 to 20 minutes.

7 bacon strips, chopped
1 pound smoked sausage, halved and thinly sliced
1 large onion, chopped
2 small green peppers, chopped
3 cups water
2 cans (16 ounces each) butter beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (12 ounces) tomato paste
1 teaspoon pepper
1/4 teaspoon salt
1 package (16 ounces) frozen sliced okra
Hot cooked rice, optional

Steps:

  • In a Dutch oven, cook bacon and sausage over medium heat until bacon is crisp. Remove to paper towels; drain, reserving 2 tablespoons drippings. , Cook onion and green peppers in the drippings until tender. Stir in the water, beans, tomatoes, tomato paste, pepper and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Add bacon and sausage; cook 10 minutes longer., Stir in okra. Cover and cook for 8-10 minutes or until okra is tender. BEA'S OVEN FRIED OKRA

One of my beach buddies, Diane, shared with me how to cook okra in the oven. These are as good and crunchy as deep fried okra but so much easier and much healthier. 1 egg
okra, fresh
flour (self rising or all purpose)
salt & pepper
paprika
olive oil (or any oil really)

Steps:

  • 1. Preheat oven to 400. Beat the egg really well. Wash then slice okra right into the egg and coat slices really well. Mix flour & spices together. Drop okra into flour and toss until well coated. Pour a little oil onto a cookie sheet or baking pan, tilting pan until well coated.
  • 2. Shake off excess flour from okra slices and place in single layer into the oiled pan. Roll slices into oil just to lightly coat them.
  • 3. Bake (uncovered) at 400 until crispy & golden, which depending on your oven may take approximately 40 minutes. Stir occasionally.
  • 4. TIP: I whisked the egg in a medium size bowl. I dropped the okra into the bowl as I sliced it. Once I was done slicing the okra I rolled them around with my hands to coat well. I put about 1 1/2 cups of flour in a plastic grocery bag (I actually use two for a security measure) then added the seasonings. Then I put the okra into the bag and twisted the opening shut and started shaking until the okra was coated with the flour.
  • 5. GRILLED OKRA: Wash and slice okra. Toss with Jiffy Corn Muffin Mix. Lightly spray an aluminum disposable pan. Shake off excess batter and place into pan. Grill (uncovered) until crispy and golden brown. Another beach buddy, Kathy, told me about this technique. These are really good, too.
  • 6. BOILED OKRA: Wash okra but leave whole with a little stem on end. Place in a saucepan and cover with water. Add salt, black pepper, a little olive oil and about 2 tablespoons of vinegar (that's the secret). Boil til okra has changed colors and is tender. I like boiling mine to the point that they are just beginning to split open. My best friend, Ann's mother, cooked okra this way. I never cared for boiled okra until I ate Ann's mother's okra cooked like this. I think the vinegar makes all the difference.
