BEAN CASSEROLE WITH CHILI BISCUITS

This is a great way to feed your family a nice warm meal during these cold winter days- like they are having in the Eastern seaboard right now. Hope they have no power outage and are keep warn- this recipe was in one of those boxes on top shelf labeled 1983. We like it - hope you all do too.

BEAN BAKE:
1 lb lean ground beef or turkey, cooked and drained,if necessary
1 medium onion ,diced
1/2 c brown sugar, firmly packed
1/2 c ketchup
1 tsp prepared mustard
21 oz can pork and beans
16 oz can lima beans, drained slightly
15 oz can kidney beans, undrained
1/2 c bacon, cooked crisp and crumbled
BISCUITS:
2 c bisquick baking mix
1 tsp brown sugar, firmly packed
2/3 c milk
1 tsp chili powder or some chopped chili pepper too, if desired

Steps:

  • 1. Bean bake: Mix beef,with all the ingredients and pour into a greased or sprayed 3 quart casserole dish. Cover and bake in 375^ oven for 45 minutes, until bubbly. While this is baking make --- --- Chili Biscuits: Combine Bisquick,sugar, milk and chili powder -mixing until a soft dough forms; beat hard for 30 seconds. If dough is too sticky, gradually add up to 1/4 cup more Bisquick , but not more than that to make dough easy to handle. Gently roll dough on Bisquick surface and knead about 10-12 times. Roll dough 1/2 inch thick and cut into 12 biscuits with a 2 inch round cutter or lid to mayo jar dipped in bisquick. Put biscuits on hot bean mixture. Bake uncovered until biscuits are golden brown, about 15 minutes. --- Note: High altitude (3500 to 6500 feet) while making biscuits ,increase oven heat to 450^. bake biscuits on top for 10-15 minutes.

1 tablespoon butter
1 lb bulk pork sausage
1 cup chopped yellow onion
1/2 cup chopped celery
1/2 cup chopped green bell pepper
1 teaspoon Cajun seasoning
1/8 teaspoon ground red pepper (cayenne)
1 can (19 oz) Progresso™ dark red kidney beans, drained, rinsed
1 can (14.5 oz) Muir Glen™ fire roasted diced tomatoes, undrained
1 pouch (6.5 oz) Betty Crocker™ cornbread & muffin mix
1 cup shredded sharp Cheddar cheese (4 oz)
2 tablespoons milk
1 tablespoon Sriracha sauce
1 egg
2 green onions, thinly sliced

Steps:

  • Heat oven to 400°F. In 12-inch ovenproof skillet, melt butter over medium-high heat. Cook sausage, onion, celery, bell pepper, Cajun seasoning and red pepper in butter 8 to 10 minutes, stirring occasionally, until sausage is no longer pink and vegetables are softened.
  • Stir in beans and tomatoes. Heat to boiling, stirring frequently; remove from heat.
  • Meanwhile, in medium bowl, mix cornbread & muffin mix, cheese, milk, Sriracha sauce and egg. Spoon tablespoonfuls over sausage mixture. Bake 12 to 15 minutes or until cornbread biscuits are cooked through and browned on top. Top with green onions.

3/4 cup flour
2 teaspoons baking powder
1 1/2 teaspoons sugar
1/4 teaspoon salt
1/4 cup vegetable shortening
7 ounces canned great northern beans, drained and rinsed
3 tablespoons milk

Steps:

  • Combine flour, baking powder, sugar and salt in a medium bowl; cut in shortening until mixture resembles coarse crumbs.
  • Process beans and milk in food processor or blender until almost smooth; add to flour mixture and mix just until dough comes together.
  • Drop dough by spoonfuls onto ungreased baking sheet.
  • Bake at 375 until light brown, about 12 minutes.

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
1 can (5 ounces) evaporated milk
3 cups frozen green beans, thawed and drained
3 cups diced cooked chicken
1 cup chopped celery
2 tablespoons chopped onion
1 jar (2 ounces) diced pimientos, drained
1/2 cup chow mein noodles
1/2 cup slivered almonds, toasted
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup french-fried onions
Hot biscuits

Steps:

  • In a large bowl, stir soups and milk until smooth. Add the next nine ingredients. Spoon into a greased 2-1/2-qt. baking dish. Bake, uncovered, at 350° for 40 minutes or until bubbly. Sprinkle with onions; bake 10 minutes longer. Serve over biscuits.

2 cups self raising flour
1 tablespoon caster sugar
1 pinch salt
180 ml milk
1/2 cup cream (pouring)
1 mango (diced)
1/2 cup white sugar
1/2 lemon (juice off)
1/2 vanilla bean (seeds removed)

Steps:

  • Vanilla Bean and Mango Jam - combine all the ingredients in a heatproof microwave-safe bowl. Microwave, uncovered for 8 to 10 minutes or until thick and jam like (jam will thicken on cooling).
  • For scones - preheat oven to 230C fan forced.
  • Line a baking tray with baking paper.
  • Combine flour, sugar and salt in a bowl, add milk and cream and stir with a knife until dough comes together.
  • Knead lightly on floured surface until dough comes together and is smooth.
  • Gently press out to a 3cm thick round.
  • Cut into scones and place on baking tray (dip scone cutter into flour and it will make the job easier).
  • Bake 10 to 12 minutes or until golden and cooked through.
  • Serve hot with butter and jam.
