BBQ CHICKEN SOUP

Number Of Ingredients 11

Olive oil
1 yellow onion (chopped)
3 cloves garlic (minced)
2 1/2 C. cooked chicken (shredded)
1 15 oz can fire roasted tomatoes
2 15 oz cans pinto beans, drained and rinsed
1 1/2 C. frozen or canned corn
32 oz. chicken broth
2/3 C. BBQ sauce
1 Tbsp. BBQ spice rub
salt and pepper to taste

Steps:

  • 1. Drizzle enough olive oil to coat the bottom of a large pot and place over medium heat. Add chopped onion and sauté until soft. Add garlic and cook for a few more minutes. Stir in chicken, tomatoes, beans, corn and chicken broth. Before it boils start to add bbq sauce a little at a time, taste as you go! Then bring to a boil and let cook for 5 minutes. Remove from heat and serve.

BBQ Chicken Soup is an easy 30-minute soup recipe with chicken, veggies, and a kick of heat. It has all of your favorite barbecue flavors - even picky eaters will love this BBQ soup!

1 teaspoon olive oil
½ medium onion (85 g, diced)
1 medium carrot (55 g, diced)
1 bell pepper (85 g, diced (any color))
3 cloves garlic (minced)
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon red pepper flakes
4 cups low-sodium chicken stock
12 ounces cooked chicken (see note)
1 cup frozen corn
½ cup barbecue sauce

Steps:

  • Heat oil in a large pot over medium heat. Add the onions, carrots, and bell peppers. Cook until soft, 3-4 minutes. Add the garlic, salt, pepper and red pepper flakes and cook 30 seconds.
  • Add the chicken stock and cover. Bring to a boil and let cook for 5 minutes.
  • Add chicken and corn, bring the soup back to a boil, then stir in barbecue sauce and cook until hot. Add additional salt and pepper to taste. Serve immediately.
  • Serving suggestion: Top with cilantro, diced green onions, and tortilla strips.
  • Store leftovers in the refrigerator for up to 3 days.

Mother's Day was celebrated at my son and daughter-in-law's home, where we had a great cookout. There was so much food that even eleven people could not put a dent in it! So leftovers were shared with everyone, and you can tell I just got creative with the BBQ chicken I brought home. I almost called it "Everything but the kitchen sink soup" but I did a search and found there were other recipes with that name. I learned from my mother to use-up what is available, and it turns out delicious too!

4 - pieces of bbq'd chicken, with bone in
5 cup(s) water
2 - carrots, sliced
1 cup(s) cabbage, chopped
1 - medium summer squash, cut up
1 - rib of celery diced, or a small amount of leaves
1 teaspoon(s) salt
1 cup(s) tomato sauce,
1/2 teaspoon(s) italian seasoning
1 1/2 cup(s) medium size shell pasta, uncooked

Steps:

  • Using a large soup pot, place BBQ'd chicken in it, and add five cups cold water. Bring to a boil, and add sliced vegetables, cover and lower the heat, cooking about thirty minutes.
  • Remove the pieces of chicken and cut away the meat from the bones, and replace the meat into the pot.
  • Add pasta and salt, bring to a boil and simmer uncovered about fifteen minutes more.
  • Add the tomato sauce, and Italian seasoning, and if you wish sample and add salt/pepper to taste. Other veggies I'd add in the future might include: zucchini and/or green beans.

1 chicken (about 2-1/2 to 3 pounds) with giblets, quartered
2-1/2 quarts water
3 teaspoons salt
1 medium onion
6 whole peppercorns
6 celery ribs, (leaves reserved), divided
6 medium carrots, divided
2 cups cooked rice or cooked fine egg noodles
1/4 cup minced fresh parsley
3 to 4 drops yellow food coloring, optional

Steps:

  • Place the chicken, giblets, water, salt, onion, peppercorns, three celery ribs, all the celery leaves and three carrots in a soup kettle. Bring to a boil. Skim off the foam. Reduce heat to simmer; cover and cook for 2 hours or until meat is tender. Remove meat. Discard cooked vegetables and peppercorns. Strain stock if desired. , Chill stock, then skim fat. Dice remaining celery and carrots; add to the stock. Cook until the vegetables are tender. , Meanwhile, remove chicken from the bones and dice. Add chicken, cooked rice or noodles and parsley. Heat through. Stir in food coloring if desired.

Extra-virgin olive oil
12 to 14 ounces boneless, skinless chicken breast
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1/4 cup pearl barley
4 cups reduced-sodium chicken broth
1 bay leaf
1 carrot, finely chopped
1 rib celery, finely chopped
1 small zucchini, finely chopped

Steps:

  • Heat a grill pan over high heat for 5 minutes.
  • Rub a little olive oil all over the chicken breast and sprinkle all over with salt and pepper. Reduce the heat to medium-high and grill the chicken until cooked through, turning once, about 12 minutes. Set aside and keep warm.
  • Fill a small saucepan with 1/2 cup water, bring to a boil, add some salt, and cook the barley according to package instructions, until tender. Drain and rinse.
  • Bring the chicken broth and bay leaf to a simmer in a medium saucepan. Add the carrot, celery and zucchini. Cook until just tender, about 5 minutes. Discard the bay leaf.
  • Place the chicken breast on a cutting board and slice crosswise into thin slices. Spoon the vegetables and barley into serving bowls, then add the hot broth. Lay several slices of chicken over the surface of each bowl.

1/4 cup fresh lemon juice
1/4 cup extra-virgin olive oil
1 tablespoon finely chopped fresh oregano
1 tablespoon finely chopped fresh rosemary
2 teaspoons chile flakes
1 teaspoon freshly grated nutmeg
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
12 cloves garlic, smashed
One 4- to 6-pound chicken, cut into 8 pieces

Steps:

  • In a mixing bowl, whisk together the lemon juice, olive oil, oregano, rosemary, chile flakes, nutmeg, salt, pepper and garlic. Place the chicken pieces in a resealable bag and pour the marinade in, coating all of the meat. Allow the chicken to marinate, refrigerated, 1 to 4 hours or up to overnight.
  • Set up a grill for cooking with indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only. Allow the temperature to come up to 375 degrees F.
  • Remove the chicken from the marinade. Place the chicken pieces skin-side up on the indirect-heat side of the grill and close the lid. Cook the chicken until almost cooked through, about 10 minutes. Move the chicken pieces over to the direct heat side of the grill and cook until nicely charred and cooked through, 2 to 3 minutes per side. Remove from the grill and allow to rest for 5 minutes before serving.

2 lb boneless skinless chicken breast
1/3 cup diced onion
3 cloves garlic, finely chopped
1 can (15.25 oz) Southwestern style corn (corn with peppers)
1 can (15.5 oz) white beans, drained, rinsed
5 cups Progresso™ chicken broth (from two 32-oz cartons)
1 cup barbecue sauce
1 teaspoon salt
1/2 teaspoon pepper
Shredded Cheddar cheese, if desired

Steps:

  • In 6-quart slow cooker, add chicken breast, onion, garlic, corn and white beans.
  • In large bowl, mix broth, barbecue sauce salt and pepper. Pour into slow cooker. Cover; cook on Low heat setting 6 hours.
  • Remove chicken breast from slow cooker, and shred using two forks. Place back into slow cooker. Cover; cook 30 minutes.
  • Serve soup topped with shredded cheese.
