MOROCCAN-STYLE BBQ CHICKEN THIGHS
Prunes and olives are the special guest stars of this Moroccan-style BBQ baked chicken dish and give it its distinctive sweet and strong flavor.

Steps:
- Heat oven to 375ºF.
- Pound chicken to 1/4-inch thickness; place smooth-sides down, on work surface. Brush with half the barbecue sauce; sprinkle with pepper.
- Top with prunes, olives and cheese. Roll up, starting at one short end of each. Wrap with bacon; place, seam sides down, in baking dish sprayed with cooking spray. Brush with remaining barbecue sauce.
- Bake 30 min. or until chicken is done (165ºF).

I have not yet replaced the bbq that was destroyed in Hurricane Sandy. Yes, it is on my "to do" list with many other items. Until then, when the sun goes down and the cool of the evening arrives I made the closest next best thing.

- 1. Preheat Oven 350 degrees: Combine all of the ingredients for the bbq sauce in a small bowl. Clean and pat dry the chicken thighs. Place in a baking dish and rub the chicken thighs all over with the sauce. Place in oven and bake for 40-45 minutes.
CAROLINA STYLE BBQ CHICKEN THIGHS

- 1. Place the chicken in a large resealable bag. Mix remaining ingredients together. Pour half of the sauce over the chicken and let marinate in the fridge for at least 1 hour or overnight.
- 2. Preheat the oven 350 degrees.Place the chicken and the marinade from the bag in the baking dish. Bake about 40 minutes turning the chicken once.
- 3. Place the remaining sauce in a sauce pan and bring to a boil. Reduce to a simmer and simmer 5 minutes. Remove the chicken from the oven. Pour the remaining sauce over the chicken and serve
