BEAN SPROUT SLAW
I had this once and absolutely had to make it my own....can be eaten alone or over rice.

Steps:
- steam the bean sprouts for about 5 mins... just to soften a bit
- meanwhile, in a skillet add oil, saute the scallions and shredded carrots. ( a couple mins)
- drain sprouts, stir in...add the rest of the ingredients.... and that's it...so simple and delicious serve alone (drain) or over rice ( don't drain)

Steps:
- Lightly toss cucumbers, bell pepper, papaya, bean sprouts and slaw mix in large bowl. Pour dressing over cucumber mixture; add more dressing to taste. Toss lightly. Cover with plastic wrap and chill 30 minutes. Toss before serving. Top with green onions and crispy chow mein noodles.
