This easy 30 minutes vegetable and bean soup is packed with Italian flavors, tons of veggies, and is freezer friendly. Great for a nutritious dinner and meal prep.

1 tbsp olive oil (or cooking spray)
1 onion, diced
2 carrots, peeled and diced
2 celery stalks, diced
4 cloves garlic, minced
1 tbsp Italian seasoning
2 tbsp tomato paste
2 zucchini, diced
2 cups green beans, chopped
30 oz cannellini beans, rinsed and drained
14 oz canned fire roasted diced tomatoes
4 cups vegetable broth (or chicken broth)
4 cups baby spinach

Steps:

  • Heat the olive oil in a large soup pot over medium-high heat. Add the onion, carrots, and celery. Cook for 5-7 minutes until beginning to soften.
  • Add the garlic, Italian seasoning, and tomato paste. Cook for 1 minute until fragrant. Add the zucchini and green beans. Season with salt and pepper. Cook for about 2 minutes.
  • Add the diced tomatoes, beans, and broth. Bring to a boil and turn down to a simmer. Cook for 20 minutes.
  • Stir in the spinach until it wilts. Season as needed. Serve with parmesan cheese and fresh basil if desired.

1 package (12 ounces) 16-bean soup mix
1 large onion, chopped
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon chili powder
1/4 teaspoon pepper
1/8 teaspoon hot pepper sauce
1 bay leaf
8 cups water
1 can (14-1/2 ounces) stewed tomatoes
1 tablespoon lemon juice

Steps:

  • Set aside seasoning packet from beans. Sort beans and rinse with cold water. Place beans in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 to 4 hours or until beans are softened. Drain and rinse beans, discarding liquid., Return beans to the pan. Add contents of bean seasoning packet, onion, garlic, salt, chili powder, pepper, pepper sauce, bay leaf and water. Bring to a boil. , Reduce heat; cover and simmer for 2-1/2 to 3 hours or until beans are tender. Add tomatoes and lemon juice. Simmer, uncovered, until heated through. Discard bay leaf.

2 tablespoons extra-virgin olive oil
2 medium carrots, diced small
2 celery stalks, diced small
1 medium yellow onion, diced small
3 garlic cloves, minced
1 teaspoon dried thyme
Coarse salt and ground pepper
2 cans (15.5 ounces each) cannellini beans, rinsed and drained
1 can (28 ounces) diced tomatoes
4 cups low-sodium vegetable broth
1/4 cup chopped fresh parsley
Grated Parmesan, for serving

Steps:

  • In a large pot, heat oil over medium-high. Add carrots, celery, and onion and cook until onion is translucent, about 6 minutes. Add garlic and thyme and season with salt and pepper; cook until fragrant, about 3 minutes. Add beans, tomatoes, broth, and parsley and bring to a boil. Reduce heat and simmer until vegetables are tender, 25 to 30 minutes. Season to taste with salt and pepper. Divide soup among four bowls and serve with Parmesan.

I am tired of the cost and similar taste of all the canned soups out there, but I wanted something that was almost as easy to fix for lunch. As an added plus, my son said it was the best vegetable soup he had ever had! I've used all the combinations of the 3 types of vegetable mixes and have liked them all. I like adding the chickpeas for my protein, but the family prefers the chicken.

1 (12 ounce) bag green beans, corn, carrots & peas
1 (12 ounce) bag broccoli, carrots, sugar snap peas, & water chestnuts or 1 (12 ounce) bag broccoli, corn, carrots, cauliflower & red peppers
4 chicken bouillon cubes
1 -2 cup water
1 (15 ounce) can diced tomatoes
1 teaspoon sugar (optional)
broiled chicken, diced (optional)
1 (15 ounce) can chickpeas, drained and rinsed (optional)

Steps:

  • Steam the veggies in the microwave as directed on each of the bags you choose to use.
  • Dissolve bouillon cubes in 1 cup of hot water. Combine vegetables, bouillon broth, sugar and tomatoes in large sauce pan. Added more water to cover vegetables if necessary. Chicken and/or chickpeas can be added if desired. Let simmer for 15 minutes or until heated thoroughly.
  • Notes: we like the sugar in it because it cuts some of the acidity of the tomatoes. It also works well to place all the ingredients in a crock-pot and refrigerate overnight. Then just heat for about 4 hours on low for an easy meal the next day.

Steps:

  • In a Dutch oven, saute the carrots, onions and celery in oil until tender. Add garlic; cook 1 minute longer. Stir in broth, one can of beans, broccoli and seasonings; bring to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes. , Place remaining beans in a blender; cover and process until smooth. Add to the soup with spinach if desired; simmer for 2 minutes or until heated through.
