Mix up this kid-friendly marinade, pop it in the freezer with 1 1/2 pounds of chicken and you'll have dinner ready to go on a busy week where there's no time for meal planning.

2/3 cup ketchup
1 tablespoon light brown sugar
1 tablespoon apple cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon ground cumin
1 teaspoon paprika
1 clove garlic, grated
Kosher salt and freshly ground black pepper

Steps:

  • For the marinade: Combine the ketchup, sugar, vinegar, Worcestershire, cumin, paprika, garlic, 1/2 teaspoon salt and a few turns of pepper in a large resealable plastic bag. Add 4 boneless skinless chicken breasts or 8 boneless skinless thighs (about 1 1/2 pounds), squeeze out the air, seal tightly and massage gently to coat the chicken with marinade. Refrigerate for 2 hours or freeze up to 1 month; defrost in the refrigerator overnight before cooking.
  • To cook: Remove the chicken from the bag and grill over indirect heat, covered, until cooked through, lightly charred and an instant-read thermometer registers 165 degrees F, 20 to 25 minutes.

EASY BBQ CHICKEN MARINADE

Came up with this one on the fly. This quantity of ingredients will be sufficient marinade for 4 drumsticks. I like to use zipper-seal bags for marinating because the air can be removed so that the meat is surrounded by marinade, which means I can throw it into the fridge and forget about it until cooking time. I get a nice, even marinade on every piece without any extra fuss. Plus, it is one less dish to wash after.

2 tablespoons apple cider vinegar
1 tablespoon barbecue sauce or 1 tablespoon ketchup
1 tablespoon soy sauce
1 tablespoon honey
1/2 tablespoon steak sauce (I used HP)
1/2 clove garlic
1 pinch cayenne

Steps:

  • Mix all ingredients together in a small bowl.
  • Put chicken pieces into a large zipper-seal bag.
  • Pour marinade into bag.
  • Seal bag, making sure to remove most of the air so that the chicken has lots of contact with the marinade.
  • Refrigerate for 1 hour or more before grilling.

I think I got this off of Allrecipes.com. We call it our "Bourbon Chicken" though. It is wonderful grilled, and then boil up the marinade thoroughly to serve over sticky rice with some Kimchi on the side. YUM! Preparation time doesn't include marinating over night.

I have played around with marinades and come up with this one that leaves the chicken flavourful and juicy. I use skinless chicken breasts or thighs. I would also use it for pork chops. This makes enough for 3 or 4 large breasts.

I've used it since 1976, adapted from a recipe that apparently came from Cornell Cooperative Extension. I changed it slightly, but always receive rave reviews when we serve it to company.

1 1/2 teaspoons salt
1/2 cup vegetable oil
1 cup cider vinegar
4 tablespoons bell seasoning or 4 tablespoons chesapeake Old Bay Seasoning
3 cloves garlic, halved
ground pepper
3 -4 lbs chicken parts or 3 -4 lbs boneless chicken breasts

Steps:

  • Blend all (except chicken) in Cuisinart or blender.
  • Pour over raw chicken and allow to marinate in the refrigerator, preferably overnight.
  • Remove chicken from marinade and discard marinade.
  • Grill chicken until cooked through.

1 egg, well beaten
1/2 cup olive oil
1 cup apple cider vinegar
1 tablespoons of salt
4 cloves of garlic, minced
2 tablespoons of the following fresh herbs, chopped fine:
rosemary
sage
parsley
thyme
1/2 tsp fresh ground black pepper

Steps:

  • Put cut up chicken in a deep bowl. Cover with marinade. Let the chicken marinade for up to 2 hours. Turn pieces ocassionally so that all pieces get evenly marinaded. Don't marinade for longer than 2 hours, because the chicken will get too tangy (unless you like really tangy chicken). Remove from the bowl when ready to grill, shaking off as much of the oil as you can. Grill on a BBQ over evenly hot coals, but watch for flaring because the oil dripping on the coals can cause a problem with that.

CORNELL UNIVERSITY CHICKEN BBQ MARINADE AND SAUCE

This recipe is believed to be developed here in the beautiful Finger Lakes Region of New York State at Cornell University which is located at the foot of Cayuga Lake. In our family we've always called it Aunt Ann's BBQ Sauce. She was the first in our family to find and use the recipe. That first time was at one of our close extended family's five or so 'reunions' every summer at Aunt Ann and Uncle Don's farm. We all still use and love Aunt Ann's BBQ Sauce. You'll love it too once you try it!

2 cup(s) cider vinegar
3 tablespoon(s) salt
3 teaspoon(s) poultry seasoning
1 - slightly beaten egg
6-8 - chicken pieces

Steps:

  • Wisk the egg until it's slightly beaten. Combine the egg, the oil, vinegar, salt and poultry season and wisk together until salt has desolved and all ingredients are combined well.
  • The pieces of chicken can be ones of your choice. Breasts, either boneless or bone-in work well. I've also used half chickens in which case, increase your cooking time.
  • Reserve some of the marinade for basting.
  • Wash the chicken well. Pat dry.
  • Soak chicken in the marinade in the refrigerator for at least a few hours. Even better, marinade overnight in the refrigerator.
  • As an alternative to cooking or grilling the chicken from scratch, I sometimes boil the chicken for about 15 to 20 mins. and then immediately add the chicken to the marinade and refrigerate. It's seems like the marinade is absorbed into the chicken and is even more flavorful if chicken is hot when placed into the marinade. You will also not have to grill the chicken as long.
  • Grill over medium heat. ** Baste with reserve sauce, frequently.
  • Cook chicken until juices run clear and an instant read thermometer inserted into the meat reads 170 degrees. Enjoy--I know you will!
  • **DO NOT use reuse the marinade that the chicken was soaked in.

500g/ 1lb of chicken breasts
1 1/2 cups of olive oil
3/4 cups of soy sauce
1/4 cup of Worcestershire sauce
2 tablespoons of dry mustard
2 teaspons of salt
1/2 cup of Jack Daniel's whiskey
1 tablespoon of black pepper
1/2 cup of wine vinegar
1/3 cup of lemon juice
1 1/2 teaspoons of parsley
3 clove of minced garlic

Steps:

  • Mix all the marinade ingredients well in a large bowl or in a flat tupperware box. Butterfly the chicken breasts and lightly score on one side. Thoroughly coat the chicken in the chicken marinade. Marinate for at least 4 hours. BBQ over a medium heat.
