SOUR CREAM PANCAKES image

2 Cups sour cream
1/4 Cup butter
2 Cups unbleached white flour
2 Tablespoons sugar
2 Teaspoons baking powder
1 Teaspoon salt
4 eggs, beaten
2 Cups fresh or frozen blueberries (optional)

Steps:

  • Melt the sour cream and butter together and let cool to room temperature. In a separate bowl, mix all the dry ingredients together. When the sour cream/butter mixture is cool, pour it into the eggs while mixing with a wire whisk. Make a well in the dry ingredients and pour in the wet ingredients. Mix only until the dry ingredients have been moistened. Don't over mix! Add the blueberries at this point, if you are using them. Rub cold butter all over the inside surface of a cold skillet. Then preheat the greased skillet and pour about 1/4 Cup of batter for each pancake. Flip them when they get bubbles on their surfaces.
